- 1 cup Bomba rice or any short-grain rice
- 2 tablespoons olive oil extra virgin
- 1 medium onion finely chopped
- 1 clove garlic minced
- 1 medium bell pepper chopped
- 1 cup green beans cut into pieces
- 1 cup tomato diced
- 1 teaspoon smoked paprika
- 3 cups vegetable broth low sodium
- 0.5 teaspoon saffron threads soaked in 2 tablespoons of warm water
- 0.25 cup peas fresh or frozen
