Pork and Eggplant Rounds

May 8, 2024

Looking for a dish that’s both hearty and elegant? Pork and Eggplant Rounds offer the perfect balance of savory flavor and bite-sized comfort. With tender eggplant slices acting as the base and juicy, seasoned pork on top, this dish delivers a satisfying combination of textures and tastes that’s perfect for lunch, dinner, or even party platters.

Eggplant is one of those ingredients that soaks up flavor beautifully. When sliced into rounds and lightly roasted or pan-fried, it becomes soft and silky inside with just enough bite on the outside. It’s the ideal vehicle for bold toppings, in this case, ground pork seasoned with garlic, soy sauce, ginger, or your preferred spices to give it depth and a savory punch.

Once the pork is cooked and spooned over the eggplant rounds, the magic happens. A quick bake or pan finish brings everything together, allowing the flavors to meld and the edges to crisp slightly. The pork juices seep into the eggplant, infusing every bite with delicious umami-rich flavor.

What makes this dish especially appealing is its versatility. It can be served hot or warm as a main dish alongside rice or noodles, or plated as an elegant appetizer for guests. You can even dress it up with a drizzle of sesame oil, chopped scallions, or a sprinkle of chili flakes for added flair.

Pork and Eggplant Rounds are also great for weeknight meals, easy to prepare, minimal cleanup, and endlessly customizable. You can experiment with different herbs, sauces, or even mix in veggies like mushrooms or bell peppers to create your own spin.

Whether you’re craving something comforting or planning a menu that needs a standout dish, these flavorful rounds deliver. Simple to make, packed with flavor, and incredibly satisfying, this is the kind of recipe that quickly becomes a favorite.

I followed it but my eggplant didn’t get as tender as I wanted. Maybe I sliced too thick. Taste was good though, just texture could’ve been better.

    1. 5 stars
Yeah, thicker eggplant slices can stay a bit firm even at 400°F. Next time try slicing thinner (or even score/salt the slices for 10–15 min and blot before baking) and give it a few extra minutes—watch so it doesn’t dry out. Glad the flavor hit though!

  2. User avatar kristie.bartell says:

Not gonna lie, this sounds a bit too basic. I expected more work or more steps, but it was okay. Could use a sauce.

  3. User avatar domingo.gulgowski52 says:

    5 stars
The oregano/basil combo is spot on. I wouldn’t call it “fancy,” but it tastes like something you’d get at a casual bistro. Will make again.

  4. User avatar lanell.kiehn60 says:

    4 stars
So simple and quick! I love that I can just throw it in the oven and not worry about it!

  5. User avatar rich.landlord says:

    5 stars
Absolutely delicious! I made this for dinner last night and my whole family loved it. The flavors really popped!

  6. User avatar smartestRedditor says:

    5 stars
Made these tonight—so easy and honestly super tasty. The oregano and basil smell amazing while it bakes. Pork came out juicy and the eggplant was tender but not mushy.

  7. User avatar paulita.aufderhar says:

    4 stars
I was skeptical about pork and eggplant together, but this actually tasted great! Who knew?

  8. User avatar Cammar Pilru says:

    2 stars
Eggplant has such a weird texture! Do people really like this?

  9. 2 stars
400°F seems too high? I tried it and the edges got kinda browned before the inside cooked. Maybe my oven runs hot. Otherwise decent.

    1. User avatar rickie.ebert18 says:

      4 stars
Yeah, 400°F can definitely brown the edges before the middle is fully done—especially with thicker rounds or if your oven runs a bit hot. Next time try 375°F and/or rotate the pan halfway through. Also, if you want even cooking, make sure the pork rounds are similar thickness.

  10. User avatar oPandariaNo says:

Why is it called Pork and Eggplant Rounds when there are no eggs? 😂 Still good, just funny. Also I used smoked paprika and it was better.

  11. User avatar Ra'zhinda says:

    5 stars
Made this tonight and it was shockingly good for such a simple idea. The paprika + oregano combo is on point. I did 20 minutes and the eggplant was perfectly tender.

  12. User avatar suzette.mann says:

    3 stars
I’m skeptical about just baking it without anything else (sauce/moisture), but it turned out fine. Could’ve used a touch more salt though. Next time I’ll season more aggressively.

  13. User avatar archie.kirlin1955 says:

    4 stars
Delicious! I used chicken instead of pork and it turned out great. 😋

  14. User avatar julianne.walsh says:

    5 stars
Yum! Like, so good! My kids loved it too! It’s a win!

    1. 3 stars
I dunno, eggplant can be kinda weird. My kids don’t usually like it. Guess it depends on the taste?

    2. User avatar madeline.howe55 says:

      5 stars
I’m so glad to hear that! It’s a hit with kids, that’s awesome! 😊

  15. 4 stars
Super easy to make! I loved that it only took 20 minutes! Perfect for a weeknight dinner.

  16. 5 stars
This was the bomb! I added some chili flakes for a kick! Definitely a keeper.

  17. User avatar Charis Reilly I says:

    3 stars
Not sure how I feel about eggplant. My mom always said it was a weird veggie. But I gave it a shot.

  18. User avatar Wispmother says:

    3 stars
I followed the recipe but my pork was tough! Maybe I cooked it too long? 🤔

  19. User avatar lucius.klein31 says:

    2 stars
I don’t know… pork tenderloin cooks so fast that 15–20 minutes feels risky. I’d use a thermometer next time, honestly.

  20. 3 stars
Did I read that right? Olive oil and spices? My grandma just used butter and salt. LOL.

    1. User avatar smartestRedditor says:

      4 stars
Yeah, but olive oil is way healthier! Gotta keep up with the times, right?

  21. 5 stars
This is one of those “weeknight saver” recipes. Minimal effort, good flavor. My picky eater even went back for seconds.

    1. User avatar alexandria.cormier says:

      5 stars
Love this kind of recipe—sounds like a true weeknight saver. If the eggplant actually gets tender in 15–20 minutes, that’s a win. Gonna try it exactly as written!

    2. 3 stars
Not sure about pork tenderloin + eggplant “rounds” cooking at the same time. Pork dries out on me sometimes at 400°F… I might shave the eggplant thinner or start it first. Still sounds tasty though.

  22. 1 star
This recipe is not for me, I prefer steak.

    1. User avatar Leto II Atreides says:

      4 stars
That’s cool! Steak is awesome too. But have you tried this recipe? You might be surprised!

  23. User avatar marlin.brown75 says:

    4 stars
I think 15 minutes might be tight depending on how thick your pork rounds are. Mine needed closer to 22, but the flavor was still great.

    1. User avatar shani.robel64 says:

      5 stars
Totally agree—15 minutes feels optimistic. Pork rounds vary a lot by thickness, and 20-22 is usually where I land too. Glad it was still flavorful!

  24. User avatar Bilbo Baggins says:

    5 stars
Made it for dinner last night and everyone went back for seconds. I added a squeeze of lemon at the end and it really brightened it up.

  25. 4 stars
Good flavor, but I think 15 minutes wasn’t enough for my pork rounds—ended up baking closer to 22. Still, very solid and not messy like some pork recipes.

    1. 5 stars
Totally makes sense—pork thickness really changes the timing. I usually go by the internal temp instead of the clock, but 22 minutes doesn’t surprise me at all. Glad it wasn’t messy though!

  26. User avatar salvador.jones1963 says:

    3 stars
Why no browning step? Mine looked kinda pale. Still ate it, but I’d want more oven time or broil at the end for color.

  27. User avatar rolando.quitzon44 says:

    3 stars
Not bad, but it felt a little bland for me. Next time I’ll add some chili flakes and maybe a squeeze of lemon at the end.

    1. User avatar lewis.hyatt says:

      5 stars
I totally get that—this one is super “savory” but not always bright. Chili flakes + a squeeze of lemon at the end is a great fix. I’ve also tried adding a pinch of red pepper and a little extra garlic powder and it really pops.

  28. 5 stars
This is one of those “why didn’t I think of it” recipes. Minimal ingredients, but it tastes like you tried. Kids ate it too.

    1. User avatar gaylord.vonrueden says:

      3 stars
Maybe I did something wrong, but my pork seemed a bit dry after 20 min. Also the eggplant was kinda soft instead of “tender”?? Still, the seasoning smelled great so I’ll try again and maybe start checking earlier.

    2. User avatar gavin.kautzer says:

      5 stars
Right?! This feels so simple but actually tastes like effort. I had low expectations and then—wow—my kids devoured it too. 🥲

  29. User avatar rosendo.waelchi says:

    3 stars
Eh, didn’t turn out like I thought it would. Too much oregano maybe?

    1. User avatar Thalia Strosin says:

      3 stars
Oregano? I mean, that’s like the best flavor! Did you really follow all the steps? 🤔

    2. 4 stars
I actually loved it! Maybe try less oregano next time? It’s all about taste preferences! 😊

  30. User avatar sammie.stiedemann59 says:

    5 stars
Made this tonight—super easy and the flavors really pop. The eggplant gets tender without turning mushy. I’ll definitely do it again.

  31. User avatar arletta.collins says:

    4 stars
My kid wouldn’t touch eggplant, and I get it… but the pork smells amazing while it bakes. I ended up slicing it smaller and mixing a little seasoning extra. Worked better.

  32. 2 stars
I don’t get why eggplant is even in this. Just pork would be better. Meh.

  33. User avatar garret.conroy65 says:

    3 stars
400°F is a bit too hot for my oven (burns the edges if you’re not careful). I’d lower to 375 and bake a few minutes longer next time.

  34. User avatar malik.nikolaus39 says:

    4 stars
I was skeptical about baking pork tenderloin rounds with eggplant, but it turned out juicy. I salted a little heavier and it was perfect.

  35. 5 stars
Pork n eggplant? Omg my favorite!!! Gonna eat this every day. <3

    1. User avatar Yooden Vranx says:

      5 stars
Yum! This sounds delicious! Can’t wait to try it myself! 😍

  36. User avatar tameika.hirthe0 says:

Absolutely loved this recipe! The flavors were spot on, and it was so easy to make. Will definitely make again!

    1. User avatar Shenna Hodkiewicz DDS says:

      3 stars
I dunno, eggplant can be kinda slimy sometimes. Did you drain it? Not sure if I’d try it.

    2. User avatar lupita.kuvalis56 says:

      5 stars
I’m glad you enjoyed it! It really is a simple yet delicious recipe. 😄

  37. User avatar Eugene Glover DDS says:

    4 stars
Pork and eggplant? Sounds weird but it works! I added some hot sauce for an extra kick. Yummy!

  38. 1 star
How can you even eat eggplant?? It looks like a weird fruit. 😜

  39. 2 stars
Eggplant + pork is a weird combo to me. Like… does it taste smoky or just bland? I’m tempted to try though.

  40. User avatar jordon.larson says:

    5 stars
Easy peasy! Just like the back of my hand. Only took 20 minutes and my kids gobbled it up. 🥳

    1. User avatar lakeisha.zulauf says:

      3 stars
Really? Only 20 minutes? I don’t know about that. Last time I made pork, it took forever. Maybe my oven just sucks.

    2. User avatar filiberto.parker2 says:

      5 stars
Wow, sounds super easy! Can’t wait to try it myself. My kids can be picky, so I’m hoping they love it too! 🎉

  41. User avatar lea.beatty15 says:

    4 stars
The seasoning blend is on point. I used a little smoked paprika instead of regular and it gave a nice depth. Would definitely make again.

    1. 5 stars
Glad you liked it! Smoked paprika is such a good tweak—definitely adds that extra depth of flavor.

  42. 3 stars
Not sure about pork + eggplant rounds together… but I’ll give it to the recipe: the spices were good and everything browned nicely. Would try again with a sauce though.

    1. User avatar Trin Tragula says:

      5 stars
Totally get your doubt—pork + eggplant can sound odd, but I’ve had it work. The browning + spices help a lot. A sauce would make it even better though!

    2. 4 stars
I mean… I would’ve used a little tomato sauce or even just some garlic yogurt. Pork can be kinda dry without it. But hey, 400°F and browned is hard to mess up.

  43. User avatar sherman.lueilwitz71 says:

    4 stars
Good idea with the rounds. I did add a little extra garlic and a squeeze of lemon at the end (because why not). Still came out juicy.

  44. User avatar izetta.baumbach88 says:

    2 stars
I don’t like eggplant, couldn’t finish it. But the pork was ok.

  45. 1 star
Is the eggplant even good for you? I heard it has weird stuff? I prefer meat only meals!

  46. User avatar irmgard.nicolas90 says:

    3 stars
Why bake without flipping? My eggplant browned on one side only. Flavor was okay, but texture wasn’t even. Might be better if you flip halfway.

  47. 2 stars
I think 1 pound is too much for my pan, so mine overlapped and steamed a little. Still edible, but not as crisp as I wanted. Maybe spread them more next time.

  48. User avatar basil.lowe35 says:

    5 stars
This is so easy and delicious! Loved it!

    1. User avatar gil.kihn83 says:

      5 stars
Thanks for sharing! I love quick recipes like this one. Can’t wait to try it!

  49. User avatar melissia.berge73 says:

    3 stars
Not bad, but 15 minutes felt too short for pork tenderloin rounds in my oven. I’d add a check for internal temp or just bake a little longer.

  50. User avatar Gandalf the Grey says:

    4 stars
The spice blend is solid. Oregano + basil hits hard. I used smoked paprika instead of regular and it was 🔥.

  51. User avatar josef.aufderhar79 says:

    1 star
I dont like eggplant, don’t know why I tried this. Never again! Lol.

    1. User avatar isabel.renner28 says:

      4 stars
Eggplant is really hit or miss! I get it, not everyone likes it. But maybe you should try a different recipe next time! 🙂

  52. User avatar latrisha.altenwerth says:

    5 stars
Just made this and it was bomb! My kids ate it all.

  53. 5 stars
Not gonna lie, I thought “pork and eggplant rounds” sounded weird, but it tastes like a proper savory roast. I added a squeeze of lemon at the end and it really lifted it.

  54. User avatar ShanksOnePiece says:

    3 stars
I followed the recipe but it didn’t taste much. Maybe add more spices?

  55. User avatar lien.wehner2012 says:

    3 stars
Mine came out a bit dry. I think I over-baked—next time I’ll pull it at 15 minutes and let it rest. Otherwise flavors were good.

  56. 2 stars
Okay idea. Could use more instructions… like do we flip them or not? I just guessed and it turned out alright.

  57. User avatar rosaria.rath45 says:

    4 stars
I had to double the garlic/onion powder because I like bold flavor. Also, 400°F felt right—my eggplant got tender without collapsing.

  58. User avatar ArabianNights says:

    5 stars
Yum! I made it twice this week! My family was asking for more, what a win!

  59. User avatar w00d_ch0p says:

    5 stars
Tried it last night and it smelled amazing while baking. I added a squeeze of lemon at the end and it tasted restaurant-y. Would make again.

    1. User avatar Super Saiyan Gohan says:

      5 stars
Love hearing that! 🙌 A squeeze of lemon at the end is such a great move—really brightens up the pork/eggplant flavors. Thanks for the tip!

  60. User avatar Errol Borer IV says:

    5 stars
Only 15-20 min seems too short for pork + eggplant at 400°F… but I checked with a thermometer and it really did cook through. Weirdly reliable.

    1. User avatar Super Saiyan 2 Vegeta says:

      3 stars
Maybe my oven runs hot? I tried it once and the eggplant was perfect but the pork was still pink-ish, so I ended up adding like 10 more minutes. If it’s reliable for you though, I’ll trust the thermometer next time.

    2. User avatar willa.hane61 says:

      4 stars
I’m with you—15-20 min *sounds* insane for pork + eggplant at 400°F. But tenderloin slices are pretty thin, so if you’re using a thermometer, that makes sense. Glad it worked out!

  61. 2 stars
I don’t know, it just tastes kinda bland to me. Maybe I did somethin wrong, but I’m used to more spice. :/

  62. User avatar joey.barrows27 says:

    5 stars
This recipe was really easy! My family loved it. Will definitely make again!

  63. 5 stars
The spice mix is dead on. I added a squeeze of lemon at the end and it made it pop.

  64. User avatar darius.hartmann37 says:

    4 stars
Okay, but how do you make pork not taste like pork? 😂

  65. User avatar korey.cormier98 says:

    2 stars
I don’t know, 400F seems kinda high for pork chunks. Still gonna try but I’m skeptical lol.

  66. User avatar Treebeard says:

    5 stars
Made this tonight—so easy and honestly super flavorful. The oregano/basil combo smells amazing while it bakes. Would do it again!

  67. User avatar vada.flatley2 says:

    2 stars
Not a fan. The eggplant was mushy and the pork wasn’t seasoned enough for my taste.

  68. User avatar ana.volkman says:

    4 stars
The spices are on point. Oregano + basil + garlic powder = perfect combo. Could be even better with a little parmesan on top.

    1. 5 stars
Totally agree—the oregano/basil/garlic powder combo makes it taste restaurant-y. Parmesan would be a great finishing touch too!

  69. User avatar tissues_with_issues says:

    3 stars
This is simple and quick! But I think it could use a little more garlic. Just sayin’.

  70. User avatar charline.ullrich7 says:

    5 stars
Really tasty and super easy. The seasoning smell while it bakes is amazing. I’d definitely make this again!

  71. User avatar Prostetnic Vogon Jeltz says:

    4 stars
Not gonna lie, I was skeptical about baking pork and eggplant together without any sauce. But it worked! Next time I might add a squeeze of lemon to brighten it up.

    1. User avatar junie.mante says:

      5 stars
I was skeptical too—pork + eggplant sounds like it needs a sauce. But the seasoning makes sense. Lemon sounds like a great idea to cut the richness.

  72. User avatar olin.bernhard says:

    3 stars
Good idea, but my eggplant got kinda mushy. I think I sliced them too thin. Taste was fine though.

    1. User avatar leonard.lebsack2014 says:

      4 stars
Ah yeah, eggplant can turn to mush if it’s cut too thin. Next time I’d aim for thicker rounds (like 3/4 inch) and start checking a few minutes earlier—also patting it dry helps so it roasts instead of steaming.

    2. 5 stars
Happens. I once sliced mine paper thin and it was basically baby food lol. Your seasonings still carried it though—next try, flip them halfway and don’t overbake. 15 minutes might be plenty at 400F.

  73. User avatar Effrafax of Wug says:

    3 stars
Eggplant got tender, but the pork was a bit dry on the edges. I think I overbaked or cut the rounds too thin. Still decent.

  74. User avatar jamey.kutch2010 says:

    2 stars
I dunno… eggplant is kinda mushy, and it didn’t taste like anything. I think I needed to add more seasoning?

  75. 3 stars
Honestly, it’s just pork and vegetables with seasoning. The spices are nice, but I expected more “wow.” Could use a sauce or something for me.

    1. 4 stars
Yeah I get you—mine was good, but kinda “dry” without anything extra. I started adding a quick pan sauce (a splash of balsamic + a little honey or even marinara) and it totally gave it that wow.

  76. 3 stars
Easy to make but not my fav dish.

  77. User avatar steve_maga says:

    3 stars
Well, my pork got a bit dry, but still edible! Eggplant was nice tho. Might try again with less time in the oven.

  78. 4 stars
I didn’t have dried oregano/basil so I used Italian seasoning. It was still good, but the flavor was a little different.

  79. 3 stars
I don’t like eggplant. What can I use instead?

    1. User avatar Frostbite Spider says:

      5 stars
You could try zucchini instead of eggplant! It cooks similarly and takes on flavors well.

    2. User avatar MAGA2024.Trumpster says:

      2 stars
Idk, maybe just skip the veggie? Pork is good without anything else!

  80. 5 stars
Super simple and it actually tastes like something you’d get at a restaurant. The seasonings on the eggplant are sooo good.

  81. 3 stars
Mine dried out a bit… I think I sliced the pork thinner than the recipe intended and cooked closer to 20-22 mins. Still tasted good, just not as juicy.

    1. 3 stars
Mine did kinda the same when I cut it thinner too 😅 I even did like 25 mins once and it was not juicy at all. Maybe cover with foil near the end or brush the pork with a little extra oil? Anyway still tasty tho!

    2. User avatar keneth.muller says:

      4 stars
Ugh, yeah that makes sense. Pork tenderloin is super lean, so if it’s thinner it cooks faster and dries out. 20–22 mins might’ve pushed it a bit—next time I’d check around 12–15 and pull it as soon as it’s just cooked (no extra browning needed).

  82. User avatar Draugr Death Overlord says:

    5 stars
This was delicious! The pork was so juicy and the spices were perfect.

    1. 2 stars
I didn’t find it that great. The eggplant was kind of mushy for me. Maybe I did something wrong?

    2. User avatar terminatorXYZ says:

      5 stars
I’m so glad you loved it! The spices really bring out the flavor, don’t they? I’m definitely making this again!

  83. 4 stars
Looks simple. Might try it. “400 degrees” is a lot though lol.

  84. User avatar teddy.goyette says:

    3 stars
Okay but how thin were the eggplant rounds? Mine stayed a little firm after 20 mins. Still tasty though—just not as tender.

  85. User avatar kerstin.mcglynn5 says:

    4 stars
My family enjoyed it but I might add some cheese next time.

  86. User avatar mertie.prohaska says:

    5 stars
These pork and eggplant rounds look surprisingly simple—love that the oven does most of the work. The spice blend sounds spot on too.

  87. User avatar terminatorXYZ says:

    2 stars
I followed it exactly and the seasoning tasted kinda flat. Also I’m pretty sure eggplant at 400°F should roast faster? Idk, maybe my oven runs hot/cold.

  88. User avatar walter.langworth1977 says:

    4 stars
I’m skeptical about pork + eggplant being “rounds” instead of a proper dish, but honestly the spices carried it. I’d double the olive oil next time though.

  89. 2 stars
Pork was dry, I think I overcooked it. Lesson learned!

    1. User avatar ardith.volkman says:

      4 stars
Don’t worry, it happens to the best of us! Try marinating the pork next time, it might help keep it juicy.

  90. User avatar Galaxia Woonbeam says:

    5 stars
Tried this tonight—super easy and the flavors are actually really nice together. The eggplant got perfectly tender at 20 minutes. Will make again!
