Souvlaki is one of the most beloved dishes in Greek cuisine, known for its simple ingredients, bold flavors, and irresistible smoky aroma. Traditionally made with skewered and grilled meat, souvlaki is a staple of Mediterranean street food and a favorite for casual meals, gatherings, and summer dining.
The beauty of souvlaki lies in its simplicity. Tender pieces of meat, most commonly pork or chicken, are marinated in olive oil, lemon juice, garlic, and herbs before being grilled to perfection. This marinade gives the meat a bright, fresh flavor while helping it stay juicy and tender during cooking. Oregano is especially important, adding the unmistakable Mediterranean character that defines the dish.
Once grilled, the meat develops lightly charred edges and a smoky aroma that makes souvlaki instantly recognizable. The contrast between the crisp exterior and juicy interior creates a satisfying texture that works perfectly in wraps, platters, or on its own.
Souvlaki is often served in warm pita bread with tomatoes, onions, and tzatziki sauce, creating a balanced combination of freshness and richness. The creamy yogurt-based tzatziki, made with cucumber, garlic, and herbs, cools and complements the smoky grilled meat beautifully. Some versions also include fries inside the pita, adding another layer of texture and comfort.
What makes souvlaki especially popular is its versatility. It can be enjoyed as quick street food, a casual family dinner, or part of a larger Mediterranean feast. It pairs naturally with salads, rice, roasted vegetables, or lemon potatoes, making it suitable for many different occasions.
Beyond the flavors, souvlaki represents the relaxed and social nature of Greek dining culture. It’s a dish often associated with outdoor meals, seaside tavernas, and gatherings with friends and family. The aroma of grilled meat, lemon, and herbs instantly creates a warm and inviting atmosphere.
Souvlaki remains timeless because it focuses on quality ingredients and straightforward preparation. With its bright flavors, smoky grilled texture, and fresh accompaniments, it captures the essence of Mediterranean comfort food in a simple yet deeply satisfying way.

This recipe is amazing! The flavors are so good. I used chicken instead of pork and it turned out just fine!
Really? Chicken instead of pork? I thought it had to be pork for it to taste right. But if it was good, maybe I’m missing out on something.
I’m glad you liked it! Chicken is a great substitute; I often do that too. It’s nice to see how flexible recipes can be!
Yum! So tasty! I’ve made it 3 times already. My kids love it too!
That’s awesome! Souvlaki is so good, especially with some tzatziki on the side!
I dunno… My kids didn’t like it. Maybe I did it wrong? Looks too complicated.
Tastes just like the one from that Greek place! So happy I found this recipe!
Yum! Souvlaki is my fave! Can’t wait to try this myself.
I don’t know, looks too simple. Where’s the fun in that? Might try it if I can find the pork!
I had trouble keeping the meat from drying out. Maybe I cooked it too long??
Souvlaki? Sounds like a fancy word for kebab lol. But I’ll give it a go!
Haha, yeah it does sound fancy! But trust me, it’s delicious! Can’t wait to hear how yours turns out!
I don’t like garlic that much. Could I leave it out or will it mess everything up? 🤔
But garlic is like the best part of the marinade! It will taste kinda bland without it. Maybe just use less? 🤷♂️
You can totally leave out the garlic! It might change the flavor a bit, but the marinade will still be good. Just add a little extra lemon or oregano if you want more flavor. 😊
Not bad, but I think it needs a bit more garlic. Maybe I’ll put in 4 cloves next time. Just a suggestion!
Really flavorful, but I marinated mine closer to 2 hours and it was even better. 30 minutes felt a little short for my taste.
Made this last night—marinade smelled amazing. The pork stayed super juicy and the char was perfect. I served with tzatziki and extra lemon wedges. 10/10.
Souvlaki? Isn’t that just Greek kebab? This feels like a regular BBQ to me. Not impressed.
I followed it pretty closely but mine was a bit dry. Maybe my pork was overcooked or the cubes were bigger than 1 inch. Still tasted good though!
Made this last weekend and it was fantastic—juicy pork and that lemon-garlic hit. Marinated the full 2 hours and it really helped.
Awesome! The lemon-garlic really makes it pop. I usually go a bit longer than 30 min too—glad 2 hours worked for you!
I think 250g is too little for a full meal. Also, lemon juice can get overpowering if your garlic is strong. Adjusted and it was better.
Okay, but where do I get the special souvlaki sauce? This recipe is missing that, I think.
Special sauce? What’s that? I never used sauce for souvlaki, it’s perfect with just lemon.
You can make a simple tzatziki sauce to go with it! Just mix yogurt, cucumber, and a bit of garlic.
I followed it exactly but somehow mine came out a bit dry. Maybe I overcooked on the grill—10-15 minutes felt long for my skewers.
This recipe is fantastic! I followed it exactly and the souvlaki turned out perfectly juicy and flavorful. My family loved it!
Pretty good, but 10-15 minutes on my grill felt a bit long for 1-inch cubes—mine started to dry out near the ends. Next time I’ll start checking at 8-10 mins. Flavor still great though.
The marinade was delicious, but my kids didn’t like the black pepper. Next time, I’ll leave it out for them. Overall, pretty good!
Yummmmm!!! Whole family gobbled it up! Will definitely make this again. 😂
I messed up the cooking time and my pork got a bit dry. Still edible but not as great as I expected. I’ll give it another shot.
Tried this last week—super juicy and the lemon + oregano combo is legit. I marinated closer to 2 hours and grilled till I saw those little char marks. Served with tzatziki and it was gone fast!
Not sure about threading the pork—my pieces spun on the skewer and dried out on the edges. Maybe I used too high heat? Tasty anyway.
I’m skeptical about only 30 minutes of marinating. Mine tasted a bit flat until I gave it closer to an hour—still good though.
This was ok but not wow. Also my oregano tasted kinda old, so maybe that’s on me. Would try with fresh herbs next time.
Made this last weekend and it was crazy flavorful—especially the lemon + oregano combo. I marinated closer to 2 hours and it grilled up super tender.
I did this too but I think my grill was too hot—mine came out kinda dry. Also I only had like half a lemon so maybe that’s why… still tasty tho. Any tips for keeping it tender?
Glad you liked it! That lemon + oregano combo really does something—2 hours must’ve helped. I usually go for 60-90 mins but I might try your timing next time.
Not sure about 30 minutes being enough—30 mins sounds short for garlic flavor. But I tried anyway and it was okay. Still, I think 2 hours would be better.
The prep is easy, but 1 inch cubes? Mine cooked uneven—some were over and some not enough. Next time I’ll cut them smaller and more uniform.
Hmm, mine always cooks fine with 1 inch… maybe your grill was too hot or not turned enough? Also I marinate longer like overnight and it helps. Not sure about cutting smaller—maybe just check doneness with a thermometer.
Totally agree—1-inch cubes can be tricky if they’re not all the same thickness. I usually go a bit smaller and try to keep them uniform, otherwise you get exactly what you described: overdone edges and undercooked centers.
Not bad, but I think 1 tablespoon lemon juice is too much—felt kinda tangy. Also I forgot to turn them and they charred on one side 😅
I followed it mostly, but I forgot to mince the garlic really fine. Still good though—would just recommend mixing the marinade a bit longer.
