Ingredients
  

  • 1 cup wild rice rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Instructions
 

  • In a medium saucepan, add the wild rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes, or until the rice is tender and has absorbed all the water.
  • Once the rice is cooked, remove from the heat and let it cool to room temperature.
  • In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, and parsley.
  • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, and black pepper.
  • Add the cooled wild rice to the vegetable mixture. Pour the dressing over the salad and toss gently to combine.
  • Serve the salad chilled or at room temperature. Enjoy!

      Mushy rice is usually from too much water or cooking it too long. Make sure to keep an eye on it next time! Also, did you cover the pot during cooking? That can trap steam and make it mushy.

    Good base recipe. I think 1/4 cup red onion is a lot for my taste, so next time I’ll cut it down. Also mine wasn’t fully tender at 45 min—maybe my rice was older.

      I wouldn’t. Wild rice salad is supposed to take forever lol. Quick rice will be too soft and then the whole thing gets soggy when you chill it. If you’re in a rush, maybe just use a different grain instead.

    Tasty, but I think 1 cup wild rice + 2 cups water might be a little tight for some stoves—mine took closer to 50-55 minutes. Still, the salad was solid and not bland at all.

      Hmm I think 1/4 cup onion is already a lot 😅 maybe depends on the onion type? I’d also suggest rinsing/drying cucumber good so it stays crunchy. Wild rice takes forever though, mine was never done at 45 minutes…

      Totally agree about the crunch—cucumber + parsley is such a good combo. If your tomatoes were watery, I think adding a little more salt (or even draining/seed-squeezing the tomatoes) would help a lot. Great note for next time!
