Beef enchiladas are a savory, satisfying dish that brings together tender beef, warm tortillas, and a rich, flavorful enchilada sauce. This Mexican classic is loved for its bold flavors, comforting texture, and the perfect balance of savory beef and spicy sauce. Whether you’re cooking for a weeknight dinner, hosting a gathering, or craving a hearty meal, beef enchiladas are a go-to choice that never disappoints.
The key to great beef enchiladas is the beef filling. Ground beef is typically sautéed with onions, garlic, and a mix of spices like cumin, chili powder, and paprika, giving it a deliciously savory and slightly smoky flavor. You can also add some diced tomatoes, green chilies, or olives for extra depth and texture. Once cooked, the beef mixture is spooned onto tortillas and rolled up, ready to be covered in a rich enchilada sauce.
The enchilada sauce is what really brings this dish to life. Made from a base of red chilies, tomatoes, garlic, and onions, the sauce is perfectly spiced and full of flavor. It’s typically poured over the rolled tortillas before baking, soaking into them and adding a delicious, tangy, and slightly spicy kick. For an added touch of richness, you can sprinkle cheese, such as cheddar or Monterey Jack, on top of the sauce, allowing it to melt and form a golden, bubbly layer.
After baking, the beef enchiladas are ready to be served. You can top them with sour cream, chopped cilantro, shredded lettuce, or even a few slices of avocado for a fresh, creamy contrast to the spiced beef and sauce. These enchiladas are best enjoyed with a side of Mexican rice, beans, or a simple salad.
Beef enchiladas are a crowd-pleasing dish that can easily be made in large batches, making them perfect for family gatherings or meal prep. You can also customize the filling to your liking by adding vegetables or using a different protein, like chicken or pork. No matter how you make them, beef enchiladas are always a delicious and hearty meal that brings the flavors of Mexico to your table.

These were amazing! My family devoured them. Will definitely make again.
These enchiladas were a hit at my family dinner. So tasty! Definitely making again.
I tried this but my tortillas kept cracking when I rolled them. I microwaved them for a few seconds first and it fixed it. Just a heads-up if anyone else has the same issue.
These turned out sooo good. The sauce + cheese ratio was perfect, and my family went back for seconds. I added cilantro and it really made it taste fresh.
One pound beef + 8 tortillas is a little dry for my taste. I’d do 12 tortillas next time or add more sauce/cheese. My family wanted more, not less 😅
Not bad but kinda bland. I think 2 tbsp taco seasoning depends on the brand—mine was weak. Also, I didn’t drain enough fat and it felt greasy. Check that step!
My family asked for seconds. I garnished with cilantro and sour cream and it tasted like something you’d get at a restaurant. Easy weeknight win.
I don’t know if I made it wrong, but these turned out kinda bland. Maybe need more seasoning?
I think it’s definitely the seasoning! You might want to add some extra spices. I usually add cumin and garlic powder to mine.
It was okay. The flavor was a little flat until I added more enchilada sauce on top. Also I used “Mexican blend” and it tasted kinda salty to me, so watch the cheese amount.
Honestly mine came out flat at first too. I think it’s the sauce-to-cheese balance. Did you drain the beef fat well? Also maybe toast the tortillas a sec? Not sure. But adding more enchilada sauce makes sense.
Thanks for the tip! I’ve noticed some “Mexican blend” cheeses are super salty too. Next time I’ll start with a little less cheese or use a milder blend, and I’ll definitely add extra sauce if it needs it.
I followed it exactly and they were delicious, but I drained a lot of fat like the recipe says and it dried out slightly. Maybe drain less? Still gonna make again though.
Honestly, I was kinda disappointed. They taste fine but not what I expected. Maybe I used too much seasoning?
This is the best recipe ever!! I made it twice this week! Yummy!
Totally agree! These enchiladas are a game changer! Can’t wait to make them again.
Aww man, I used rice instead of beef and it just wasn’t the same. Should’ve followed the recipe!
Enchiladas 👌
Why do people drain the fat, it has flavorrr. I didn’t drain much and it was kinda greasy but still delicious. Also I used flour tortillas and thought they’d be less good, but nope.
I get you—fat = flavor! I usually just drain “some” too, not all. If you leave a little, it tastes richer. Glad the flour tortillas worked out too!
Idk… I always drain it a lot. Otherwise the enchiladas get greasy and the tortillas go soggy. Maybe your cheese helped? Also 2 cups cheese sounds low for 8 tortillas imo.
Yum! So cheesy!!! 😍
Delicious! I used turkey instead of beef and they turned out fine. Will make again!
I followed it exactly and it was good, but I felt like the seasoning needed a pinch more. The tortillas also got a little soft in the oven (maybe I’m used to crispier ones). Still tasty though.
Yum! I didn’t have enchilada sauce so I used barbecue sauce instead. Still delicious!!
These were amazing!! I added some black beans for extra protein. Will definitely make again!
I love that you added black beans! They make everything better. Can’t wait to try it myself!!
Black beans? Really? That sounds weird. I never heard of that with enchiladas.
These enchiladas were a hit at my family dinner! So cheesy and flavorful! 😊
It was okay but took longer than I thought. Next time, I’ll use less sauce.
This is not authentic enchiladas! Real ones have roti, not these flour things! 🤨
375°F is fine, but 20 minutes is a little short for me—cheese wasn’t super bubbly. I ended up baking closer to 28 minutes. Otherwise, great comfort food.
Hmm I baked mine 25 minutes and it was fine, but maybe my enchilada sauce was thinner? Also I don’t drain the fat every time and it still turns out ok 🤷♂️. Next time I’ll check for bubbly cheese earlier though.
Totally agree—20 minutes sounds a bit optimistic. I usually wait until the cheese is properly bubbling and starting to brown at the edges, like ~25-30 min depending on my oven.
Quick and easy! I added black beans to the beef mixture and it turned out great!
These came out super comforting. The taco seasoning + onion really nailed the flavor, and the sauce amount was perfect for a 9×13. I added chopped jalapeños and it was a great kick.
I think 2 tbsp taco seasoning is kinda a lot? But if it worked for you with only 1 lb beef, I’ll trust it. What jalapeños—fresh or pickled?
Seriously? I made these once and they were bland, so I’m loving hearing the taco seasoning + onion actually hits. Going to try your jalapeños too 🔥
What kind of cheese can I use?! I only have mozzarella. Can it work?
Pretty solid for a weeknight dinner. I didn’t have taco seasoning so I improvised with chili powder + cumin and it was still tasty. Next time I might add a little garlic.
I am not a good cook, but this was pretty simple. My kids loved it!
These are just taco rolls! Why even call them enchiladas? 🤔
These are definitely enchiladas. Just because they have a taco seasoning doesn’t make them less valid! They’re baked with sauce and cheese, which is how enchiladas are made. 😋
I’m skeptical about how much cheese you need… but okay, it works. I used sharp cheddar and it tasted awesome. I also added jalapeños and nearly cried (in a good way).
Wait… 2 cups shredded cheese for 8 tortillas? That seems low. I usually do like 3-4 cups or it turns out kinda dry. Still, jalapeños nearly crying sounds pretty accurate lol.
I get the cheese skepticism 😂 but 2 cups is the perfect “ooey-gooey” amount. The jalapeños with cheddar is such a win—glad you liked it!
375°F for 20-25 minutes felt a bit short to me. I ended up baking closer to 35 and then the cheese got properly bubbly. Still tasty, just adjust for your oven.
Good call—mine took almost 35 too. 20-25 always feels optimistic unless your oven runs hot.
These enchiladas are amazing! Super easy to make and full of flavor. My whole family loved them!
These came out super comforting and the taco seasoning really woke everything up. I added a little extra cheese and they were perfectly bubbly after 25 minutes.
Yes! “bubbly after 25 minutes” is exactly right—mine always hit that spot too. I do the same with extra cheese because why not 😄
Omg! So good! I added beans and corn too. Recommend!
I was skeptical about using 8 tortillas—seems like a lot of filling for that many—but it worked. I didn’t even drain enough fat and it was still fine.
Is it really necessary to preheat the oven? Seems like a waste of time to me!
Mine got soggy lol but taste was good
Too much cheese, like a cheese mountain! I can’t even see the enchiladas!
I like a lot of cheese! You can always use less if you want. It’s delicious that way!
Just made this for the first time, and I’m already planning to make it again next week! So good!
I don’t understand all the fuss. They were good, but I’ve had better. Too cheesy maybe?
375°F for 20-25 min is kinda short? Mine were still a little dry in the middle until I baked like 35 minutes. Maybe my oven runs cold, idk.
375°F for 20-25 mins is enough if the tortillas are rolled tight and the beef is already fully cooked. If yours were dry, it might be that you didn’t use enough sauce or you drained too much fat. I’d try 35 min or cover with foil for the first part.
I agree—20–25 min can be tight for enchiladas, especially if your oven runs cool. I usually do closer to 30–35 too. As long as the sauce is bubbling and the middle is hot, you’re good.
My boyfriend said it’s better than restaurant enchiladas, not even lying 😅 I did add black beans because why not.
Why do you have to cook the beef beforehand? Can’t you just put it in raw? It’s easier that way!
The instructions are clear, but 20-25 minutes feels a bit short for my oven. I had to bake closer to 30 to get it extra bubbly.
Good point—ovens vary a lot. I also usually end up closer to 28–32 minutes so the cheese gets properly bubbly and the tortillas don’t stay too soft.
Easy recipe! Used leftover roast beef and it still tasted great. Thanks!
I don’t know about using roast beef. Isn’t that like a whole different recipe? 🤔
Glad you liked it! Using leftovers is such a smart idea. Makes cooking easy!
Not gonna lie, 8 tortillas for only 1 lb of beef feels a bit tight. I ended up stretching the filling with more cheese and I guess that worked, but the ratios could be clearer.
Nah, I think it’s fine if your tortillas are medium and you don’t overstuff. Maybe OP used bigger tortillas or too much filling. Cheese makes up for it either way.
Totally get you—8 tortillas vs 1 lb beef is a bit of a squeeze. I usually add a little extra beef or more sauce so it doesn’t feel dry/skimpy. Clearer ratios would help a lot.
These enchiladas were a hit at our family dinner! Super easy to make.
I don’t know, looks kinda basic. How do you make it not taste like cardboard? 🤔
So glad to hear that! We had them at our last party and everyone loved too! 😍
I followed the recipe exactly, but the meat was a bit dry. Next time I think I’ll add some salsa.
Good stuff, easy. Will make again.
I tried it and it was decent, but I think 15 oz sauce felt a little skimpy for me—next time I’ll use the whole can and maybe add extra cheese.
Right?! These are super straightforward—love a recipe that doesn’t fight back. 😄
Enchiladas are not Mexican food! I don’t know who decided that, but it ain’t right.
Not bad! But I found the tortillas a little dry when I rolled them. Maybe I should warm them up first or add more sauce.
umm i did the steps but mine came out watery?? maybe my enchilada sauce was too thin or i didnt cook beef long enough. still ate it all tho 😅
I followed it pretty much exactly, and my family went back for seconds. The tortillas stayed nice and soft—probably helped that they were covered in sauce and cheese.
Pretty solid recipe, but I think 20-25 minutes might be a little short if your tortillas are on the thicker side. Mine needed closer to 30 to get properly bubbly.
Too much cheese for my taste. I like it simpler, but if you love cheese, go for it!
Best recipe ever! 😍 Can’t believe I never tried this before. Thank you!
Not bad, but mine were kinda dry. Next time I’ll use a bit more sauce or warm the tortillas first so they roll easier.
Yum! But where is the guac?? Could totally use some guacamole on the side.
Made these last night and wow—super comforting. The sauce layer on the bottom really helps them stay juicy. I used Mexican blend cheese and it came out perfect.
