Ingredients
  

  • 4 pieces chicken breasts Boneless and skinless
  • 1/2 cup pesto sauce Homemade or store-bought
  • 1 cup cherry tomatoes Halved
  • 1/4 cup parmesan cheese Grated
  • 2 tablespoons olive oil Extra virgin
  • to taste salt
  • to taste black pepper

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt and black pepper on both sides.
  • In a large oven-safe skillet, heat the olive oil over medium-high heat.
  • Add the chicken breasts to the skillet and sear until golden brown, about 2-3 minutes per side.
  • Remove the skillet from the heat and spread the pesto sauce evenly over the chicken breasts.
  • Scatter the halved cherry tomatoes around the chicken in the skillet.
  • Sprinkle the grated parmesan cheese on top of the chicken.

      Ugh, I hate when that happens 😅 Pesto can be pretty salty depending on the brand/recipe. Next time you’re totally on the right track—either go lighter on the salt on the chicken or skip extra salt entirely and rely on the pesto/parmesan. Also, did you taste the pesto before putting it on?

      165 degrees is the standard safe temp for chicken. 170 is a bit over and can dry it out, I think you should stick with 165!
