Ingredients
  

  • 4 chicken breasts boneless and skinless, pounded thin
  • 1 cup breadcrumbs preferably Italian-style
  • 1/2 cup Parmesan cheese grated
  • 2 eggs beaten
  • 1/2 cup flour

      Mine used to come out oily too. Draining on paper towels helps, but I also found the oil temp matters a lot—if the pan isn’t hot enough, the crumbs absorb more oil and don’t crisp. Try medium-high (or even slightly higher) and let it sizzle when the chicken hits.

    I don’t get the olive oil part—why not butter? And 1/4 cup olive oil doesn’t seem like enough to fry in a skillet. I had to add a lot more or the crust wouldn’t brown.

      Butter would work, but olive oil helps it brown more evenly and keeps the crust from burning as fast—plus it’s got a higher smoke point. Also, 1/4 cup sounds small, but you’re mostly shallow-frying; the cutlets don’t need to be fully submerged. If yours didn’t brown, your skillet might not have been hot enough (or the oil was absorbing/evaporating quickly), so adding a bit more oil makes sense.
