- 1 cup pumpkin puree canned or homemade
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 large eggs at room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ginger ground
- 1/4 teaspoon ground cloves
- 1/4 teaspoon nutmeg ground
- 1/2 cup milk at room temperature
- 1 cup cream cheese frosting for topping
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a large bowl, combine pumpkin puree, vegetable oil, sugar, eggs, and vanilla extract. Mix until smooth.
