A potato and bacon galette is rustic comfort food at its finest, a dish that’s as beautiful as it is satisfying. With layers of thinly sliced potatoes, crispy bacon, and melted cheese baked on a flaky, golden crust, it’s the perfect balance of simple ingredients and rich flavors. Whether served as a main course with a salad or sliced into wedges for brunch or appetizers, this galette brings cozy warmth to any table.
At the heart of a good galette is its crust: buttery, crisp, and just slightly flaky, strong enough to hold the filling yet tender enough to melt in your mouth. It’s rolled out into a rustic circle, no need for perfect edges, the charm of a galette lies in its imperfections. The edges are folded casually over the filling, creating that free-form pie look that feels both elegant and homey.
The filling is where the magic happens. Thinly sliced potatoes are layered with bits of smoky bacon and a blend of cheeses – usually Gruyère, cheddar, or Parmesan, which melt into the potatoes as they bake. Fresh herbs like thyme or rosemary add an aromatic touch, while a hint of garlic or caramelized onions deepens the flavor. As it bakes, the potatoes turn tender, the cheese bubbles, and the crust turns beautifully golden and crisp. Vegetarian version of potato galette without bacon is a healthier option.
Once out of the oven, the galette is a feast for the senses. The scent of buttery pastry and smoky bacon fills the air, and the melted cheese forms that irresistible, slightly crispy edge that everyone loves. A sprinkle of fresh herbs or a drizzle of olive oil just before serving gives it a bright, fresh finish.
The potato and bacon galette is proof that comfort food doesn’t have to be complicated. It’s rustic yet refined, hearty yet elegant, the kind of dish that feels right at home on a weekend brunch table or as a cozy dinner on a cold evening. Each slice delivers that perfect combination of creamy potatoes, salty bacon, and flaky crust, making it a dish you’ll want to make again and again.

Potato galette? Isn’t that a French thing? Seems fancy for something with bacon. Wish I knew how to fold the pastry better tho!
Yes, it is kinda French! But delicious anyway! Don’t worry too much, practice makes perfect on that folding! 😄
I don’t understand why people like puff pastry so much. Feels like it’s just fluff. My potatoes got soggy. Not a fan.
Nah, puff pastry is the best! It’s not just air, it’s all about that buttery taste! Your potatoes probably needed to be cooked longer.
I see what you mean, but I personally love puff pastry for its flaky texture! Maybe try baking it a bit longer next time? That might help with sogginess.
This galette turned out amazing! The combination of bacon and cheddar is always a win. Totally making this again!
Easy peasy to make! I added some garlic and onions for flavor, and it was a hit at the potluck. Thanks for the recipe!
Eh, I dunno. It looks good but I bet my mom’s version is better. Thx for sharing, but I’ll stick with what I know.
Sounds tasty! But my grandma always made it better. Still, I might try this one!
I dunno… looks easy but my mom always says, don’t mess with the classics. Guess I’ll pass.
This galette is a game changer! I made it for my family, and they all loved it. The bacon and cheese combo is to die for!
What if I don’t have bacon? Can I use ham instead? I think it should still taste good.
Wow, so easy! I didn’t have cheddar so I used mozzarella. Still turned out great! Thanks!
Absolutely loved it! My family gobbled it up in minutes! Will make again for sure.
So glad to hear you enjoyed it! This recipe is a hit at my house too. Planning to make it for a potluck soon!
Hmm, it looks a bit complicated for just potatoes and bacon. Thought it was like a normal pie? Not sure if I will try it.
This was the best recipe ever! My family loved it. Will make again!
Potato heaven!!
Yummy! But not a fan of bacon. Can I use ham instead??
This is absolutely delish! I made it for dinner last night and my family loved it! Definitely a winner!
Made this for dinner last night—so crispy on the edges and the bacon + cheddar combo is perfect. I subbed red potatoes and it still worked great. 45 minutes was just right for me.
Yes!! The bacon + cheddar combo is exactly what makes these galettes shine. Glad the red potatoes worked too—crispy edges are the best part.
Huh I tried something like this once but my potatoes stayed hard at 45 min 😅 maybe my slices were too thick. Also I used tater tots not real potatoes, don’t ask… worked-ish. Yours sounds way better.
I made this last night and my family demolished it! So good, thank you for sharing.
Potatoes are the best! I could eat them every day. This galette was a hit at my dinner party.
Pretty solid recipe. I brushed the pastry with a little extra olive oil and it browned way better. Next time I’ll slice the potatoes even thinner so they cook through faster.
I dunno, it wasn’t that great. Maybe I’m just not a potato person. But like, I found it kinda bland. 🤷♂️
I can see where you’re coming from! Potatoes can be bland without a good seasoning. Maybe try adding some garlic or herbs next time! 😊
Followed the recipe pretty much exactly. My only issue was the potatoes took longer than 45 minutes—maybe my slices were thicker. Still delicious though!
I’m confused… Is it a pie or a pizza? Anyway, my kids loved it.
It’s a galette, not really a pie or pizza, but it is delicious! Glad your kids liked it!
Way too greasy for my taste. Next time I’ll skip the oil.
5 stars for this recipe but I’ll make it with less bacon next time!
Not bad at all, but I used sour cream instead of cheese because I’m lactose intolerant.
That’s a smart swap! Sour cream adds a nice tang. I gotta try that out.
But like, sour cream instead of cheese? Are you sure it’ll taste the same? Just wondering.
I dunno if I did somethin wrong, but mine came out soggy. Need to figure that out before I try again.
Looks like a lot of work for just potatoes and bacon. I might just stick to fries.
I get what you mean, but it’s so much tastier than fries! Give it a try, you might love it!
This looks amazing! Can’t wait to try it this weekend. Bacon and potatoes are the best combo!
Looks like a fancy dish but so easy to make! Thanks for the recipe!
Potato galette? Sounds fancy, I guess! Is that French or something?
I don’t get why you use puff pastry. I used pie dough and it worked just fine.
This looks dangerously good. The bacon + cheddar combo is a cheat code. I’ll probably add a little rosemary too—400°F seems right for getting that golden pastry.
I followed the recipe exactly, and the potatoes were finally tender, but the center was a bit soggy. Next time I’m going thinner slices or par-cooking the potatoes.
Why do you use bacon? Plants are way better for you. Just saying!
Not sure why you only bake 45 minutes—my potatoes usually take longer at 200°C. Maybe my slices were too thick? Either way, it was okay, just underdone.
Tried this recipe, but I found the potatoes too soggy. I think next time I’ll precook them a little bit first.
Why would you use bacon? It ruins everything! Just use veggies, much better.
I dunno. Some people love bacon. If u don’t like it, just make it without? This is like, a recipe you can change.
Bacon adds flavor! You can’t just call it galette without some taste. Veggies are fine, but bacon is the best!
I tried this and my potatoes cooked but the crust was more like soft bread than golden brown… maybe my oven runs cold. Still ate it all 😂
I dunno… this sounds a bit too greasy for me. Can’t we make it healthier?
Yum! I added some garlic. Super delicious.
Yum! Seriously though, “galette” sounds fancy but this is comfort food.
So easy and looks fancy. I brought it to brunch and everyone asked for the recipe. The only change I made was adding rosemary because I can’t help myself.
It was okay but felt like something was missing, maybe more spices?
So freaking good! I added some onions and herbs too. Delicious!
Sounds amazing! Onions and herbs are a great addition. I might try that next time!
I dunno, I thought the bacon was overpowering. Maybe it needs more veg?
Is puff pastry the same as pie crust? I’m confused. But it tasted good anyway!
Puff pastry is different from pie crust. Puff pastry is flaky and light, while pie crust is more dense and crumbly. But your galette sounds yummy!
Easy to follow and the ingredients are all normal stuff. I added rosemary because why not, and it made it taste restaurant-y.
Could use more seasoning imo. I added garlic powder and a pinch of smoked paprika and it tasted way more “complete.” Still easy and tasty.
Totally agree—bacon + potatoes can use a little extra love. Your garlic powder and smoked paprika sound like they’d make it taste way more rounded, and I’m stealing that for next time!
I’m skeptical of “thinly sliced potatoes” because my knife skills are… let’s say “optimistic.” Mine cooked unevenly, but the edges were great. Would try again with mandoline slices.
I did mine a little thicker with the potatoes and needed closer to 55 minutes. Still turned out amazing though—crispy edges, tender center.
Honestly, looks better than it tastes. I’m not a huge fan of puff pastry—kinda bland after all that work.
This was absolutely delicious! I added some garlic and it took it to another level. Will definitely make again!
Garlic is a game changer! I agree, adds so much flavor. I made it too last week and it was a hit with my family.
I don’t know… garlic? Seems like it would overpower the dish. I like it plain, but each to their own.
I made something similar before but mine was soggy in the middle. Any tips to avoid that with thin potato slices? Still, love how simple the steps are.
Yum!
Totally agree! This looks delicious! Can’t wait to try it out.
Wait… fold the border over like a galette and it actually holds? Mine opened a little, but I just pressed it back. Delicious anyway.
This was AMAZING! The cheese and bacon combo is heaven. Definitely making it again!
Yum!! Perfect snack to pair with wine!!
This recipe is so blah. Just bacon and potatoes? I don’t get the hype. Needs more spices or something. Sorry.
The instruction says “roll out the puff pastry sheet to a larger size” but doesn’t say how much. I stretched mine and it tore a bit… maybe thawing longer would help. Tasted great though.
Yeah I wish it had a measurement too. I usually roll mine about 2–3 inches wider all around so there’s enough border to fold. Sorry yours tore—puff pastry can be a little dramatic if it’s still cool.
I think the problem is you thawed it too little or too much. If it’s thawed too long it gets floppy; if it’s not thawed enough it cracks. I let mine sit 15-20 min and it behaves better. Glad it still tasted great though!
Bacon and potatoes—yes. Two words: soo good.
Right?! Bacon + potatoes is basically a cheat code. 😋
Tasty but the potatoes weren’t cooked enough for me. Maybe bake longer?
Yeah, I agree! Potatoes can be tricky sometimes. Maybe try covering it with foil for a bit to help them cook through.
Super tasty idea, but 400°F for 45 min might not be enough if your potato slices are on the chunky side. Make sure they’re really thin.
Easy recipe! But I think the bacon should be cooked less next time, it was too crispy for my liking.
