Sausage and Bell Pepper Egg Scramble

May 8, 2024

If you’re looking for a breakfast that’s both quick and satisfying, the Sausage and Bell Pepper Egg Scramble delivers every time. This dish is a go-to for busy mornings when you want something hearty and protein-packed without spending too much time in the kitchen. It’s also a great way to use up leftover veggies and sausage, making it both practical and delicious.

At its core, this scramble is all about flavor and balance. The sausage brings a rich, savory bite that perfectly complements the sweetness of sautéed bell peppers. Whether you choose spicy Italian sausage, smoky chorizo, or a milder chicken variety, the combination with fluffy, soft-scrambled eggs creates a comforting, well-rounded meal.

The bell peppers not only add a pop of color but also a welcome crunch and natural sweetness. Red, yellow, or green, each variety offers something slightly different, and when lightly caramelized in the pan, they become even more flavorful. Toss in some chopped onions or fresh herbs like parsley or chives if you want to take it up a notch.

This egg scramble is easy to customize. Want a lower-fat version? Use turkey sausage. Looking to up your greens? Toss in some spinach or kale just before the eggs go in. Craving cheese? A sprinkle of cheddar or feta at the end melts beautifully into the hot scramble.

Best of all, it’s a one-pan meal, quick to cook, quick to clean. Serve it as is, or pile it onto toast, wrap it in a tortilla for a breakfast burrito, or pair it with avocado for an extra nutrient boost.

Whether it’s a laid-back weekend brunch or a power breakfast on the go, this Sausage and Bell Pepper Egg Scramble is the kind of dish that fuels your day and satisfies your taste buds. Simple, flavorful, and endlessly adaptable, that’s breakfast done right.

This is basically a breakfast burrito without the tortilla. Can it be wrapped? 🤔

I dunno, why not just eat it like that? Who needs a tortilla anyway? 🤷‍♂️

I accidentally overcooked the eggs (I was cooking something else too), so they got a little dry. Still tasty though—sausage + peppers is a great combo.

Sausage and peppers? Yuck! I used tofu instead. Still didn’t like it. 1 star for effort.

Not everyone likes sausage, that’s understandable! Tofu can be a good sub but it’s not the same. Maybe try a different recipe next time?

Tofu? Really? That’s weird! This is suppose to be about sausage! Try putting in chicken or sumthing.

I’m not a big fan of eggs, but since they were scrambled, it was okay. Could use more cheese, tho!

Sounds good, but isn’t it same as just eggs and sausage? I don’t see the point of peppers.

  19. User avatar craig.nader says:

I messed this up bad. Eggs were burnt, and the sausage fell apart. 😭

    1. 3 stars
You should have used a non-stick pan! That can help with burning eggs. Better luck next time!

Aw, don’t worry! It happens to the best of us. Maybe try lowering the heat next time for the eggs?

I don’t understand why you would put cheese on eggs. Isn’t that weird?
