Southwest Black Bean Salad

April 26, 2024

Southwest Black Bean Salad is the perfect dish when you’re craving something light, flavorful, and packed with fresh ingredients. Bursting with vibrant colors and bold, zesty flavors, this salad is a refreshing addition to any meal. Whether served as a side dish or as a light lunch, it’s a crowd-pleaser that can be enjoyed year-round.

At the heart of this salad is black beans, which bring both a satisfying texture and a hearty base. Paired with crisp corn kernels, juicy tomatoes, and crunchy bell peppers, this salad is full of both flavor and texture. The vegetables and beans are tossed in a tangy dressing made with lime juice, olive oil, and a hint of cumin, creating a refreshing, slightly spicy kick.

The beauty of Southwest Black Bean Salad is its versatility. You can add a variety of toppings to fit your taste. Chopped cilantro brings a burst of freshness, while diced avocado adds a creamy, smooth finish. For a little extra heat, sprinkle in some jalapeños or a dash of hot sauce. The salad can also be bulked up with ingredients like grilled chicken, shrimp, or quinoa, making it a well-rounded meal.

What makes this salad even more appealing is how quickly it comes together. With just a few ingredients and minimal prep time, it’s a fast and easy dish that doesn’t sacrifice flavor. It’s also a great dish to prepare in advance, as the flavors only get better as they marinate. Whether you’re meal prepping for the week or making a dish for a last-minute gathering, this salad is always a great choice.

Southwest Black Bean Salad is both nutritious and satisfying. It’s packed with fiber, protein, and fresh vegetables, making it a healthy and filling option for any time of the day. Serve it with your favorite grilled meats or enjoy it on its own for a light, flavorful meal.

I don’t know about this. It looks weird and I’m not sure about mixing beans and corn. Plus, isn’t cumin kinda strong?

  2. User avatar Eva Johnson says:

I love the recipes thank you

Tastes alright, but the lime juice is too sour for me. Next time I might skip it.

  4. User avatar sean.gusikowski81 says:

Tbh I was worried it’d be bland, but the chili powder really helps. Next time I’ll use more cilantro because I love it.

  5. User avatar ina.fay43 says:

Kinda bland, but I’m not a big fan of salads anyways.

    1. 4 stars
Yeah, I get that. Salads can be hit or miss, especially if you’re not into greens. Maybe add some grilled chicken next time?

  6. User avatar elinore.collins says:

Tastes fine, but wasn’t anything special. Don’t understand the hype.

  7. User avatar oPandariaNo says:

Got confused with the red onion and put in white. Still tasted good tho.

DELICIOUS! 😍 Quick and healthy, plus I felt like a chef! Will make it again for sure!

I tried it and it was kinda meh for me. Maybe my corn was bland? The dressing tasted good on its own though.

    1. User avatar ShanksOnePiece says:

      4 stars
Totally get it—“meh” usually means something’s under-seasoned. If your corn wasn’t sweet/flavorful, the whole salad can feel flat even if the dressing is good. I’d try tasting the beans+cold corn mix before adding dressing next time, and maybe add a pinch more salt or chili powder.

I added avocado and it took this salad to a whole new level! Highly recommend! 🌟

    1. User avatar Reg Nullify says:

      4 stars
Avocado? That’s interesting! I’d never thought to add it to a bean salad! 🍴

Black beans? Who even eats those? Not my thing. 😕

  13. User avatar Sand-Dial says:

    5 stars
This is way better than I expected. The flavors actually come together and the salad doesn’t feel bland. Will make again.

    1. User avatar Leo Tarred says:

      5 stars
Right?! I was skeptical too, but the lime + cumin really ties everything together. Glad you got a non-bland batch—making it again sounds perfect.

  14. User avatar nelda.mccullough26 says:

    5 stars
Delicious! This salad is so refreshing. Perfect for summer BBQs!

  15. 3 stars
I thought it would be better. The cumin was too strong for my taste.

  16. User avatar kennith.ohara says:

    3 stars
Not gonna lie, I expected more “Southwest” heat. I followed the recipe exactly and it was mild. Still tasty though—just needs hotter chili or jalapeño.

  17. User avatar terminatorXYZ says:

    4 stars
Quick to throw together, and it tastes like something you’d get at a deli. I used canned corn and it still worked.

    1. 3 stars
I tried something like this before but I used canned corn and my salad got kinda watery… maybe I didn’t drain it good. What brand of beans did you use? Also, does it taste better after chilling a bit?

    2. User avatar manuel.miller says:

      5 stars
This sounds perfect for lunch—quick and that deli vibe is exactly what I want. I’m definitely adding extra lime next time though 😄

  18. User avatar ShanksOnePiece says:

This is literally just a salad. Where’s the meat? Can’t call it a meal without protein 🙄.

  19. User avatar Doug Love Fitzhugh says:

    5 stars
So easy to make! I brought it to a potluck and everyone loved it. Will make again!

  20. User avatar Miss Gene Watsica says:

    4 stars
I liked it, but I’m not sure about cilantro amount. It was kinda overpowering for me—will cut it down next time.

  21. 3 stars
Looks good, but I’m not sure how the cumin will taste with everything. Will give it a try anyway.

    1. User avatar wendell.lebsack says:

      4 stars
I was also skeptical about cumin at first, but it really enhances the flavors! Can’t wait to hear what you think after you try it!

  22. 2 stars
I don’t understand why people rave about this salad. It’s just beans and veggies, it didn’t impress me at all. Maybe I did something wrong?

  23. User avatar eliza.mcglynn89 says:

    5 stars
I’m not very good at chopping, so I used pre-chopped onion/pepper. Still turned out fine and saved me time.

  24. User avatar jarred.mclaughlin49 says:

    3 stars
Super quick recipe but I think it needs more spices. I added jalapeños.

  25. 1 star
Black beans? Ain’t that just tinned beans? 🤔 Not very fancy if you ask me.

  26. 2 stars
I tried it and the cumin tasted kinda bitter to me? Maybe my cumin was old. Otherwise it was alright.

    1. User avatar vanda.turner says:

      5 stars
Oh yeah, cumin can get bitter if it’s old or was stored warm. Next time you could try fresh cumin or toast it in a dry pan for like 30 seconds before mixing the dressing—helps a lot.

  27. User avatar Draugr Scourge says:

    5 stars
Absolutely loved this salad! So fresh and easy to make. Perfect for a summer BBQ!

Canned corn is a lifesaver! I never have fresh on hand. Glad you enjoyed it!

    2. User avatar dung.blanda2017 says:

      2 stars
Sounds too easy, I dunno if I trust it. Can it really taste that good?

  30. 3 stars
Not bad, but it needs more salt. Like, I couldn’t taste the flavor much.

  31. 2 stars
Isn’t black bean salad just a glorified bean dip? I don’t get it 🤔

    1. User avatar eloy.kulas93 says:

      4 stars
I think it’s way more than just a dip! The crunch of the veggies makes it a perfect side dish. 😄

  32. 5 stars
This salad is amazing! It’s so fresh and flavorful. Will definitely make it again!

  33. User avatar king.rowe23 says:

    4 stars

  35. User avatar kelley.okuneva60 says:

I used canned corn (I know, lazy) and it was okay, but texture wasn’t as bright. Fresh/frozen corn probably makes a difference.

    1. User avatar pamula.kerluke says:

      3 stars
idk i used canned corn too and it tasted fine to me 😅 i didn’t notice texture differences. maybe i just drain it really good? either way this recipe is quick.

    2. User avatar antonia.cronin33 says:

      4 stars
Totally agree—canned corn can be kinda dull. I used frozen once and it was way brighter and sweeter. Still good though, especially with the lime + cumin.

  36. User avatar mike.spencer2014 says:

    3 stars
I don’t know about the measurements. 1 tsp cumin felt low to me, so I bumped it up and it tasted more like actual southwest flavors.

  37. User avatar keenan.oreilly33 says:

    4 stars
Pretty good, but I think it needs more salt than “to taste.” I had to add quite a bit to make it pop.

  38. 1 star
Black beans?? Eww. I’m more of a meat person. Not for me.

  39. User avatar rickiestmorty says:

This recipe? Pure gold. Easy peasy and sooo tasty!

    1. User avatar sandy.hammes says:

      2 stars
I dunno, seems a bit basic. Where’s the flavor? I mean, black beans and corn? That’s it?

    2. 5 stars
Totally agree! This salad is super refreshing and perfect for summer BBQs.
