Trout and Artichoke Medley

April 24, 2024

Trout and Artichoke Medley is a light yet satisfying dish that perfectly balances the delicate flavor of trout with the earthy, tender goodness of artichokes. This dish is an excellent choice for those seeking a healthy and flavorful meal that feels elegant yet easy to prepare. With the natural richness of the trout and the slight bitterness of artichokes, the combination is as delicious as it is nutritious.

The beauty of this dish lies in its simplicity. Fresh trout fillets are lightly seasoned and gently cooked, allowing their mild, flaky texture to shine. Artichokes, whether fresh or jarred, add a tender, slightly tangy element that complements the trout beautifully. Their unique flavor profile elevates the dish without overpowering the delicate fish.

To enhance the flavors, a few complementary ingredients can be added. Fresh herbs such as thyme, rosemary, and parsley bring a touch of brightness. A drizzle of olive oil adds richness and helps to bring the medley together. For those who enjoy a little acidity, a squeeze of lemon or a splash of white wine can add a delightful zing that brightens the entire dish.

The versatility of the trout and artichoke medley makes it easy to customize. For additional texture, you can toss in some sautéed mushrooms or roasted tomatoes. For a complete meal, serve the medley with a side of quinoa, rice, or roasted vegetables. This dish also pairs wonderfully with a simple green salad or some lightly buttered bread to soak up any remaining juices.

Trout and Artichoke Medley is not only an easy-to-make dinner but also an elegant one that feels special enough for a dinner party or a celebratory meal. It’s light, flavorful, and packed with nutrients, making it the perfect choice for those who want a meal that’s both delicious and health-conscious.

Lemon and garlic is always a win, I could eat this all day! Delicious!

I’m not a fan of artichokes, but my wife loved this dish! Crazy how tastes differ!

That’s interesting! I think artichokes are an acquired taste. Glad your wife enjoyed it! Maybe I’ll give it another try.

Never liked trout too much, but my mom used to make it with artichokes all the time. Weird combo, but I guess it works for some!

  3. User avatar jules.schaden says:

Super simple and quick! I added some cherry tomatoes for color. Will make again!

The flavors are good, but I had to improvise: my artichoke hearts were marinated and already salty, so I went lighter on the salt. If you’re using plain canned, follow as written.

Yum! But next time I’ll use more lemon juice. I love sour stuff!

5 stars from me. I served it with rice and it was gone in minutes. Super easy weeknight dinner. Next time I’ll add a little chili flake for heat.

  7. 1 star
I don’t get it. Fish and vegetables on a grill? Sounds weird to me.

  8. 5 stars
This looks like such a clean, flavorful combo—lemon + garlic with tender trout. I love that the artichokes are warmed in a pan instead of overcomplicated. Definitely trying this next week!

Totally agree—lemon + garlic on trout is such a winning combo. I also love the simple artichoke warm-up step, it keeps things quick and flavorful.

I’m not sure about mincing the garlic and mixing it in with the trout—feels like it might burn on the grill. Maybe I’d add garlic to the lemon/olive oil instead?

  9. 3 stars
Was this supposed to feed a family? I barely got any. Needs more ingredients.

    1. 4 stars
I totally agree! I thought there would be leftovers, but I barely got a portion. More ingredients would be better for sure!

  10. 3 stars
Not bad. But the seasoning step feels a little incomplete—should I season the artichokes too? Mine were kinda bland compared to the fish. I added a pinch of salt and pepper when reheating and it helped.

I don’t usually grill fish, but skin-side down + med-high seems doable. The garlic + lemon is the right vibe.

    1. 5 stars
Yes! I’m with you—garlic + lemon really makes trout pop. I’ve found 4–5 min per side works best if the grill’s actually hot; otherwise it sticks, but skin-side down helps.

  12. User avatar Johana Wolf DDS says:

    5 stars
This was surprisingly delicious! The artichokes added such a unique flavor. Will definitely make again!

Wow, never thought I could cook fish myself! My fam said it was restaurant quality! Thank you!!

That’s awesome to hear! Cooking can be so rewarding. Glad you enjoyed it!

Simple and pretty quick. I did add a pinch of red pepper flakes because I like a little kick, but overall the directions were spot on. Trout cooked fast—don’t walk away from the grill!

Artichokes? Seriously? Nobody likes them. I just skipped that part and it was basic.

I actually love artichokes! They add a unique flavor to dishes. You should give them another try.

Why would you make this recipe if you don’t like artichokes? Just sounds weird to me.

  16. User avatar yong.kerluke48 says:

    4 stars
I wasn’t sure about the artichoke with fish, but it turned out really good! Just a bit too oily for my taste.

  17. 5 stars
This dish was amazing! The trout was perfectly cooked and the flavors melted together. Will absolutely make again!

    1. User avatar sherell.shields99 says:

So glad you enjoyed it! Trout is one of my favorites, and those flavors do go so well together. Can’t wait to try it myself!

  18. User avatar Leonard Schmidt says:

My trout got burned, I don’t know what went wrong. Maybe grill was too hot? Still tasted okay.

  19. User avatar Bilbo Baggins says:

Made this last night—so simple but super flavorful. The lemon + garlic combo really pops, and the artichokes add a nice briny twist. I grilled a touch longer until it flaked perfectly.

    1. User avatar philomena.price45 says:

      5 stars
Love this combo—lemon + garlic always wins. I also grill a bit longer when the trout is thicker, so “flaked perfectly” makes total sense.

I can’t believe people eat trout.. looks gross to me. No thanks.

  21. User avatar matthew.buckridge14 says:

Artichoke hearts out of a can… okay, I guess. Still, this is faster than most fancy recipes. Mine might need extra salt though.

    1. User avatar Ma'randru-jo says:

      5 stars
Honestly, canned artichokes are the move for quick weeknights—glad it still feels “fancy.” I’d start with a little salt at step 2 and taste the artichokes after heating; they can be a bit bland depending on the brand.

  22. User avatar julia.mueller1 says:

    3 stars
Garnish with parsley? Who cares! As long as it tastes good, right? 😄

    1. User avatar Max Quordlepleen says:

      5 stars
You’re right! As long as it tastes good, who needs fancy garnishes? 😋

    2. User avatar devon.sanford18 says:

But the parsley adds color! A little presentation goes a long way, you know?

  23. User avatar Martine Block says:

Love this recipe! So easy for a weeknight dinner. The garlic and lemon combo is spot on!

  24. User avatar jone.greenfelder says:

I made this and forgot the garlic (long day). Still good, but I feel like it was missing something… so yeah, don’t skip it.

  25. User avatar cori.anderson says:

Artichokes?? Where do you even get them? Never saw them in my store.

  26. User avatar ken.heller16 says:

    2 stars
Um, is it really necessary to use fresh trout? I used frozen and it was fine.

  27. User avatar miyoko.bosco66 says:

    5 stars
This sounds super fresh and light—love the combo of trout with artichokes and that lemon kick. Gonna try it this week!

    1. 5 stars
Yes!! That lemon + trout combo is seriously perfect. Let me know how it turns out when you try it!

  28. User avatar marvin.mueller92 says:

    4 stars
Made this for my family and they all loved it! I used frozen trout and it was still good.

  29. User avatar lourdes.armstrong says:

    3 stars
Looks good but I cant grill… can I bake it? Like 450F? Also do I keep garlic on the skin-side or mix it all?

  30. User avatar devona.hoppe16 says:

    5 stars
Made this last night—so fresh and simple. The lemon + garlic combo really brightens the trout, and the artichokes add a nice little tang. Mine took closer to 5-6 minutes per side, but it flaked perfectly.

  31. User avatar rey.emmerich says:

Great recipe! Quick and tasty. Thank you for sharing!!

I’m skeptical about grilling fish that quick. 4-5 minutes per side sounded risky, but my fillets were thin and it worked. Next time I’ll oil the grill too so it doesn’t stick.

    1. User avatar ethan.stracke says:

      2 stars
4-5 minutes per side?? That seems way too much for trout, I think. Mine overcooked last time. Also I used jarred garlic and it tasted weird… might just be me 😅

    2. User avatar Death Hound says:

      5 stars
Same here—I was worried it would be dry. But thin fillets really do cook fast. The lemon + garlic combo is spot on!

  33. User avatar bennett.rau says:

    2 stars
I dunno, my fish didn’t come out right. Maybe I did something wrong? The artichokes were weird…

  34. User avatar jani.gaylord1970 says:

    4 stars
Cook time felt a little vague to me, but the “flake with a fork” tip is solid. I’ll probably keep it closer to 4 minutes depending on thickness.

  35. User avatar Dr. Sherly Altenwerth says:

    2 stars
Honestly I dont get why grill it and then just warm canned artichokes. Could’ve just done a quick sauté with some butter/stock. Flavor needs more depth IMO.

    1. User avatar willy.wehner17 says:

      3 stars
Maybe they grill the trout for texture and just keep the artichokes simple so they don’t overpower the fish. Still, a splash of stock/wine would be an upgrade.

    2. User avatar eneida.funk48 says:

      4 stars
I get what you mean—warming canned artichokes can feel a little lazy. I’ve done a quick sauté with garlic + butter and it definitely adds more depth though.

  36. User avatar Questular Rontok says:

    4 stars
Only 2 trout fillets? I’m gonna need more! 🙈

  37. 3 stars
My trout stuck a bit to the grill pan (even though I oiled it). Next time I’ll use better oil and maybe preheat longer.

  38. User avatar NAFO.SUPREMACY says:

    2 stars
Trout is too fishy for me. I prefer chicken.

  39. User avatar amira.kautzer says:

    2 stars
I followed it exactly and it came out bland. Maybe my trout was too mild? I added extra lemon and pepper after plating and it got better, but yeah… not mind-blowing.

    1. User avatar gisela.heller says:

      4 stars
Yeah, I’ve had trout turn out a little mild too—fresh trout can be super delicate. Next time try more garlic upfront and a pinch of salt right before grilling; also letting it sit 5–10 minutes after seasoning helps the flavors soak in. Lemon after plating is exactly what I’d do!

  40. User avatar Glossu "Beast" Rabban says:

This should really come with a warning, I didn’t realize I needed to gut the fish myself. Pretty misleading recipe.
