Blackberries Jubilee

May 29, 2025

Blackberries Jubilee is a classic and elegant dessert that brings drama and flavor to the table. Made with fresh blackberries, sugar, and a splash of brandy or rum, this simple yet stunning treat is typically flambéed and served warm over vanilla ice cream. The contrast between the cold, creamy ice cream and the warm, sweet-tart blackberry sauce makes it a crowd-pleaser every time.

To prepare Blackberries Jubilee, begin by heating fresh blackberries with sugar in a skillet over medium heat. As the berries begin to soften and release their juices, the mixture transforms into a rich, deep purple sauce. For an extra layer of flavor, a hint of lemon juice or zest can be added to brighten the fruit. Once the sauce is bubbling, carefully pour in brandy or dark rum and ignite it with a long lighter to flambé. The flames burn off the alcohol while leaving behind a beautiful, complex flavor.

The entire process takes only about 10–15 minutes, making it perfect for entertaining or as a quick yet indulgent weeknight dessert. Once the flames die down, spoon the warm blackberries and sauce generously over scoops of vanilla ice cream. The result is a visually impressive dessert with the rich, velvety flavor of warm fruit and creamy vanilla.

Blackberries Jubilee is a delightful twist on the more traditional Cherries Jubilee and can be adapted with other berries depending on the season. It’s an easy way to elevate a simple fruit-and-ice-cream combo into a show-stopping finale. Whether you’re celebrating a special occasion or just want to treat yourself, this dessert is sure to impress.

I don’t think flambéing is safe. I just mashed the blackberries instead. Still tasted fine though.

I totally get your concern! Flambéing can be a bit intimidating, but mashing the blackberries is a great alternative. Glad it turned out fine for you!

So good! But I used frozen blackberries and they didn’t taste as fresh… next time.

  4. 2 stars
Meh. Wasn’t that impressed. Just a bunch of heated berries.

  5. User avatar Ahmad West says:

    3 stars
Delicious! But why do you need lemon juice? Isn’t that just weird?

I tried this recipe, but I didn’t flambé it and it was still good. Kids loved it!

Kinda messy with the flambé part… what if you catch your hair on fire???

  9. User avatar emanuel.grant67 says:

Really easy recipe! I never thought cooking could be so simple. Thanks!

    1. User avatar merrill.christiansen says:

I don’t think it’s that simple. What if the flambé goes wrong? I don’t wanna set my kitchen on fire!

    2. User avatar sandi.walter says:

      5 stars
I’m glad you found it easy! It’s such a delicious treat. Next time, try it with some whipped cream too!

  10. 3 stars
Not gonna lie, I don’t trust lighting alcohol in my kitchen. I’ll just warm it and stir the rum in after, no flames. Safety first 😅

  11. User avatar Leto II Atreides says:

    5 stars
Ice cream + berries = best combo!! 🍦💖

  12. 3 stars
Can you use other fruits instead? Like blueberries maybe? Never tried blackberries.

  13. User avatar jackelyn.leffler1956 says:

    5 stars
This recipe is amazing! The flambé adds a spcial touch and the ice cream is just perfect with the warm blackberries.

  14. User avatar jacinta.rohan says:

    3 stars
I’m not sure about flambéing. It sounds fancy, but I’d probably burn down my kitchen! Just microwaved the berries instead.

  15. User avatar rickiestmorty says:

    3 stars
This is just like the dessert my grandma made, but she didn’t used rum. Is it really necessary? I’m not sure about it…

  16. User avatar Madelyn Schulist says:

    2 stars
I don’t really know… do you really need to set it on fire? Seems dangerous to me. I might just cook it without the brandy.

  17. User avatar Restless Draugr says:

    5 stars
Wow, this looks amazing! I’ve never tried flambéing before. Can’t wait to impress my friends!

  18. User avatar geneva.prosacco51 says:

    4 stars
Yummy! I used frozen blackberries and it still turned out delicious. I might add some mint next time!

  19. 2 stars
Ok but why do people put alcohol in dessert like it’s mandatory? I guess it tastes better—mine was kinda strong at first.

    1. User avatar danuta.deckow1958 says:

      4 stars
I get what you mean—like it’s “required” for dessert. But the alcohol flavor cooks off a lot, and the flambé just adds this richer, caramel-y note. If yours was too strong, you can use less or skip it entirely.

  20. 4 stars
I tried something similar and my flames were tiny… still tasted great though. Be careful with the adding the alcohol—don’t do it near a stove fan.

  21. User avatar Olive Yew says:

    1 star
Y’all are crazy if you think this will taste good 🥴. I’m stickin to apples.

  22. User avatar conrad.lockman89 says:

    3 stars
This was pretty good, but I don’t think I did the flambé right. It didn’t catch fire! Not sure what I did wrong.

    1. 3 stars
I think you might have needed more alcohol in the pan! Or maybe the heat wasn’t high enough? Just a guess!

    2. 4 stars
It’s tricky to get the flambé right! Maybe try using a lighter with a longer reach next time. Be careful though! 🔥

  23. User avatar Ilban Richese says:

    5 stars
Absolutely delicious! The flambé really adds something special.

    1. User avatar adan.upton3 says:

      5 stars
I tried this recipe and it was amazing! The flambé part is so cool! 👍

  24. User avatar Yooden Vranx says:

    3 stars
Flambé scares me a bit, not gonna lie. What if the alcohol doesn’t catch? Is it still worth it without lighting it?

  25. User avatar herbert.smitham says:

    4 stars
Not gonna lie, 2 tbsp sugar for 1 cup berries feels low if your berries are tart. I added a little more and it was perfect. Otherwise, good texture and flavor.

  26. User avatar ALTplusF4 says:

    3 stars
Flambé scares me. I tried once and set off my smoke alarm—so now I just warm the alcohol with it and hope for the best. Anyone got a safer method?

  27. User avatar susana.lubowitz says:

    5 stars
This sounds fancy but actually pretty doable. The lemon + brandy combo sounds like it would taste amazing on warm fruit.

    1. User avatar Pizpot Gargravarr says:

      5 stars
Yes! Warm fruit + that lemon-brandy flavor sounds perfect. I’m a little nervous about the flambé, but it also looks pretty quick to try—definitely going to make this with fresh berries if I can find them.

  28. User avatar vance.carroll says:

    4 stars
So easy to make, my kids loved it! Will definitely make again, thank you!

  29. 4 stars
Very tasty but I don’t have brandy. Just used whiskey. Still worked out.

  30. 4 stars
Super easy and delicious. I used frozen blackberries and it turned out just fine. Definitely making this again!

Super quick to make! My kids enjoyed it a lot. Thanks for sharing this recipe!

Why is it called Jubilee? Like… is that a real thing or marketing? Either way, it tastes like summer and I’m not mad.

    1. User avatar earleen.okeefe79 says:

      4 stars
My guess: “Jubilee” is basically a classic dessert name—like “celebration” vibes, not some specific ingredient. Either way, you’re not wrong… it’s bright and summery.

  33. User avatar noah.braun65 says:

    4 stars
Didn’t flambé (didn’t have brandy), just heated with rum extract—still tasted like berries with a grown-up vibe. 10/10 would try again.

    1. User avatar Falmer Gloomlurker says:

      3 stars
Wait, if you don’t flambé, won’t it just taste kinda flat? I tried something like this once and it tasted more like syrup than berries. But maybe rum extract works better?

    2. User avatar chrystal.schoen9 says:

      5 stars
That’s awesome—still getting the “grown-up vibe” without the flambé sounds legit. I’m stealing this for when I don’t feel like catching flames 😅

  34. 4 stars
My sugar didn’t fully dissolve at first, but after a bit more stirring it came together. Still delicious, though the sauce was thicker than expected.

    1. User avatar ernie.collier29 says:

      5 stars
That’s totally normal—granulated sugar can take a minute to catch up once the berries start releasing juice. I’m glad it came together for you! If you want it a bit thinner next time, try cooking for closer to 4 minutes and don’t reduce it too much.

  35. 2 stars
Why do people put alcohol in desserts? Just too much, I say.

    1. 3 stars
More sugar is better than alcohol! Just have ice cream without the flames, that’s what I say. 😏

    2. User avatar Frostbite Spider says:

      4 stars
I totally get where you’re coming from! Not everyone wants their desserts to be boozy. But a little kick can make things fancy, I guess!

  36. User avatar tomoko.corkery2024 says:

    4 stars
I had some trouble with the flambé part, the flames were too high for me. 😱 But the end result tasted good!

    1. User avatar rory.schneider1972 says:

      4 stars
Flambé can be tricky! Maybe try using less alcohol next time or just skip it altogether. Glad it tasted good though! 😊

  37. 2 stars
Meh. It was just berries on ice cream. I expected more. Maybe add chocolate next time?

  38. 5 stars
This looks amazing! Can’t wait to try it for my dinner party!

  39. User avatar Claire Annette says:

    3 stars
Not sure about this one… blackberries and ice cream? It’s just weird. But I guess you do you.

  40. User avatar davis.cummings57 says:

    2 stars
I dunno, are you supposed to flambé? Isn’t that dangerous? I skipped that part.

    1. User avatar Mr. Mellie Bogisich says:

      5 stars
You can flambé safely if you follow directions. Just be careful! It’s part of the fun.

    2. User avatar blake.senger says:

      4 stars
I skipped the flambé too! It just feels too risky for me. But the blackberries still turned out great!

  41. User avatar madaline.wisoky72 says:

    5 stars
This sounds dangerously good. The flambé step makes it feel fancy, but 5 minutes is so doable. I’d probably use dark rum for extra depth.

  42. 5 stars
Yum! This was a hit at my dinner party! Everyone asked for the recipe. 🍦💖

  43. 4 stars
I tried something similar with berries and it was so good. Definitely serve with ice cream—instant dessert upgrade.

    1. User avatar crystle.bergnaum35 says:

      5 stars
Yes! That combo with ice cream is dangerous—in the best way. I bet the lemon keeps it from getting too sweet.

  44. User avatar paz.luettgen says:

    1 star
Blackberries are okay, but not my fav fruit. This recipe’s not for me. I’ll stick with my chocolate desserts.

  45. User avatar Yang Schulist says:

    4 stars
Kinda reminded me of a sorbet topping, but richer. I added a pinch more sugar because my berries were super tart. Worked!

    1. User avatar maritza.wehner66 says:

      5 stars
That makes total sense—sorbet topping vibes, but with the warm, jammy richness. 🙌 And upping the sugar for tart berries is exactly the right move.

    2. User avatar margeret.kunze says:

      4 stars
I tried it once and my flambé just… wouldn’t light. Maybe I used too little alcohol? Also I think I added lemon juice twice lol. Still tasted good though.

  46. User avatar melida.rohan65 says:

    5 stars
Yummm!!! So good! Made it for a date and he loved it. Thanks for sharing this!

  47. User avatar joya.prohaska78 says:

    2 stars
Not sure about the brandy/rum. I’m skeptical it’ll add much versus just cooking the berries with lemon. Also “flambé” makes me nervous.

  48. User avatar Rob McKenna says:

    4 stars
I didn’t have brandy, so I used vodka. Still turned out pretty good!

  49. User avatar abe.ruecker67 says:

    5 stars
Simple and quick? I’m in! But can I use frozen ones without losing flavor?

  50. User avatar laree.kuphal1957 says:

    4 stars
What brandy can I use? Havent tasted ,so kind of skeptical.

  51. User avatar cherlyn.boyle says:

    4 stars
My berries turned kind of watery at first but then it thickened up a bit. I used frozen and it still worked. The lemon juice really helps.

  52. User avatar lester.deckow49 says:

    4 stars
I followed it and it turned out… kinda runny? Like the berries released a lot of juice (which makes sense) but I expected it to thicken more. Still tasted amazing though.

    1. User avatar ashlea.bode89 says:

      4 stars
Ahh that makes sense—this is more like a warm berry syrup than a jam. 5 minutes might not reduce it enough to get really thick. Next time simmer a few minutes longer (or mash the berries) and let it reduce before serving.

  53. User avatar charlette.wyman28 says:

    3 stars
I put in too much sugar befor I realized. So sweet! Anyone else do this?

    1. User avatar alethia.waelchi says:

      4 stars
I’ve definitely overdone it with sugar before! It’s like eating candy. Just add some more lemon juice next time!

    2. User avatar Wispmother says:

      3 stars
Too sweet? I think sweet is good! Sugar makes everything better, right?

  54. User avatar alfredia.ryan68 says:

    4 stars
My blackberries were frozen and I had to cook way longer than 5 min. Still turned out tasty though, so I’m giving it a fair score.

    1. User avatar junie.kuhic says:

      5 stars
Frozen berries definitely take longer—mine always release more water first. Glad it still worked out for you though! Did the sauce thicken up nicely in the end?

  55. User avatar vicki.gislason13 says:

    2 stars
Why do you need to flambé? Seems silly. Just cook them and eat with ice cream. Right?

    1. 4 stars
Flambé adds a nice touch! It’s not just about taste, it’s the show! 🔥

  56. User avatar ramona.koss0 says:

    5 stars
Careful with flambé around kids/pets. Also, “long lighter or match” is the exact wording I needed—otherwise I would’ve tried a short match and panicked.

  57. User avatar bertram.mraz55 says:

    4 stars
I made it once with frozen berries and it still worked. Only thing: 5 minutes was a little long for my pot, but the flavor was great.

    1. User avatar sheryll.schaden63 says:

      5 stars
Glad it worked with frozen berries! Yeah, 5 minutes can be a lot depending on the pan—mine usually takes closer to 3-4 until the juices start thickening. Flavor combo sounds spot on though 😋

  58. User avatar dessie.williamson47 says:

    2 stars
I burned the alcohol part (oops). Still edible, but it tasted a bit harsh. Maybe medium heat next time and less bravery.

  59. User avatar gaston.towne35 says:

    3 stars
Flambé is scary. Like I know it’s optional but still—doesn’t the alcohol just all burn off and leave nothing? Might skip it next time.

  60. 4 stars
Tasty! My kids loved it. They kept asking for more blackberries!

  61. User avatar NAFO.SUPREMACY says:

    3 stars
Uhhh this is dessert??? lol. Blackberries + ice cream = yes though. Flames sound scary, I’d skip that part.

  62. User avatar javier.barrows says:

    5 stars
The lemon juice is a nice touch—cuts the sweetness and makes the berries taste more “real.”

    1. User avatar Miss Jackie Thiel says:

      3 stars
I might be wrong but I always add more lemon than that—like a whole lemon—otherwise it tastes kinda flat. Also my rum almost never flambés right, lol.

    2. User avatar dusty.quitzon says:

      5 stars
Totally agree—lemon juice really wakes up the berries. The sugar doesn’t feel cloying at all.

  63. User avatar darell.heller says:

    1 star
Dude, this seems too complicated for just some berries. Meh.

  64. User avatar suspiciousCommentator says:

    4 stars
My friend did this for a dinner party and it was a total showstopper! I wanna try it now but I’m scared about the fire part.

  65. 4 stars
Blackberries jubilee—sounds fancy. My berries were tart though, so I added a bit more sugar. Worked.

    1. User avatar leontine.stiedemann1975 says:

      5 stars
Yes!! Tart berries happen—adding extra sugar is exactly the move. Glad it still worked for you!

  66. 2 stars
Too much sugar for my taste. The blackberries were sweet enough on their own. Went without the sugar next time.

  67. User avatar Bulah Leffler says:

    5 stars
Delicious! I didn’t have brandy so I used rum like you said and it turned out savor! Will make again.

    1. User avatar carlo.kerluke36 says:

      5 stars
Sounds amazing! I’ve never thought of using rum instead. Will try it next time!

    2. User avatar Dro'marash says:

      2 stars
Not sure if rum is a good substitute for brandy… seems a bit off to me. How did it taste really?

  68. User avatar georgie.shields39 says:

    4 stars
Lol I thought flambé meant like, ‘flamboyant’ – I was ready for a party but got a dessert instead!

  69. User avatar wellRespected says:

    5 stars
Super easy and fancy for zero effort. I made it for friends and they were like ‘wow’ lol. The ice cream melts into the sauce—chef’s kiss.

  70. User avatar erna.romaguera2006 says:

    5 stars
The measurements are perfect for a quick dessert. Wish I had more ice cream scoops though—ate it too fast.
