Baked Stuffed Tomatoes with Rice and Herbs

Baked stuffed tomatoes with rice and herbs are a beautiful celebration of Mediterranean simplicity. This dish manages to be both humble and impressive – the kind of thing you’d find on a sun-drenched Greek island or at an Italian family table. It’s all about the ingredients: ripe summer tomatoes, fresh herbs, and perfectly seasoned rice, baked until tender and aromatic.

The appeal starts with the presentation. Plump tomatoes, hollowed out and filled with a savory rice mixture, are arranged snugly in a baking dish, their tops placed like little hats. As they roast, the tomatoes soften and sweeten, the juices mingle with the filling, and the herbs release their fragrance, creating a dish that’s more than the sum of its parts.

The rice stuffing is the real heart of this recipe. Usually cooked partially before filling the tomatoes, it’s mixed with parsley, basil, mint, garlic, and often a little onion or scallion for depth. A touch of olive oil and maybe a few pine nuts or currants can elevate the flavor even more. The balance is key – the herbs should brighten the dish without overpowering it, and the rice should be tender but not mushy after baking.

What makes this dish shine is its versatility. It can be served hot, warm, or at room temperature. It works beautifully as a side dish, but it’s just as satisfying as a vegetarian main course, especially with a wedge of feta or a dollop of Greek yogurt on the side. In some traditions, you might find potatoes nestled between the tomatoes, soaking up all the goodness and adding another layer of comfort.

Baked stuffed tomatoes are also ideal for making ahead. They reheat well and somehow taste even better the next day, after the flavors have had time to meld. It’s one of those dishes that feels timeless, rooted in tradition, yet endlessly adaptable. Light but hearty, elegant yet rustic, this dish is a quiet showstopper that reminds you how much joy can come from simple, honest cooking.

Baked tomatoes?! Seriously who eats that? I prefer my tomatoes in a salad.

  2. User avatar brian.rau1987 says:

I dunno, isn’t it kinda weird to stuff a tomato? I was skeptical at first but it was kinda good.

Stuffing a tomato? Sounds weird but it’s surprisingly tasty! I tried it once and was impressed. Give it a go!

I thought tomatoes were bad for you, but these r good?! 🤷‍♂️ I need to look it up.

  4. 4 stars
Good idea, but 45 minutes felt a little long for my tomatoes—they got slightly too soft. Next time I’ll start checking at 35. Flavor is still solid though.

  5. User avatar dee.zboncak says:

I don’t know… stuffed tomatoes with rice seems like a weird combo to me. But I made it anyway and honestly it was better than I thought. Still, wouldn’t make it weekly.

  6. User avatar rhett.collins88 says:

Do you have to use fresh herbs? I thought dried would be fine. Lemme know!

  7. User avatar kathlene.gleichner says:

Just made these and they turned out flat! I think I scooped too much out. Whoops!

    1. User avatar vera.king13 says:

You did it wrong, probably. Make sure to measure right. My grandma always said, ‘No eyeballing!’

    2. User avatar vincenzo.toy59 says:

      4 stars
Flat tomatoes happen! Don’t worry, they still taste great. Just try not to pack them too tight next time! 😊

  8. User avatar layla.brakus says:

    3 stars
I dunno. They looked nice in the pic, but mine turned out mushy. Maybe I overcooked them?

  9. 2 stars
Did anyone else find it bland? I added hot sauce but still didn’t help much.

  10. User avatar Gandalf the Grey says:

So easy to make! I added some ground meat for more flavor. Yum!

  11. User avatar brendon.kiehn48 says:

1 star. This didn’t work for me. The cheese burned while the tomatoes were still hard. Not doing this again.

  12. 5 stars
Never thought tomatoes could be so good! 10/10 would recommend to a friend.

  13. User avatar halflife4 says:

    3 stars
I did exactly the steps and somehow my tomatoes stayed firm after 45 minutes 😭. Maybe oven temp runs low. I might cover with foil next time so they steam a bit.

  14. 4 stars
This recipe is so easy! Perfect for a quick meal. I added some ground beef for extra protein.

  15. User avatar cyrstal.cassin39 says:

These came out so cozy and flavorful. The herb mix is legit—my kitchen smelled amazing while baking. I used a bit more mozzarella and they were gone fast.

    1. 3 stars
I made these and followed it pretty much, but mine came out kinda watery. I think I scooped too much pulp? Also I didn’t have fresh thyme so I used dried—maybe that’s why. Still tasted good though.

    2. User avatar kim.bahringer43 says:

      5 stars
Totally agree—these are super cozy. I’m always skeptical about “stuffed tomato” recipes but the herb combo really shines. Next time I might try a little extra mozzarella like you did 😄

  16. User avatar Siona Atreides says:

    4 stars
Weirdly good! The stuffing tastes almost like stuffed peppers, but lighter. I’ll try adding garlic next time.

Baked tomatoes? That’s a little weird. I prefer them raw in salads. Not for me.

    1. 4 stars
Raw tomatoes are great for salads! But baked tomatoes can be surprisingly good, especially stuffed. Just try it!

    2. 3 stars
I get that! Baked tomatoes ain’t for everyone. But they’re pretty tasty with the right seasoning! Maybe give em a chance? 🥴

  18. User avatar bradford.friesen24 says:

Wasn’t a fan of the herbs, too much greenery for me. I just like plain rice. lol.

  20. 5 stars
These turned out so flavorful—using all those fresh herbs really makes a difference. I added a pinch of garlic salt and it smelled amazing while baking. Will definitely make again!

  21. User avatar rosendo.kub1 says:

    4 stars
I like the idea, but 1 cup cooked rice felt like a lot for only 6 tomatoes—ended up with extra filling. Maybe my tomatoes were smaller? The flavor was great regardless.

    1. User avatar annalisa.schoen says:

      5 stars
Ooh good catch. I’ve noticed tomato size matters a ton—if they’re smaller, 1 cup cooked rice can definitely overfill. Next time I’ll scale the rice down or scoop out more pulp to balance it.

    2. User avatar horacio.gibson22 says:

      3 stars
Idk, i followed it and mine was fine, i think 6 tomatoes just dont all hold the same. Also did u cook the rice fully? like not al dente? 1 cup is a lot tho 😅

  22. User avatar heriberto.koss2013 says:

    4 stars
Very tasty! I added some ground beef to the mix for extra protein. Yummy! 💪

  23. User avatar alexis.koss says:

  25. User avatar marlana.muller44 says:

These turned out so flavorful! The herbs smell amazing while baking, and the mozzarella gets perfectly melty. I used a bit more pepper than the recipe and it was great.

  26. User avatar bell.franecki89 says:

I’m not a big fan of tomatoes, but my husband loved these. Must be nice to like healthy food!

    1. User avatar mercedez.rosenbaum39 says:

      5 stars
It’s great to hear your husband enjoyed it! You could swap the tomatoes for bell peppers if you’re not a fan. They’re healthy too!

  27. 3 stars
I like the idea, but mine were a bit dry. Next time I’ll add some of the reserved pulp juices or a spoon of olive oil to the filling.

  28. User avatar jeremy.hayes1982 says:

    4 stars
I forgot to buy fresh herbs. Used dried instead. It was ok, but I think fresh would be better.

  29. User avatar kyla.mcglynn1985 says:

    4 stars
Honestly I expected mushy tomatoes, but they held up. Still, I’d cut the tomato tops deeper for more room in the shells.

  30. 5 stars
So delicious! Even my picky kids ate it! Thank you for this recipe.

    1. User avatar benedict.jacobs37 says:

wow so good—i did kinda mess up tho lol 😅 i forgot to pack the rice tight and they came out a little watery, but still tasty.

    2. 5 stars
Seriously? I’m making these tonight—love anything stuffed. The herb combo sounds amazing.

  34. User avatar eric.harvey46 says:

    3 stars
My cheese didn’t get “golden brown” like in the description. I think my baking dish was covered too long. Flavor was good though.

    1. User avatar marvin.corkery38 says:

      3 stars
Hm… 350°F seems low to make it golden. I woulda baked more than 45 min or turned it up like 400. Also if your dish was covered like foil the whole time, the cheese wont brown right.

    2. 5 stars
Yeah, that sounds like the top just didn’t get enough time or heat on it. Next time, try uncovering for the last 10 minutes (or broil briefly) so the cheese actually browns. Glad the flavor still came out good though!

  35. User avatar geraldo.bashirian60 says:

    2 stars
350°F is fine, but 45 min is not enuf for me. Also, how much is 1/4 cup parsley? I used like… a bunch? kinda. Taste was ok, but I’d use less oregano.

  36. User avatar elbert.brakus1965 says:

    4 stars
It’s simple but filling. Makes me feel like I’m eating fancy food without spending too much.

  37. User avatar stephan.bergstrom1990 says:

    5 stars
This recipe is amazing! So fresh and delicious. My family loved it. Will definitely make again.

    1. User avatar tammy.schimmel1981 says:

      3 stars
I tried it too, and my kids would not eat it! Maybe they just don’t like tomatoes?

  38. User avatar renae.welch says:

    5 stars
I loved it! The herbs gave it such a fresh taste, felt like I was in Italy or something.

  39. User avatar rich.landlord says:

    3 stars
I made these for dinner, and while they looked nice, the taste was kinda bland. Needs more spices!

  40. User avatar ashleigh.hegmann says:

    4 stars
Easier than it seems! I threw in some leftover veggies too, tasted great. 🙂

  41. 4 stars
Really good, but 350°F for 45 minutes was a little slow for my oven—tomatoes took longer to fully get tender. Otherwise the stuffing ratio is spot on.

  42. User avatar kendall.brekke1979 says:

    2 stars
Rice inside tomatoes sounds weird. But okay, I guess it tastes good. Next time I’ll add garlic.

  43. User avatar lenard.gerhold says:

    4 stars
Super easy to follow. I was worried 45 minutes wouldn’t soften the tomatoes enough, but they were tender and the filling held together nicely.

  44. User avatar Wonko the Sane says:

    4 stars
What if I replace the cheese with avocado? Is that a good idea? Asking for a friend.

  45. 3 stars
Not bad, but I expected more wow. The herbs tasted a little too “green” for me, and I might cut back next time. Cheese was nice and melty!

  46. 5 stars
These turned out really tasty—herby, comforting, and the mozzarella got perfectly golden. I used a little extra thyme and it was still balanced.

  47. User avatar kortney.mcclure46 says:

    2 stars
Okay, but can someone tell me why my cheese didn’t melt? Did I do something wrong?

  48. 5 stars
These were surprisingly comforting. The herb mix makes them taste fresh, not “same-y.” I used a bit more mozzarella and they still held up well.

  49. User avatar gail.jenkins1997 says:

    4 stars
I tried it exactly, but I accidentally scooped too much tomato and my shells collapsed… still tasty, just looked like a casserole. 10/10 for flavor, 0/10 for presentation 😅

  50. User avatar Shaddam Corrino IV says:

    4 stars
My kid won’t eat ‘tomato boats’ but he ate the filling. I called it rice bake and he went for it. Works as a sneaky meal, lol.

  51. User avatar lucie.bradtke says:

    3 stars
I liked the idea a lot, but mine was a bit bland until I added more salt and pepper. Also I couldn’t find fresh oregano so I used dried—still worked though.

    1. 5 stars
Totally agree—fresh herbs usually bring the flavor, but salt/pepper makes a big difference. Dried oregano can work great in a pinch too!

  52. 5 stars
This recipe is SO good! I used brown rice instead of white, still yum!

  53. User avatar veola.mccullough says:

    5 stars
Wow! So simple and packed with flavor! My kids even ate them. Huge win! 🎉

    1. 4 stars
I can’t believe your kids liked it! Mine are so picky 😩. Gonna try this recipe anyway, looks great!

  54. User avatar cheri.ryan25 says:

    3 stars
The cooking time was too long for me. My tomatoes got a bit mushy… Not exactly what I expected.

  55. User avatar jospeh.murray says:

    3 stars
I made this but forgot the cheese, oops! Still tasted alright but I can only imagine how good it would’ve been with it.

    1. User avatar Draugr Death Overlord says:

      5 stars
Cheese definitely makes everything better! Glad it still turned out alright for you. Next time, don’t forget it!

    2. User avatar lacy.dooley1980 says:

      3 stars
I dunno, sounded pretty good without cheese too! Tomatoes and rice are great. Cheese is just extra, right?

  56. 3 stars
Lol, I thought I was making stuffed peppers. I guess this works too. Taste was meh.

  57. 5 stars
Wow so simple and cheap dinner, even my kid ate it. 10/10 would do again. 🙂

  58. User avatar sherise.pfeffer says:

    3 stars
Yummy! But maybe too cheesy. I couldn’t taste the tomatoes enough.

  59. User avatar beulah.okon1992 says:

    3 stars
I liked it, but I think 1 cup cooked rice is a lot—my filling was overflowing the tomato shells. Still tasty, just needed more tomatoes or less rice.

  60. User avatar Kimberely Roob says:

    3 stars
The measurements are kinda vague like “salt and pepper to taste,” but overall it worked. I think I used too much oregano and it got a little strong.

  61. User avatar steve_maga says:

    5 stars
These tomatoes were really good! Perfect for a light dinner. Plus, super healthy!

  62. 1 star
Tomatoes? Looks more like some green bomb. I prefer my food to look appetizing.

    1. User avatar otto.koch2008 says:

      4 stars
I think they look great! The herbs must make them super flavorful. Don’t judge a book by its cover, right?

  63. User avatar barbera.klocko says:

    5 stars
I made it with fresh herbs only (no dried) and it tasted like summer. Definitely bookmarking this recipe.

  64. User avatar Captain Ginyu says:

    5 stars
This is delicious—like stuffed peppers but with tomatoes. I added a pinch of chili flakes and everyone wanted seconds.

  65. User avatar lionel.brown2007 says:

    3 stars
Not gonna lie, I expected more “cheffy” flavor. The texture was nice, but the rice felt kind of dry even with the tomato pulp. Next time I’ll add a drizzle of olive oil or a splash of tomato sauce.

  66. User avatar joe_banana says:

    5 stars
My picky eater loved these. The herbs really come through and the rice keeps it filling without being heavy.

  67. User avatar eddie.shields21 says:

    2 stars
My mozzarella didn’t get golden on top even after 45 minutes. Maybe my oven runs cold? Tasted fine, just not as pretty.

  68. User avatar elida.stiedemann70 says:

    2 stars
I tried this and it was kinda bland. Maybe more cheese or some spicy fit would help.

  69. User avatar ray.stamm23 says:

    5 stars
These stuffed tomatoes are a game changer! So delicious and easy to make. Will definitely make again! 😍

    1. User avatar tommie.torphy83 says:

I tried this recipe yesterday and they turned out amazing! Can’t believe how easy it was. Thanks for sharing! ⭐️⭐️⭐️⭐️⭐️

    2. 2 stars
Not sure about this one. I mean, tomatoes? Really? It sounds weird. I’d rather just eat rice by itself. 🤷‍♂️

  70. User avatar lamonica.kulas54 says:

Honestly, I don’t get why people like this so much. It was just okay, nothing special.

    1. User avatar margery.stokes99 says:

      3 stars
I thought the same at first, but maybe you just need to try adding some more spices or a different cheese?

    2. User avatar granville.orn30 says:

I totally disagree! These stuffed tomatoes are one of my favorites! The flavors are amazing!
