Ingredients
  

  • 1 cup chickpeas canned, drained and rinsed
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cherry tomatoes halved
  • 2 tablespoons tzatziki sauce store-bought or homemade
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon olive oil extra virgin
  • to taste salt
  • to taste black pepper freshly ground

Instructions
 

  • In a large mixing bowl, combine the chickpeas, cucumber, red onion, and cherry tomatoes.
  • Add the tzatziki sauce, fresh dill, lemon juice, and olive oil to the bowl.
  • Gently toss all ingredients together until well combined.
  • Season with salt and black pepper to taste.
  • Serve immediately or refrigerate for 15-30 minutes to allow flavors to blend.
