  • 1 cup non-dairy milk such as almond or soy
  • 2 tablespoons vegetable oil such as canola or melted coconut oil
  • 1 teaspoon vanilla extract

Instructions
 

  • In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  • Pour in the non-dairy milk, vegetable oil, and vanilla extract. Stir until just combined; do not overmix.
  • Heat a non-stick pan or griddle over medium heat. Lightly grease with oil if necessary.
  • Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown on the other side.
