Turkey and Zucchini Hash

May 16, 2024

When you’re looking for a quick, healthy, and hearty meal that doesn’t skimp on flavor, turkey and zucchini hash delivers. This one-pan dish is packed with lean protein, tender vegetables, and just the right amount of seasoning to keep things interesting. Whether you’re using up leftovers or starting from scratch, this hash is a reliable go-to for breakfast, lunch, or dinner.

Ground turkey is the star here. It’s light, cooks quickly, and absorbs flavors beautifully. Combined with zucchini, a vegetable that’s both mild and slightly sweet, you get a balance that’s incredibly satisfying. Add some onion, garlic, and maybe a touch of chili or paprika, and the result is a savory, comforting mix that’s anything but boring.

The beauty of a hash lies in its versatility. You can toss in other vegetables you have on hand, peppers, mushrooms, spinach, even diced sweet potatoes. Want to make it heartier? Top it with a fried or poached egg. Looking to keep it low-carb? Serve it as is, straight from the skillet. It’s also perfect for meal prep, as it reheats well and stays flavorful for days.

Another bonus? This dish is as easy on the eyes as it is on the palate. The green from the zucchini, the golden-brown bits of turkey, and flecks of red or yellow from added veggies make it colorful and appealing. It’s a great way to sneak in more veggies and protein without much effort.

Whether you’re watching your carbs, trying to eat cleaner, or simply want something quick and nourishing, turkey and zucchini hash is a smart choice. It’s the kind of everyday recipe you’ll come back to again and again, not because you have to, but because you genuinely enjoy it.

This was kinda bland. I might try adding some spices next time or hot sauce, but my kids didn’t like it much.

  2. User avatar luella.beer24 says:

    2 stars
This tasted bland to me. I followed the instructions exactly, but the flavors didn’t pop. Maybe my oregano was old?

    1. User avatar augustine.heaney1950 says:

      5 stars
That’s frustrating—if you followed it exactly and it still feels bland, it’s often seasoning balance. Old oregano can absolutely be muted, but also try tasting for salt at the end and adding a pinch more pepper (or even a squeeze of lemon) to make the flavors “pop.”

  3. 3 stars
Just a question, can I use chicken instead of turkey? Asking for a friend.

  4. User avatar lowell.hahn75 says:

    4 stars
Pretty solid. I think mine needed a little more salt and the zucchini released a lot of water, so I had to cook it a few extra minutes to thicken up.

    1. 4 stars
Hmm I guess? I follow it and mine got watery as well, but I add the zucchini later or I squeeze it a bit first. Also 1 lb turkey feels like a lot for just 2 zucchini… maybe my pan is smaller.

    2. User avatar kathlyn.emmerich says:

      5 stars
Thanks! That matches what I’ve noticed with zucchini too—mine always turns into a mini water park 😂 Adding extra salt and a few more minutes is totally the move.

  5. User avatar Lumberjack says:

    5 stars
Honestly, ground turkey can be kinda dry, but here it was juicy enough. The olive oil helps. 10/10 for an easy skillet dinner.

  6. User avatar alexander.lind says:

    4 stars
Real talk: I forgot the garlic (how??). Even without it, it still tasted good, so that says a lot, but I’ll do it right next time.

    1. 5 stars
Honestly same—sometimes I’m cooking and realize halfway through I’ve skipped a key ingredient 😅 But if it still came out tasty, that’s a win. Garlic makes it even better though!

    2. 3 stars
how you forget garlic tho lol. I feel like garlic is the whole point. I bet it tasted like… onion and zucchini meat? Still good if you said so.

  7. User avatar dwight.ritchie14 says:

    3 stars
Not bad, but I’m not sure dried herbs were enough—next time I’ll use fresh thyme. Texture was good though.

    1. User avatar mack.welch1957 says:

      5 stars
I totally get what you mean—dried thyme can be a bit muted. Fresh thyme (or even half fresh/half dried) usually gives a brighter flavor. Glad the texture worked out though!

  8. User avatar matha.shields says:

    3 stars
Why did you use turkey? I think beef would be better. Just saying.

  9. User avatar Saruman the White says:

    2 stars
I’m not sure why everyone loves zucchini—mine got mushy. I might’ve overcooked it, but the instructions are a bit vague on timing.

    1. User avatar sterling.zboncak2009 says:

      4 stars
Maybe your zucchini was just too watery? Next time, salt it for like 10 minutes and pat it dry before cooking. But yeah the timing is kinda vague… I’d guess 5-7 min max in a skillet unless you like it soft.

    2. User avatar lacy.zemlak1989 says:

      5 stars
I feel you—zucchini goes from “tender” to “mushy” fast. I usually add it later, like after the turkey is browned and most moisture from the turkey’s cooked off. Also, a little higher heat + shorter time helps.

  10. User avatar sea lion says:

    5 stars
Quick and easy! Perfect for weeknight dinners.

    1. 5 stars
I made this last night and it was so good! I love how simple it is. Will definitely make again.

  11. User avatar Majikthise says:

    5 stars
5 stars! Easy to make and healthy. I used chicken instead of turkey and it was still good.

    1. 3 stars
I dunno, chicken instead of turkey? Seems kinda weird. But if you liked it, that’s cool, I guess.

    2. User avatar chieko.ullrich99 says:

      5 stars
Great substitution with the chicken! I can imagine it being tasty too. Thanks for sharing your experience!

  12. User avatar kip.hartmann says:

    5 stars
Made this tonight—so easy and actually tastes really fresh for a skillet meal. The zucchini softens perfectly and the thyme/oregano combo is legit.

  13. User avatar ebony.thompson49 says:

    1 star
I made this without any seasoning, just turkey and zucchinis. Maybe that’s why I didn’t enjoy it much.

    1. User avatar Galadriel says:

      5 stars
You really should try adding some seasoning next time! It makes a huge difference! Trust me!

  14. User avatar candi.johnston2015 says:

    2 stars
Eh, I don’t get the hype. It’s just turkey and zucchini. Not a fan of the texture.

  15. User avatar omega.okuneva says:

    1 star
Too much chopping for me. Why can’t recipes just come pre-chopped?

  16. User avatar tracy.murphy says:

    5 stars
This is a great meal prep idea! Easy to make and healthy. I put mine over quinoa.

  17. User avatar willian.dietrich says:

    2 stars
I dunno, it’s just ground turkey and veggies. Not very exciting to me.

  18. User avatar earline.walsh1964 says:

    2 stars
Eh. It tasted like “ground turkey, but make it green.” Wouldn’t repeat unless I have zucchini to use up.

  19. User avatar miquel.stehr says:

    5 stars
I made this for dinner tonight and it was super easy. The zucchini kept everything juicy and the thyme/oregano combo is really nice. Will definitely make again—maybe add a little red pepper flakes next time.

  20. User avatar sarina.klocko says:

    2 stars
Idk, zucchini cooks too fast. Mine was kind of mushy even though I watched it. I’ll try cutting it bigger chunks next time.

  21. User avatar micah.lueilwitz says:

    5 stars
    Yum!

  22. 2 stars
One lb turkey is too much for two people in my house… and zucchini is kinda expensive where I live. Still, the smell was nice while cooking. 2 stars for cost and 1 star for flavor lol.

  23. User avatar buster.balistreri75 says:

    4 stars
My friend made this and said it’s good but I think it needs more cheese. Cheese makes everything better!

  24. User avatar Arthur Philip Deodat says:

    4 stars
Simple and satisfying. I added some diced bell pepper for color and it tasted great. Next time I’ll try smoked paprika.

  25. 2 stars
I followed the recipe but my zucchini never got tender—probably my pan was too small? I ended up adding a splash of water. Still tasty.

  26. User avatar tyson.jacobi42 says:

    2 stars
I followed the steps exactly but the zucchini didn’t get tender at all after a long time. Maybe my zucchini was extra firm—still, it was edible.

  27. User avatar Agatha L. Outtathere says:

    3 stars
Not bad, but my zucchini got a little watery. Next time I’ll sauté it a few minutes longer or cook the turkey more first to let moisture cook off.

  28. 3 stars
I followed it mostly, but my zucchini got a little watery. I think I diced bigger pieces and crowding the pan caused it. Next time I’ll cook on slightly higher heat or let it reduce more.

    1. 3 stars
Hmm, mine never gets watery when I do it, maybe you didn’t cook the turkey long enough? Also I cut zucchini super tiny like matchsticks and it cooks dry-ish. I’d try squeezing it a little next time lol.

    2. User avatar ardell.harber63 says:

      5 stars
That makes total sense—zucchini is notorious for releasing water, especially if the pieces are larger and the pan is crowded. Higher heat + letting it reduce longer is the move. Did you notice it thinning out right away or more after the turkey browned?

  29. User avatar billy.reichert39 says:

    3 stars
Not bad, but I expected more flavor punch. I think it needs more garlic or maybe a pinch of chili flakes.

  30. 5 stars
This was delicious! My family loved it. I added some chili flakes for a kick. Will make again!

    1. 3 stars
Sounds good, but does it really taste as good as it looks? I’m iffy on turkey sometimes.

    2. User avatar pandora.sporer says:

      5 stars
I’m glad you liked it! The chili flakes sound like a great idea for extra flavor! Can’t wait to try it myself.

  31. User avatar dwayne.waters52 says:

    4 stars
Not bad, but I think it needs a splash of something (like lemon or a little soy sauce) to really wake up the flavors. Still, the texture was great.

  32. User avatar sun.rosenbaum48 says:

    4 stars
Turkey can get dry, but mine stayed juicy. I think browning it well then not overcooking the zucchini helped. Nice weeknight dinner.

    1. 4 stars
Huh, I made this once and my zucchini turned to mush 😬 maybe I overcooked it. Still tasted good though. Browning turkey well makes sense. Weeknight win!

    2. User avatar rodolfo.swift1966 says:

      5 stars
Totally agree—turkey gets weirdly dry if you push it too far. I also like letting the zucchini cook just until it’s tender-crisp so it stays juicy. Glad this one worked for you!

  33. User avatar ja.sporer2014 says:

    2 stars
I think I messed it up. Used more than 2 cloves of garlic and it took forever to cook. Need better timing!

  34. User avatar roy.hills68 says:

    3 stars
The measurements are confusing like there’s a random extra space in the ingredients lol. But I got through it. Flavor was okay—would give it another shot with more seasoning.

  35. 3 stars
Zucchinis are overrated but the turkey was nice. Just not my fave.

  36. User avatar nakia.welch says:

    4 stars
Tasty dish! But I didn’t have thyme, so I used rosemary instead. Still good!

  37. 4 stars
I used chicken instead of turkey and it turned out great! Y’all should try it too!

  38. 3 stars
Turkey can get dry if you overcook it. I rushed step 3 and mine was a bit tough, but the whole skillet still tasted good with the zucchini.

  39. User avatar burton.toy50 says:

    4 stars
Turkey and zucchini??? Sounds weird, but surprisingly good!

  40. 2 stars
My turkey didn’t cook all the way, how can that happen? I followed instructions.

  41. 2 stars
Garlic amount seems small? 2 cloves wasn’t enough for my taste. I also used fresh thyme instead of dried and I liked it better, so I’d adjust that again.

    1. User avatar caridad.morar1971 says:

      5 stars
I’ve done this with 3-4 cloves and it’s way more flavorful. Also I’m team fresh herbs whenever possible—thanks for sharing your tweak.

    2. User avatar jaimee.walker81 says:

      5 stars
Totally get that—2 cloves can feel a bit light depending on how garlicky you like things. Glad fresh thyme worked out for you!

  42. User avatar kendra.vonrueden5 says:

    3 stars
Not bad, but I think it needed more flavor. I followed the recipe exactly but was a bit bland.

  43. 1 star
Boring. Like, I can cook eggs with less effort. Needs sauce or something. Maybe ketchup? 😅

  44. User avatar lavone.kessler45 says:

    5 stars
This is comfort food for people trying to eat better. I served it with eggs and it was a full meal—no complaints.

  45. 5 stars
This was so delicious! My family loved it. Will definitely make again!

  46. 3 stars
This tasted good but felt a bit plain. Like, good “base recipe,” you know? I added some smoked paprika and a squeeze of lemon and it woke up.

  47. User avatar gena.herman says:

    4 stars
Turkey with zucchini hash sounds kinda basic, ngl. But it surprised me—my picky partner went back for seconds.

  48. User avatar travis.hickle2016 says:

    5 stars
    Fire 🔥

    1. User avatar gladys.klein1954 says:

      5 stars
Right?! The turkey + zucchini combo is so good—savory and not heavy. 🔥

  49. 4 stars
Pretty good, but I think it needed more seasoning. Next time I’ll bump the salt and maybe add a little smoked paprika for depth.

    1. User avatar lavenia.cruickshank65 says:

      3 stars
Hmmm I made something like this and I swear it was perfect already. If you add too much salt the turkey gets kinda… weird? But paprika for smokey vibes could work. What ratio you think?

    2. User avatar w00d_ch0p says:

      5 stars
Totally agree—this kind of hash always benefits from a little more salt. Smoked paprika sounds like a great upgrade too!

  50. User avatar dennis.kulas says:

    5 stars
Made this tonight—super easy and the flavor is way better than I expected. The thyme + oregano combo really shines with the zucchini.

  51. User avatar danyelle.wolf2022 says:

    5 stars
Wow, this turkey and zucchini hash is amazing! I added some bell peppers for extra flavor. Definitely making this again!

  52. 4 stars
Not gonna lie, I was skeptical because hash without potatoes sounds kinda weird. But the turkey + zucchini balance actually works. I ate it with a fried egg on top and it was perfect.

  53. User avatar laurence.cummings52 says:

    5 stars
Yum! I added some red pepper flakes and it was fire! 🔥

  54. User avatar NAFO.SUPREMACY says:

    4 stars
This tastes kinda like taco filling without the tortillas. The thyme and oregano combo works though. Would totally eat again.

  55. 2 stars
Is thyme the same as tarragon? I used tarragon and it was weird. No offense.

    1. User avatar cody.huel95 says:

      4 stars
Yeah, they’re totally different. Tarragon has a strong anise flavor, which can be weird for some dishes. Thyme is way more versatile. No offense taken!

  56. User avatar hilario.abbott13 says:

    5 stars
Yum!!! Perfect for my keto diet! So filling yet low calories.

  57. User avatar elisha.gleason2006 says:

This is a weekly staple for me now! Super quick and good for meal prep. Love it!

    1. User avatar Hwi Noree says:

      5 stars
I’m so glad you love it! It’s one of my favorites too! Meal prep made easy! 😊

  58. User avatar suspiciousCommentator says:

    1 star
meh. Needs more seasoning. The garlic flavor was faint and it felt kinda bland even with salt and pepper. Sorry.

  59. 4 stars
This is basically like taco filling without the tortillas lol. I ate it with rice and it worked well. Would recommend.

    1. User avatar karlene.flatley25 says:

      5 stars
Totally agree—taco filling vibe is the best way to describe it. The zucchini makes it lighter but still hearty. I served mine with tortilla chips and it was 🔥.

    2. 3 stars
I tried it but mine was kinda watery? Maybe I diced the zucchini too big or didn’t cook long enough. Still tasted good though—next time I’ll squeeze extra liquid out first. Nice quick meal.

  60. User avatar steffanie.metz31 says:

    4 stars
Easy to make! Used chicken instead of turkey and it worked fine.

  61. User avatar danilo.sauer18 says:

    3 stars
I used lean turkey and it got a little dry while browning—wish I’d cooked it less. Flavor is still decent though.

    1. User avatar Grunthos the Flatulent says:

      5 stars
That’s a super common thing with lean turkey—once it’s dry in the skillet, it’s hard to bounce back 😅 Next time maybe cook it just until it loses the pink and then let the zucchini finish things off. You could also add a splash of water/broth when it starts browning to keep it juicy. Either way, glad the flavor still came through!

  62. User avatar Spider Soldier says:

    3 stars
I think the salt amount is too vague. I ended up under-seasoning, and it tasted kinda plain until I added more pepper and salt at the end.

  63. User avatar garland.labadie55 says:

    4 stars
Pretty solid, though I think it needed a pinch more salt. Also I cooked the onion/garlic longer than the recipe said because I like them more caramelized. Flavor was still great.

  64. 5 stars
Made this tonight and it was so easy. The zucchini cooked down perfectly and the thyme/oregano combo smells amazing. Will definitely make again.

  65. 5 stars
I added a bit of cheese on top, because cheese makes everything better. Delish!

  66. User avatar dallas.herman17 says:

    4 stars
Flavor was good, but mine came out a bit watery. Next time I’ll cook the zucchini a little longer to reduce the liquid. Still a solid weeknight meal.

  67. 3 stars
Not gonna lie, I thought ground turkey would be too bland. It wasn’t, but I needed more salt than the recipe said. Otherwise okay.

    1. User avatar irving.ankunding57 says:

      5 stars
Totally get that—ground turkey can feel bland at first. Glad it turned out good though! I usually end up going heavier on the salt/pepper too, especially once the zucchini releases water. Did you try tasting and adjusting right at the end?

  68. 3 stars
I found it a bit bland. Maybe needs more spices?

  69. User avatar roosevelt.barton10 says:

    5 stars
I added a pinch of red pepper flakes and a squeeze of lemon at the end—game changer. Really flavorful for such simple ingredients.

  70. User avatar gaynelle.halvorson says:

    5 stars
Y’all, my kids actually ate zucchini for once! Miracle!

  71. 2 stars
I don’t know, it was kinda bland. Needed more seasoning.

  72. User avatar Franklyn Dickens says:

    5 stars
Made this for dinner last night—super quick and the zucchini keeps it from feeling heavy. I used a little extra garlic and it was amazing.

  73. User avatar eugene.gutkowski76 says:

    5 stars
This is basically breakfast hash without the potatoes lol. Still good though—ate it with a fried egg on top and it was great.

  74. User avatar sarina.dach1977 says:

    5 stars
So simple and clean—love that. I ate it with a fried egg on top and it turned into a whole meal.

  75. 4 stars
I followed it pretty much exactly, but mine came out a little watery—next time I’ll salt the zucchini first and pat it dry. Still tasty though.

  76. User avatar waneta.macgyver12 says:

    5 stars
Made this tonight and it was super fast. The zucchini softened just right and the thyme/oregano combo smells amazing. I added a pinch of red pepper flakes too—highly recommend.

  77. 2 stars
Five stars for effort but… how is 1 lb turkey enough for “hash”? I ate it all and still wanted more. Maybe double the turkey next time.

  78. User avatar melba.abbott says:

    4 stars
Finally a healthy recipe that doesn’t taste like cardboard! Will make again!

  79. 2 stars
I’m not sure if I did something wrong, but my turkey was dry. Any tips?

    1. 4 stars
Maybe try cooking it at a lower temp next time? It helps keep it juicy. Also, don’t overcook it!

    2. User avatar robena.daniel says:

      2 stars
I dunno, turkey is always dry, right? It’s like that sometimes. Just gotta slather on the gravy!

  80. 3 stars
Not my fave, but my husband loved it. I’ll stick with tacos.

  81. User avatar maegan.anderson84 says:

    5 stars
This recipe was super easy to make! My kids loved it.

    1. User avatar jacki.conroy9 says:

That sounds so delicious! I’m definitely trying this for my picky eaters.

  82. User avatar ali.hackett1951 says:

    4 stars
I followed it pretty closely. Next time I’ll mince the garlic even finer because I got a couple big bites. Overall solid and healthy.

  83. User avatar elijah.lang1968 says:

    1 star
    Meh.

  84. 5 stars
This is a great high-protein meal. I meal-prepped it for work lunches and reheated well. Would totally make again.

    1. User avatar shelby.brakus77 says:

      4 stars
Sounds good, but does it come out a bit watery from the zucchini? Mine always gets soggy unless I pat it dry first. Any tips?

    2. User avatar denese.rowe says:

      5 stars
Love this! I also meal-prep and it reheats way better than I expected. The zucchini keeps it from getting too dry with the turkey.

  85. User avatar Debroah Haag I says:

    5 stars
This was a huge hit at dinner! Thanks for the recipe!

    1. User avatar Falmer Nightprowler says:

      5 stars
So glad to hear that! It’s such an easy and yummy recipe. Good job!

  86. User avatar Reg Nullify says:

    3 stars
Could use more seasoning. I had to add extra salt and pepper at the end to get it to taste balanced. Otherwise simple.

  87. User avatar tamera.grant90 says:

    3 stars
Umm… is it supposed to be crunchy at all? Mine turned mushy after I left it a few minutes too long. Still tasty, just not the texture I wanted.

  88. User avatar denver.lehner says:

    3 stars
I used dried parsley only because I was out of fresh. It was okay, but not the same. Still a good weeknight dish.

  89. User avatar anton.prohaska says:

    4 stars
Not gonna lie, I was skeptical about the zucchini texture. It actually came out tender without being watery, which surprised me. Will make again.

  90. User avatar dexter.spinka says:

    5 stars
Made this tonight and it was super quick. The thyme + oregano combo tastes really cozy. I added a splash of balsamic at the end and it was even better!

  91. 3 stars
The instructions are straightforward, but I wish it mentioned browning the turkey longer. Mine came out a little soft—maybe I didn’t crank the heat enough.

  92. 4 stars
I followed it pretty closely, but I added a pinch of chili flakes. Turned out hearty and not too heavy. Would absolutely make again.

    1. User avatar Daedric Prince says:

      4 stars
So you added chili flakes but still not heavy? Interesting. I feel like zucchini gets watery though—did you cook it longer or keep the heat medium? Might make it again if it stays hearty.

    2. User avatar arthur.jakubowski95 says:

      5 stars
Nice! The chili flakes make it sound extra cozy. I’m glad it wasn’t too heavy—turkey hash is usually great like that. Will try your version.
