Lasagna is one of those comfort foods that never goes out of style. But if you’re looking for a lighter, protein-packed alternative to the traditional version, turkey and zucchini lasagna is the answer. This dish brings all the hearty, layered satisfaction of classic lasagna without the heaviness, thanks to lean ground turkey and thinly sliced zucchini in place of pasta sheets.
Using zucchini instead of noodles is not just a clever low-carb swap, but it also adds a fresh, slightly sweet flavor and beautiful texture to the dish. The key is to slice the zucchini lengthwise into thin strips. Lightly salt them and let them sit for 10 to 15 minutes to release excess moisture, then blot with a paper towel before layering. This step helps avoid sogginess once baked.
Ground turkey keeps things lean while still adding plenty of flavor. Sautéed with garlic, onions, and herbs, it becomes a savory base that pairs perfectly with a rich tomato sauce. You can use your favorite store-bought marinara or go the extra mile and make your own with crushed tomatoes, olive oil, and a sprinkle of oregano and basil.
To add creamy depth, layer the zucchini and turkey with a blend of ricotta cheese, shredded mozzarella, and a sprinkle of Parmesan. The result is a gooey, golden-topped lasagna that feels indulgent but is actually quite balanced.
This lasagna is a great meal prep option. It holds up well in the fridge for a few days and reheats beautifully. Serve it with a side of green salad or garlic-roasted veggies for a complete, nutritious meal.
Whether you’re cutting carbs, eating gluten-free, or just trying to sneak more veggies into your day, turkey and zucchini lasagna is a satisfying, family-friendly recipe that proves healthy eating can be delicious too.

Ingredients
- 2 zucchini large,
- 1 pound ground turkey
- 1 cup onion diced
- 1 cup Bell peppers diced
- 2 cloves garlic minced
- 1 can crushed tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups shredded mozzarella cheese
- 1/2 cup parmesan cheese grated
- 1/4 cup basil for garnish, chopped fresh
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchini lengthwise into thin strips, about ¼ inch thick.
- In a large skillet, cook the ground turkey over medium heat until browned. Add the diced onion, bell peppers, and garlic. Cook for an additional 2-3 minutes until the vegetables are tender.
- Stir in the crushed tomatoes, dried basil, dried oregano, salt, and black pepper. Let the sauce simmer for about 10 minutes.
- In a baking dish, spread a thin layer of the turkey sauce. Layer zucchini slices on top, followed by another layer of the sauce. Repeat the layers until all ingredients are used, ending with a layer of sauce on top.
- Cover the baking dish with foil and bake for 45 minutes.
- Remove the foil and sprinkle the shredded mozzarella and grated Parmesan cheese over the top. Bake for an additional 15 minutes, or until the cheese is melted and bubbly.
- Let the lasagna cool for a few minutes before serving. Garnish with chopped fresh basil.
- Enjoy!
The idea is cool, but lasagna needs noodles, sorry. Too much work slicing zucchini, and it didn’t taste like the real thing to me.
This recipe is a keeper! Tried it last night and my kids didn’t even notice the lack of noodles! 😂
Too much zucchini, not enough pasta. Just doesn’t feel like real lasagna to me. 🙄
Easy and healthy! I swapped the turkey for beef and it turned out great! Thanks for the recipe!
I added extra cheese because cheese makes everything better. Yum!
Eh, it was alright. My husband didn’t like it and said it tasted funny. 🤷♀️
I’m sorry to hear that! Maybe it was the zucchini? It can have a different taste. I thought it was delicious! 😋
Taste funny? That’s weird! Did you make any changes? I made it just like the recipe says and it was great! 🦃🥒
This was so good! My family loved it. I didn’t even miss the pasta!
My family loved this! Even my picky son ate it without complaining. Definitely making it again soon!
That’s awesome! My kid is always picky too, maybe I’ll give it a try! Thanks for the tip!
I don’t know how to cook, but I tried this recipe and it was a disaster. I’m still unsure if my oven was broken or what.
This isn’t a real lasagna. Where’s the pasta? I call bologna on this one. 😒
Yum! I added some chili flakes and it kicked it up a notch. My kids loved it!
Yummy!
Totally agree! This lasagna looks delicious! Can’t wait to try it out.
Yum! I added some spinach and it turned out great! Healthy and filling. 😊
Good but could use more cheese! More cheese is always better! Yum!
I totally agree! More cheese makes everything better. I love how it melts! 🧀
Easy to follow and delicious! I added some mushrooms and it was sooo good. My kids finished it all!
Love❤️ this recipe! So healthy and tasty! Will share with my mom!
Lasagna?? With no noodles?! Is that even legal? It was surprisingly tasty though. LOL
This was amazing! The zucchini added such a nice twist to the traditional lasagna. My family loved it!
I totally agree! Zucchini is a game-changer in this dish! It’s nice to see some veggies in a classic like lasagna. 😊
I don’t know. Zucchini in lasagna? Seems kinda weird. Aren’t lasagna noodles better? Just saying. 🤔
Easy to follow, but I think it needs more cheese haha. Cheese is life! 🧀
More cheese would definitely make it even better! I love cheese too. 🧀👍
Wait, how do you cut zucchini in slices? I just chunked them up…
Yum! I never thought ground turkey could taste this good! Definitely making this again.
Lasagna without pasta? Mind blown. I didn’t have turkey so I used beef and I loved it!
Tried it with eggplant instead of zucchini. It was bangin! Highly recommend experimenting!
This lasagna was a hit with my family! Even my picky eater loved it. Thanks for sharing!
This is the first lasagna I’ve made, and it turned out amazing! Totally impressed myself!
Uh, didn’t know zucchini could be a lasagna! Crazy world we live in. 🤷♂️
Love the veggie-heavy twist. Ground turkey is also a smart move. Next time I’m gonna add spinach or mushrooms to stretch it even more.
Super good! Will make again! 😊
So easy to make, but the taste was just okay for me. I think I prefer regular lasagna.
Pretty good, but too much zucchini for my taste. I prefer the pasta version. Will try again with less zucchini.
Lasagna from turkey? R u kidding? Lasagna is only for beef! But tasted fine… maybe try chicken next time?
1/4 inch zucchini? Mine basically melted into mush. Also I used fresh oregano instead of dried and it tasted “off” to me. Meh.
5 stars⭐⭐⭐⭐⭐ for this! Best dish ever made with turkey!
It was okay, but I think it needed like more flavor? Idk, I just want to stick with meat lasagna. 2 stars.
Zucchini lasagna? Why not just use real pasta? 🙄
The instructions were clear and the cook time was spot on for me. Cheese came out bubbly and the sauce tasted homemade.
Totally agree! I followed the steps and my cheese got that perfect bubbly top too. The sauce really does taste like it was simmered for ages.
Glad it worked for you, but I think 45 min under foil is a bit short. Mine was still watery—next time I’ll bake longer or salt the zucchini first. Still tasty though!
I don’t like turkey, so I used beef instead, but it was still good. Just saying!
Beef sounds interesting! I might try that next time. Glad you liked it!
But like, isn’t lasagna supposed to have turkey? Sounds risky!
I made it without the cheese coz of my lactose problems, and it still was okay.
This was amazing! My family devoured it. The zucchini adds such a nice texture. 5 stars!
This lasagna is amazing! I never thought turkey could taste this good. Definitely a keeper.
Totally agree! It’s surprisingly tasty. I just made it last night!
Tasty and easy! I used ground beef instead and it was a hit at the family dinner!
I felt like a chef making this! But I might have added too much salt. Oops!
Sounds delicious! I bet the extra salt just makes it more flavorful. I usually add extra spices to my dishes too, just go with your taste! 😊
I never trust recipes, but this one was legit! Who knew healthy could be delicious??
Honestly, I don’t like zucchini at all but I love when my mom makes this dish.
It’s lasagna, but without the lasagna noodles? Color me confused…
I followed the recipe, but my lasagna was more like soup. Did I do something wrong?
Too many steps for me, not sure I’ll make this again. Just give me pizza instead.
I get it! This recipe is a bit involved, but I have to say, it’s worth it for the flavor! Maybe try a simpler version next time? Pizza’s always a win too!
Tasty but took too long to prepare. Next time, I’ll use pre-sliced zucchini.
I think pre-sliced zucchini is a great idea! It saves so much time. Can’t wait to try it next time myself!
Really? I found this recipe easy peasy! Lasagna is mostly about layering anyway. Why not spend the time?
Lasagna is best with layers of pasta!!! Will not try since it ain’t traditional.
Turkey in lasagna? Sounds weird! But this actually turned out pretty good. I was skeptical at first. 4 stars.
Bah! Zucchini doesn’t taste like noodles. That’s just false advertising.
Nah, I tried it once and it just don’t taste like noodles no matter how you cook it. Sounds good as a side but not a replacement!
I have to disagree! Zucchini can actually be a great substitute for noodles. It’s all about how you prepare it! Give it a try before dismissing it!
I was skeptical about using zucchini instead of pasta. It turned out pretty good but wasn’t quite like real lasagna.
It wasn’t bad, but the zucchini was too watery. Maybe less cooking time?
I think it could use more spices… it’s a bit bland for my taste. Maybe some red pepper flakes?
Maybe it just needs more cheese? Cheese always makes everything better!
I totally agree! A little kick would make it so much better. Red pepper flakes sound like a great idea!
I didn’t have basil, so I just used a bunch of oregano… worked out!
Quick and easy and super yummy! Perfect for meal prep!
Not sure if I’ll make this again. Ground turkey has no flavor. Maybe try beef next time???
Made this last night—surprisingly filling. The zucchini strips layered nicely and the sauce tasted super herby. I might add a pinch of red pepper flakes next time for a little kick.
The zucchini turned out way too watery for me. Maybe I sliced it too thick? Not sure, but it was a mess.
Not bad, but what about the noodles? Lasagna without them? Nah.
Easy to make and healthy. But I wish there was more cheese! Next time I might double it.
Just made this and it turned out better than I expected! So flavorful! 🌟
That’s awesome to hear! I’m definitely trying this recipe next! 🍽️
Nice idea, but I don’t know if it will turn out that good. Zucchini kinda soggy sometimes.
This lasagna was a game changer! I never knew zucchini could replace pasta so well. My kids loved it!
So glad to hear your kids loved it! Zucchini really is a fantastic substitute. I’m gonna try this out myself. Thanks!
Lasagna is always good but this one feels incomplete. More cheese maybe? 🤔
I don’t think it needs more cheese. It’s not traditional lasagna anyway, so it’s fine as is. 🤷♂️
I totally agree! Cheese makes everything better. More mozzarella please! 🧀
I’m not usually into lasagna without noodles, but this actually worked. My zucchini needed a little extra time so it didn’t feel too firm, though.
I tried something like this but my zucchini was still kinda watery 😩. Did you salt them first or just bake longer?
Nice! I’m with you—zucchini “noodles” can be hit or miss. Glad it held up after the extra time though.
It turned out WAY too watery for me. I think I added too many tomatoes. Not sure if I would try again.
Sounds like you had a tough time. Maybe next time try using less tomatoes or draining them first? Lasagna should be thick and hearty!
This lasagna was a hit at my dinner party! Everyone loved it, especially the zucchini instead of pasta. Will definitely make again!
Sounds delicious! I’m always looking for healthier options. Can’t wait to try it!
I didn’t have parmesan, so I used feta. Not the same but still tasty!
I got confused with the layers and ended up with a big mess in the baking dish. Tastes good tho!
A big mess? That’s not surprising, lasagna can be tricky! But as long as it tastes good, who cares about the looks? Just one question, how did zucchini end up being a layer like that? 😂
Don’t worry, it happens to the best of us! At least it tasted good, right? Next time, maybe try a bigger dish? 😊
I didn’t have zucchini, so I used eggplant instead. Still turned out okay, but not as good as I hoped. Not sure if I’ll make again.
The instructions were confusing, and I accidentally burnt my cheese! Not sure I’ll try it again.
This was amazing! I can’t believe it’s made without pasta. My kids loved it!
I’m so glad you liked it! It’s a fun twist on lasagna, and my kids loved it too. Definitely making this again!
Turkey browned well, but 10 minutes simmer didn’t seem like enough time for the flavors to come together. I might simmer longer next round.
Hmm I think 10 min is fine since it still bakes 45 + 15, so flavors keep developing. Maybe try simmering longer though if you like it more intense.
Totally get what you mean—10 minutes feels short for the sauce to really meld. I usually simmer closer to 20–25 before layering and it tastes way more “lasagna-y.”
I thought lasagna was all about the pasta, but this recipe surprised me. It was okay but I prefer the classic style.
This lasagna was fantastic! The zucchini adds such a nice twist. Definitely making this again!
Made this for dinner tonight and it came out super flavorful. The zucchini layers were way lighter than noodles, and the mozzarella/parmesan top got nice and bubbly. Will definitely repeat.
Love hearing that! The zucchini layering is definitely the secret—lighter but still super satisfying. 😋
Does anyone know if I can sub the turkey with beef? I’ve got some in the freezer.
I forgot the garlic, but it still tasted okay. Would try again!
Forgettin’ the garlic? That’s like makin’ spaghetti without noodles! Glad it still turned out okay though!
Honestly, I didn’t think zucchini lasagna would hold up, but the layers stayed together better than expected. The turkey seasoning with basil/oregano was a win.
