Okay but why so much oil? I baked the chicken instead and the sauce is still amazing. Great flavor, just not the same texture.
Good question—most of that oil is for deep-frying so the coating crisps up. Baking keeps it tasty, but you won’t get that same crunchy/shattery texture. Still, if you like the baked version, that’s totally valid!
I always do less oil and it’s fine? Like pan-fry with a splash and it still turns out sticky-sweet. But yeah, the crunch is weaker when you don’t fully fry it.
