I skipped the thyme, didn’t have any. Wasn’t sure how it would taste, but it turned out fine!
Solid recipe, but I had to cook the pork longer than 5-7 minutes after returning to the pan (my chops were thick). Next time I’ll sear and then simmer with a lid to speed it up. Flavor is great though.
