Vegetarian Stuffed Sweet Potatoes

January 9, 2025

Vegetarian Stuffed Sweet Potatoes are a versatile, delicious, and nutritious dish that can be enjoyed as a main course or a side. The natural sweetness of the roasted sweet potato pairs beautifully with a variety of savory and sweet fillings, creating a well-rounded, satisfying meal. Packed with vitamins, fiber, and antioxidants, sweet potatoes are not only delicious but also offer a healthy base for countless creative toppings.

The process starts with baking the sweet potatoes until they are soft and tender, allowing their natural sweetness to develop. Once cooked, the center of the sweet potato is carefully scooped out, creating a perfect little boat to be filled with your choice of ingredients.

Common fillings for stuffed sweet potatoes include a mix of black beans, corn, and avocado for a Southwestern twist, or quinoa and roasted vegetables for a more earthy flavor. For a protein-packed option, you can add shredded chicken, ground turkey, or even chickpeas. To balance the sweetness of the potato, ingredients like sautéed onions, garlic, and bell peppers add savory depth, while toppings like cheese, Greek yogurt, or a drizzle of hot sauce offer creaminess and a touch of heat.

The beauty of stuffed sweet potatoes lies in their versatility. You can tailor the fillings to your preferences, whether you want something hearty like pulled pork, or something light like a simple mix of spinach and feta. The options are endless, and the dish can be easily adapted to accommodate different dietary needs, from vegetarian to gluten-free.

Stuffed sweet potatoes make for a comforting and satisfying meal. Whether served for lunch, dinner, or as a side dish to a larger spread, they offer a delightful balance of flavors and textures. With their nutritional value and ability to be customized, stuffed sweet potatoes are a perfect way to enjoy a hearty yet healthy meal.

  2. User avatar florentino.schulist12 says:

Not bad, but I’m not convinced the measurements matter much. I eyeballed everything and it turned out fine. Wish I had added a little garlic though.

  3. User avatar benton.pfeffer0 says:

    4 stars
I made it without cilantro, didn’t have any. Still turned out good!

  4. User avatar Hillman Hunter says:

    2 stars
Not a fan. The sweet potato was too sweet for my taste. I prefer it savory.

  5. User avatar delbert.reinger33 says:

Instructions are a little confusing. When do I add spices? I just winged it.

    1. 4 stars
I totally get it! The instructions could be clearer. I usually add spices when mixing the filling. Hope this helps!

  6. User avatar shanice.pfeffer86 says:

    2 stars
it was ok, but took forever to bake! maybe 30 mins next time?

  7. User avatar silvia.crist1977 says:

    3 stars
This was kinda bland. I think it needs more spices. But it looked nice!

  8. 5 stars
Yum! Sweet potatoes are the best! I can eat them every day. Easy recipe, thanks!

  9. 2 stars
Looks good in the picture but what do you do with the leftover potato? Confused.

    1. User avatar steve_maga says:

      2 stars
Why not just throw it away? 🤷‍♂️ Who needs leftovers anyway?

    2. User avatar trinidad.kris says:

      5 stars
You can mash the leftover potato and mix it with some cheese or spices, makes for a great spread! 😊

  10. 5 stars
These were surprisingly filling! The salsa/cilantro combo really pops, and the Greek yogurt makes it feel restaurant-level. I’ll make this again with different beans.

  11. 4 stars
Easy and healthy—exactly what I wanted. Mine took closer to 55 minutes at 400°F because my sweet potato was huge, but it still came out tender.

  12. User avatar ShanksOnePiece says:

    1 star
Why are we stuffing sweet potatoes? Just eat them as is, duh. Not for me.

  13. User avatar Yooden Vranx says:

    5 stars
These are soooo good! I added some cheese on top and it was perfect!

  14. User avatar lena.smith76 says:

Made this for dinner last night. The corn adds a nice crunch. Will make again!

    1. User avatar Draugr Thrall says:

      5 stars
I tried this recipe too! It’s super easy and tasty. The corn really gives it that crunch! Definitely a keeper.

  15. User avatar na.balistreri3 says:

These came out super cozy and flavorful—sweet potato + salsa + beans is such a winning combo. I added a squeeze of lime and it really brightened everything up.

    1. User avatar kirk.dach1972 says:

      3 stars
Hmm, I’m not sure about salsa in sweet potato… but I guess beans and corn help. Did you mix it hot or let it cool after baking? (I always mess that part up.)

    2. 5 stars
That sounds seriously good—sweet potato + salsa is such a cozy flavor combo. I like your lime idea; I bet it really cuts through the sweetness.

  16. User avatar Reggie Hyatt says:

    5 stars
Perfect for vegans! Swapped Greek yogurt for avocado and it was delicious! 🌱

  17. User avatar rutha.hane says:

    3 stars
I followed it exactly and it was… ok. Sweet potato was perfect, but the filling felt bland until I added extra salt. Maybe I’m just picky.

  18. User avatar anonymous_hacker says:

    2 stars
Meh. Sweet potatoes r overrated. I like them fried instead.

    3 stars
Can we use regular potatoes instead? Pls let me kno someone.

    5 stars
Absolutely loved this recipe! Super simple and delicious. Will make it again.

  24. User avatar monty.hammes says:

Why would you use sweet potatoes? Normal potatoes are better. Sigh.

  25. 5 stars
Very nutritious + easy to make! Great for meal prep.

  26. 4 stars
I didn’t have cilantro, but it still came out great! Thanks!

    1. User avatar merna.rolfson says:

      5 stars
So glad to hear it worked out! Cilantro can be tricky sometimes. I’ll have to try without it next time!

  27. User avatar alethea.cole1991 says:

    3 stars
Pretty good base recipe, but I wish it had more seasoning ideas. I ended up adding garlic powder and chili flakes.

  28. User avatar layne.moore77 says:

    4 stars
Looks good but I don’t like beans, can I skip them??

  29. User avatar kendrick.koch97 says:

    3 stars
I tried this but found it super bland. I added cheese and some spices, and it turned out better, but not what I expected.

  30. User avatar mikaela.hudson44 says:

    5 stars
Yummy! I used leftover chili instead of the beans, sooo good!

    1. User avatar Meriadoc Brandybuck says:

      5 stars
That’s a great idea! Chili sounds like a delicious twist on it. I’ll have to try that next time.

  31. User avatar avery.boehm31 says:

    5 stars
These are AMAZING! So simple and healthy! Love it!

  32. User avatar Eccentrica Gallumbits says:

    5 stars
This is one of those recipes that’s easy and looks fancy. I added some crushed chipotle and it became my new weekday dinner. Great combo.

    1. 5 stars
Totally agree—these turn out so “fancy” for how simple they are. Chipotle sounds like the perfect upgrade! I’ve been looking for a weekday dinner that doesn’t feel boring.

  33. User avatar Tartarus says:

    4 stars
I followed it pretty closely but baked mine maybe 55 minutes since my sweet potato was huge. Still delicious—fresh cilantro really pops.

  34. User avatar ira.dicki says:

    5 stars
Delish! Greek yogurt is a great touch. So fresh! 😋

  35. User avatar jerold.hansen61 says:

    4 stars
Good stuff! But I used black eyed peas instead of beans, was fine!

  36. User avatar solomon.schinner55 says:

    2 stars
I don’t know what all the fuss is about. The sweet potatoes were just okay. Needs more flavor.

    1. User avatar timmy.moore2013 says:

      4 stars
Maybe you just need to add more spices! Some chili powder or cumin would really amp up the flavor.

  37. User avatar suspiciousCommentator says:

    4 stars
I love how simple this recipe is! My kids helped me make it and they ate it all up! 🥳

  38. User avatar Corrupted Shade says:

    4 stars
Yummy! I didn’t have cilantro so I used parsley instead!

  39. 4 stars
Greek yogurt garnish is genius. I used sour cream one time and it wasn’t the same—this really brightens it up.

    1. 4 stars
Greek yogurt garnish is cool but I’m wonderin… does it still work if you don’t have cilantro? Like can I just use parsley or omit it? Also sweet potato took me like an hour, not 45 min lol.

    2. User avatar Gaius Helen Mohiam says:

      5 stars
Yes! I always do Greek yogurt for the topping—tangy but not heavy. Makes it taste way more “fresh” than sour cream.

  40. User avatar lashaunda.reilly says:

    3 stars
Tasted great! But I think I messed up the baking time, they were kinda mushy. Oops!

  41. User avatar melany.hammes72 says:

    4 stars
Yummy! The salsa really added a kick. I might add some cheese next time.

  42. 3 stars
What if I add more corn? Would it mess up the recipe?

  43. User avatar lorri.swift79 says:

    4 stars
Pretty easy and healthy. I used frozen corn and it was fine. Next time I’ll probably bake a little longer since my potato was huge.

  44. User avatar rosendo.gottlieb1997 says:

    2 stars
I tried it, but my oven heat must’ve been off—outside was getting too dark before the inside was soft. Also, 400°F is like 180°C right? (maybe I got confused).

  45. User avatar randy.heidenreich says:

    2 stars
I dunno, it seemed too bland for my taste. Maybe add some cheese?

    1. User avatar latoya.davis says:

      5 stars
I totally understand! Cheese can really elevate the dish. Have you tried adding feta or cheddar? It might just be the boost you’re looking for!

    2. User avatar jarod.sanford says:

      3 stars
Hmmm, I thought it was actually pretty good. Maybe you just need to spice it up a bit? More salsa or maybe some hot sauce!

  46. 3 stars
So basically you take a potato and stuff it? Why not just eat the beans on rice like normal?

    1. User avatar Falmer Shaman says:

      4 stars
Stuffed sweet potatoes are way better! It’s a fun twist, and way more nutrients than just beans and rice. 😋

    2. User avatar jeremy.romaguera2023 says:

      2 stars
I dunno, seems like more work than it’s worth. Just eat the beans on rice like normal…

  47. User avatar darron.wiza says:

    2 stars
I don’t know… sweet potato + salsa is okay, but I expected more flavor depth. Maybe I’ll add cumin or chili powder next time instead of just salt/pepper.

  48. 3 stars
I followed it and it tasted bland until I really salted it at the end. Also, scooping the potato was a bit messy—next time I’ll let it cool longer.

  49. 1 star
Lol who eats sweet potatoes? Just eat normal potatoes.

  50. User avatar clotilde.gerlach says:

    2 stars
Easy and quick recipe, but my potatoes didn’t cook right. Maybe I didn’t bake long enough??

  51. User avatar Random Dent says:

    3 stars
I dunno, I thought it needed more flavor. Maybe add cheese next time?

  52. User avatar Miss Lettie Schinner says:

    4 stars
Stuffed sweet potatoes are my jam! These were really good, didn’t have salsa tho.

    1. User avatar teena.stokes1954 says:

      5 stars
I totally get you! You can try it with avocado instead of salsa if you want. Still tastes amazing! 😊

    2. User avatar lady.stark9 says:

      2 stars
But like, how can you make it without salsa? That’s half the dish! I don’t know if I would like it. 😕

  53. 5 stars
Love it! Healthy and yum! 👌

  54. 5 stars
I threw in some cheese and it was lit 🔥!

    1. 5 stars
Cheese sounds yum! I never thought to add it. 😍

  55. User avatar patty.russel12 says:

    2 stars
Too many ingredients for a lazy cook like me! I just wanted sweet potatoes.

  56. User avatar santo.roberts7 says:

    3 stars
Sweet potatoes are supposed to be healthy but are they? What about carbs?

    1. User avatar camellia.considine says:

      5 stars
Sweet potatoes are healthy! They have lots of vitamins, but yeah, they do have carbs. The good kind though! 🌟

  57. User avatar domonique.beier says:

    3 stars
Could’ve used instructions for seasoning the potato itself before baking. Also 400°F sounds high, but maybe it’s right. Tasted okay, just a little bland in the potato part.

  58. User avatar shandi.kiehn96 says:

    5 stars
These were delish! I can’t believe how easy they were to make. Will definitely make again!

  59. User avatar Ferdinand Hills Sr. says:

    3 stars
I’m skeptical about scooping out the potato—mine kept tearing and I had stuffing everywhere 😅 But flavor was still good so… messy success?

  60. User avatar alonzo.ratke20 says:

    4 stars
Sweet potatoes are so good for you! My kids love them too, but they wouldn’t touch the beans. 🙁 Still, just did the corn and salsa and it worked fine.

  61. User avatar phoebe.tillman67 says:

    5 stars
These stuffed sweet potatoes are AMAZING! So simple yet delicious. Definitely adding this to my regular meals!

    1. User avatar Snow Bear says:

      5 stars
I agree! These are super yummy! I never thought sweet potatoes could taste so good!

  62. User avatar scottie.bosco says:

    1 star
I don’t get what all the fuss is about with sweet potatoes, they’re just so bland.

    1. User avatar ellsworth.oconner19 says:

      4 stars
I used to think that too, but sweet potatoes are so versatile! You should try them with different spices or toppings. They’re not bland if you cook them right!

  63. 5 stars
Yum! I love sweet potatoes! My kids even ate them without complaining!

  64. User avatar alishia.friesen2017 says:

    5 stars
    Yummy!!

  65. User avatar herb.hayes2000 says:

    2 stars
Are sweet potatoes even healthy? I heard they’re just sugar. I think I’m gonna stick to normal potatoes instead.

  66. User avatar Giuseppe Ryan says:

    3 stars
I tried this recipe and it was kind of bland. Needs more flavor for sure. Maybe add some taco seasoning?

    1. User avatar Supreme Kai says:

      4 stars
I think taco seasoning would be a great idea! Maybe even some cumin or chili powder for extra flavor. Love sweet potatoes!

  67. User avatar Tricia McMillan says:

    2 stars
Greek yogurt on sweet potatoes feels weird to me, not gonna lie. I used sour cream instead and it was way more my vibe.

  68. 5 stars
This recipe is fantastic! The sweet potatoes turned out perfect. Will definitely make again!

    1. 5 stars
I’m so glad you loved it! Sweet potatoes are so versatile. Have you tried adding avocado in there too? 😍

  69. User avatar Fredda Reichel says:

    4 stars
Ngl I burnt the edges a lil cuz my oven runs hot. Still ate it tho 😂 Will try again and cover with foil next time!

  70. 1 star
Is it just me, or are sweet potatoes overrated? Tried this but it wasn’t my thing.

  71. User avatar kasi.streich70 says:

    5 stars
Absolutely love this recipe! The sweet potatoes are so filling and the flavor is amazing! Definitely a keeper!

    1. User avatar timothy.boyle says:

      5 stars
I totally agree! This recipe is bomb! Sweet potatoes are the best, and this combo sounds delish!

    2. User avatar latasha.schaden says:

      3 stars
It sounds good, but isn’t it too complicated? I just want something quick. How long does it take?

  72. 2 stars
Not sure about this one. How come you ain’t cook the beans? They supposed to be hot, right?

  73. User avatar Storm Atronach says:

    5 stars
OMG, I can taste how good they are just reading this

  74. User avatar sidney.rice7 says:

    5 stars
Made this for dinner tonight—easy and healthy. Mine took closer to 50–55 minutes depending on the size of the potato, but they turned out great.

    1. 5 stars
Totally agree—these are such a good weeknight option. I also notice the timing varies a lot with potato size; 50ish minutes makes sense. Mine were amazing with the Greek yogurt on top!

    2. 3 stars
Hmm, 45 minutes never worked for me at 400°F. I think my sweet potato was just too big but I ended up boiling it first (kinda cheating, I know). Still tasty though—wish it had said approx size/weight.

  75. 5 stars
This recipe is amazing! My family loved it. Will definitely make again!

  76. User avatar Eccentrica Gallumbits says:

    3 stars
I dunno… wasn’t as good as I thought it would be, maybe too much salsa?

    1. User avatar stacey.schoen1966 says:

      4 stars
I actually thought the salsa was the best part! Maybe try a different brand next time?

  77. User avatar johnathon.legros81 says:

    2 stars
I don’t think sweet potatoes go with black beans. Might try it, but sounds weird to me.

  78. User avatar tamatha.kilback1976 says:

    4 stars
I’m obsessed. I used homemade salsa and added a pinch of cumin like my aunt does, and it tasted even better than I expected.

  79. User avatar Samwise Gamgee says:

    3 stars
Just okay, I guess. The beans didn’t mix well. I like my sweet potatoes with marshmallows instead! 😜

  80. 4 stars
Easy and healthy! I added some cheese and it was sooo good! 😍

    1. 2 stars
I dunno, cheese seem kinda heavy for healthy. Just stick to the original recipe, that’s the point of healthy food, right?

    2. User avatar Supreme Kai says:

      5 stars
Cheese sounds like a great addition! I love how versatile stuffed sweet potatoes can be. Definitely trying this next time! 😊

  81. 3 stars
Not bad, but I found it a little bland even with salt/pepper. The salsa brand matters a lot—mine was mild and sweet.

    1. User avatar elwood.marvin37 says:

      5 stars
Totally agree about the salsa—mine went from meh to actually tasty once I used a hotter/less sweet one. Next time I’ll also add a little cumin or lime.

    2. User avatar nicolas.gislason says:

      3 stars
I kinda had the same thing—mine was bland too, even with salt. Also I used “mild and sweet” salsa like you, and it made it weird. Maybe try spicy salsa or add cheese? 😅

  82. 4 stars
Pretty tasty and definitely a healthier comfort food. I used canned corn though and it was fine. Next time I’ll add a bit of lime juice for brightness.

  83. User avatar dustin.adams says:

    2 stars
Stuffing is great but the sweet potato itself was tough to cook. Took longer, 1 hour maybe??

  84. User avatar leonie.wuckert65 says:

    1 star
Tried it, didn’t like it. Sweet potatoes r better with sugar, not beans! 😖

  85. User avatar Death Hound says:

    2 stars
Too much work for a potato! I just microwave mine.

  86. User avatar petra.ortiz6 says:

    4 stars
Simple and tasty! I added some cheese on top and it melted beautifully!

  87. User avatar tissues_with_issues says:

    5 stars
Wow! I can’t believe how good these are. My kids loved them too. Thanks for sharing!

  88. User avatar Lumberjack says:

    3 stars
Not bad, but my black beans were still a little icy from the freezer, so the filling felt cool. Next time I’ll heat the mix first.

  89. User avatar mathWizard says:

    5 stars
This is a nice weeknight meal. I was surprised how filling it was without meat. The cilantro makes it pop—good call.

    1. User avatar albert.lang12 says:

      4 stars
I tried something similar but mine came out kinda bland until I added more salsa. Still good tho, and the yogurt helps. Cilantro is nice but not everyone likes it.

    2. User avatar lanie.wilkinson says:

      5 stars
Totally agree—these hit that “I didn’t think it would be filling” sweet spot. The cilantro is doing the heavy lifting.

  90. User avatar kate.koelpin says:

    5 stars
These turned out soooo good—sweet, smoky from the salsa, and the yogurt makes it nice and creamy. I didn’t even miss cheese. Will make again for sure.

  91. User avatar Humma Kavula says:

    4 stars
I was skeptical about the Greek yogurt garnish, but it actually worked well! Who would’ve thought?

  92. User avatar Dremora Lord says:

    4 stars
I’m not sure the bake time is enough for all sweet potatoes. Mine were still a bit firm at 45 min, so I had to extend by like 10–15 min. Still tasty though.

  93. User avatar jenae.medhurst says:

    2 stars
Why bake 45 minutes when you can microwave? I did microwave instead and it was faster and still good. Not sure why instructions say bake only.

    1. User avatar normand.stark says:

      3 stars
Idk, microwave makes it mushy for me. Also I think it says “bake only” because you gotta cook the inside through, and microwaving doesn’t “roast” the potato? But 45 min is kinda crazy… I’d try 10 min then check.

    2. User avatar lamonica.fisher says:

      5 stars
Microwave people love it 😄 45 minutes is a long time—if it’s tender in the microwave, I don’t see the problem. Oven just gives that slightly more roasted flavor.

  94. User avatar reyes.johnston66 says:

    5 stars
These were super comforting and not too heavy. The salsa + cilantro combo is legit, and the Greek yogurt makes it feel restaurant-level.

  95. User avatar Champions says:

    3 stars
Sounds good but I don’t like salsa chunks… and I only have canned corn. 😕 Would it still work?

  96. 3 stars
The filling tasted great, but I wish it had more texture. Maybe I should’ve mashed a portion of the sweet potato flesh into the mix?

  97. User avatar isaura.daugherty31 says:

    4 stars
I followed it almost exactly. Mine looked like a sad science project at first (fork holes everywhere lol) but it ended up good. Greek yogurt on top is a must.

    1. User avatar gale.price25 says:

      4 stars
I tried this once but my sweet potatoes took like 1 hour… maybe my oven runs cold. Also I used refried beans by mistake and it was still okay. Didn’t think to add Greek yogurt, but I guess it’s probably to calm it down a bit.

    2. 5 stars
Haha “sad science project” made me laugh 😂 Fork holes everywhere is exactly how mine usually looks at first too. Love that it still turned out good—and yeah, Greek yogurt on top really does make it! Creamy + cuts the salsa heat.
