If you’re looking to elevate your seafood game, Oven-Roasted Za’atar Octopus is the dish to try. This Mediterranean-inspired recipe combines the tender, delicate flavors of octopus with the bold, aromatic spice mix of za’atar, creating a dish that’s bursting with vibrant flavors. The slow roasting process ensures the octopus becomes melt-in-your-mouth tender while maintaining a delightful char and smoky finish.
Za’atar, a Middle Eastern spice blend made from thyme, sesame seeds, sumac, and salt, is the perfect complement to the natural sweetness of octopus. The herbs and spices in the za’atar create a fragrant, tangy, and earthy crust on the octopus, enhancing its flavor while giving it an exotic twist.
To prepare, start by cleaning and tenderizing the octopus, then marinate it with olive oil, lemon juice, garlic, and a generous amount of za’atar seasoning. The longer you let the octopus marinate, the more flavorful it becomes. A couple of hours in the fridge is ideal, allowing the spices to soak in and infuse the seafood with depth.
Once marinated, the octopus is placed in a hot oven to roast. The slow cooking process helps the octopus become perfectly tender, while the high heat caramelizes the za’atar seasoning, creating a savory crust. The result is a beautiful balance of crispy and tender textures, with a burst of herbaceous, lemony flavor in every bite.
Oven-Roasted Za’atar Octopus can be served as a main dish alongside a simple salad, roasted vegetables, or couscous for a complete Mediterranean-inspired meal. It also pairs wonderfully with a glass of crisp white wine or a refreshing citrus cocktail.
Whether you’re entertaining guests or enjoying a special meal at home, this dish is sure to impress. It’s an exciting way to enjoy octopus and introduce bold, aromatic flavors to your dinner table.

Delish! Adding this to my collection of summer recipes. So refreshing with the lemon!
Za’atar? What is that? I just used spices I had at home and it still tasted decent. Octopus is tricky, though.
Za’atar is a mix of spices, mainly thyme, sesame, and sumac. It’s super tasty! Glad your octopus worked out, though.
I don’t understand how anyone eats octopus. Just stick to chicken, it’s easier and better!
My family loved it! The kids even asked for seconds, which is a miracle. Thanks for sharing this recipe!
This was my first time cooking octopus. Came out better than expected! Next time I’ll try it on the grill instead of the oven.
I didn’t have za’atar so I used taco seasoning instead. It was… interesting. Not sure I’d recommend that swap.
Omg just went to a fancy restaurant with octopus, and it tasted way different than this. 😂 But I liked it still.
Could someone tell me why you remove the head and beak? I left the beak on by mistake and it was kinda gross. Learn from me, lol.
Honestly I don’t always think it’s necessary? If the beak is tiny maybe it won’t matter… but yeah if you left it on and it was gross, I guess that’s your answer 😅. Also is 300°F pre-cook like a low boil? I’m confused but I wanna try it!
Good call—removing the head and beak is mostly about getting rid of the parts that can be funky/strong-tasting and not very pleasant texture-wise. The beak especially is pretty tough, and it can make the whole thing feel “off” even after roasting.
Tasted great! BUT the instructions were hard to follow, could use more pics! I’d give it a 3.5 if I could.
I totally agree! More pictures would really help, especially for something as tricky as octopus. I had a hard time with the cleaning part too. 3.5 sounds fair!
Okay so I tried this and my octopus turned out chewy 😭 I think I overcooked it when I left it in the pot a bit too long. Still, the flavor is nice—would make again if I nail the timing.
I’m skeptical—octopus and “crispy and golden” seems like wishful thinking. But honestly, the final result looked like it could’ve come from a seafood restaurant.
I was skeptical about cooking octopus at home, but this recipe made it so easy. The timing was spot on. Thanks!
I’m so glad to hear that! Octopus can be intimidating, but this recipe really simplifies it. Did you serve it with anything special?
I don’t know, seems gross to me. I can’t eat that slimy stuff! 🤮
This was amazing! I’ve never cooked octopus before but this recipe made it easy. The za’atar adds such a unique flavor. Will definitely make it again!
I’m so glad you tried it! Cooking octopus can be intimidating but it sounds like you nailed it! Za’atar really elevates the flavors, doesn’t it? 🌟
I was a bit skeptical about cooking octopus, but this recipe made it straightforward. It turned out pretty good, but I think I overcooked it a bit.
I totally get how you feel! I was scared to cook octopus for the first time too, but now it’s a favorite! Just give it another go, maybe you’ll nail it next time!
Overcooked can happen! But don’t stress, it’s still edible. Just keep an eye on it next time. Also, what’s za’atar? Sounds fancy!
Does the za’atar have to be fresh or can I use the store-bought kind? Asking for a friend. 🙂
Nah, I reckon fresh is better. Store-bought can taste kinda stale. You should just stick with fresh if you can find it!
Store-bought is fine! Just make sure it’s a good quality one. Fresh za’atar tastes awesome, but you can still make it work with the other options.
Wow—this turned out way better than I expected. The za’atar + lemon is such a good combo, and roasting it after boiling really gets that crisp outside. I served it with extra lemon and it disappeared fast.
Not gonna lie, I was skeptical about roasting after boiling. But it actually worked! Next time I’ll crank the seasoning a touch more.
Tried this last night and wow—the za’atar crust is legit. I roasted mine closer to 40 min and it came out golden with a little crunch. Lemon at the end really lifts it.
Nah, man, too much work and I just don’t like octopus. My sister loves it tho.
I can’t believe people actually eat octopus. Disgusting!! Why not just use chicken?
This octopus recipe is amazing! The za’atar gave it such a unique flavor! Definitely making this again.
Ok but the prep is a lot. Cleaning takes forever. If you can get it cleaned already, this would be a 10/10 for sure.
First time cooking octopus and it was much easier than I expected! I got it just right, thanks for the detailed instructions!
My za’atar clumped and didn’t coat evenly, so I got patches of flavor and patches of “meh.” Still tasted nice, just not that golden look. Next time I’ll whisk the oil/juice better.
I tried it, but it came out kinda chewy. Maybe I didn’t cook it long enough? Not sure if I’m a fan of octopus yet.
If it was chewy, you might’ve needed to cook it longer. The longer the better with octopus for tender meat! Don’t give up on it yet!
ehhh not my favorite. Too chewy for me. Maybe I cooked it wrong idk.
Maybe try cooking it longer or at a higher temp next time? Octopus can be tricky!
So yummy! Simple to follow, plus it’s visually stunning on the plate. I served it during a dinner party and everyone loved it!
Way too much spice for my taste. I think I’ll just stick with plain seafood next time. 🤷♂️
I tried this last night. It didn’t turn out crispy like the picture. What did I do wrong?
umm I’m not sure about cooking octopus in a pot for so long… but I followed it and it actually got tender. I used more black pepper than it said (oops) and it was kinda intense, but good overall.
The steps are clear, but my octopus was still a bit chewy. I think I undercooked it in the boiling step—next time I’ll push closer to 1 hour.
30 minutes at 400°F made mine too dark. Maybe my oven runs hot? I’d suggest checking at 25 minutes and rotating the pan.
Made this last night—wow. The za’atar + lemon combo is super addictive, and roasting after boiling really did make it crispy. I’d just reduce the salt a touch next time.
Totally agree—the za’atar + lemon is the real magic. I’ve tried other seasonings, but this combo keeps pulling me back. Crispy after the boil/roast is such a good move!
I made this too, but mine wasn’t crispy at all… I think I under-roasted or didn’t boil long enough? Also I may have used “zaatar” from my spice rack that’s not the same as za’atar? Next time I’ll watch the salt like you said.
I’m skeptical, I’ve never cooked octopus before. Is it really gonna taste good? Seems like too much work!
I totally understand your skepticism! Cooking octopus can be intimidating, but it’s actually quite delicious if done right. The za’atar adds a unique flavor, you might end up loving it!
Nah, u dont understand. octopus taste weird. Maybe try chicken or something? less work and no hassle!
I tried this but my octopus wasn’t super crispy. I think I didn’t cool it enough after draining, so the rub maybe slid off a bit. Flavor is still great though—would do it again with longer roast.
Meh. I used store-bought za’atar and it didn’t taste that special. I mean it was edible but I wouldn’t make again.
Ugh, sorry it fell flat for you. Store-bought za’atar can taste pretty “meh” compared to fresh/thicker blends—next time try a more fragrant one (sesame-heavy, sumac-tangy) and maybe add a pinch more sumac or salt.
Maybe you under-roasted? 30–40 mins at 400°F can still be not crispy if the octopus is extra watery. Also, did you salt it after cooling? I swear that makes a difference.
Isn’t octopus supposed to be purple? Mine turned out kinda brown. Did I mess up?
I wouldn’t worry too much! Octopus can vary in color. The cooking process can change its appearance. If it was tender and tasted good, you’re probably fine!
Looks kinda gross to be honest. Who eats octopus? Not my cup of tea.
300°F first?? That seems too low for octopus. I followed it exactly but wasn’t impressed until I bumped the roast temp closer to 425°F for the last 10 minutes.
Wait… I think I did it right and mine still came out kinda chewy. Maybe my octopus was frozen and that messes with it? Also 45 min in boiling water felt short to me. I might try your higher-temp finish tho.
I totally get the 300°F confusion. Octopus usually needs more heat to actually get some browning. Your tweak to 425°F makes sense—those last minutes probably help it crisp up without drying it out too much.
It was tasty, but my octopus didn’t get crispy at all. I think I covered the tray with foil by accident… next time I’ll keep it uncovered. Still flavorful though!
Ahh yeah—foil will totally trap moisture, so it won’t crisp up. I’m glad it still tasted good though! Next time try roasting uncovered (and if you can, pat the octopus drier before the za’atar).
This recipe is fantastic! The octopus came out perfectly tender and the za’atar gives it a great flavor. Can’t wait to make it again!
Just okay. The texture of the octopus was weird to me. I guess it’s an acquired taste.
Never roasted octopus before, so I was nervous. The za’atar smelled amazing while baking. My family actually went back for seconds 😅
I tried this but it was tough. Did I cook it too long? I followed the steps but it just wouldn’t get tender.
I saw someone cooking octopus on TV, but didn’t think I could do it at home. It’s actually easier than I thought!
Octopus? Really? I thought that was only for fancy restaurants. Hope it turns out better than it sounds…
I was so intimidated by octopus, but your method sounds doable! Gonna try this, thanks for sharing! 😊
I love seafood, but never tried this before. Is it better than regular grilled fish? Looking forward to the taste!
Honestly, I dunno. Grilled fish is easier and usually safer. Octopus can be a hit or miss, honestly.
I’ve tried both and I must say, this octopus dish is on another level! The za’atar adds such unique flavor. You’re gonna love it!
I can’t get the timing right. Mine was chewy after roasting even though I cooked it a long time. Probably user error but yeah… not for me.
This is a great recipe! The za’atar flavor really brings out the best in the octopus. Will definitely make again!
Ok but why do we even eat octopus? They are so smart and remember things. 🤔
I get what you mean! It’s kinda like eating a pet, but they taste amazing 😋. Just part of the food chain, I guess?
But octopus is delicious! Who cares about their smarts when they taste so good? 🤷♂️
Really loved this recipe! My boyfriend couldn’t get enough. We paired it with a nice salad and it was perfect.
Nice! Delicious!
I don’t think za’atar is the right spice for octopus… just my opinion! I prefer something more traditional like garlic and lemon separately.
Za’atar? What’s that? I used Italian seasoning instead and it was still okay. Not sure if I’d try again.
This recipe is amazing! I’ve never cooked octopus before and it came out delicious. The za’atar flavor really makes it pop!
I’m so glad you loved it! Octopus can be intimidating at first, but it’s so worth it. Za’atar really does elevate the dish!
Never had octopus before but sounds tasty! Is it hard to make? How do you know when it’s done cooking?
I didn’t have za’atar, so I used a mix of oregano + cumin + sesame seeds. It was still tasty, just not the same vibe. Still, good method.
Not so great… the octopus was tough and not crispy like I expected. Might be my fault but I followed the instructions. 😔
Delicious! I love za’atar! But isn’t it supposed to be grilled not roasted?
Omg, tasted so good! The lemon and za’atar make everything better. Definitely adding it to my seafood rotation.
Yum! I love the combination of lemon and za’atar too. You’re making me want to try octopus now!
I’m skeptical about the 45 minutes to 1 hour—mine was still chewy at that time. I ended up cooking it closer to 1.5 hours and then it was tender. The recipe is close, just need to watch doneness.
Yum! Who woulda thought octopus could taste this good! Next time, I’ll add more lemon though.
Tried this and it came out surprisingly good—crispy edges with that z’aatar lemon punch. I did add a little extra salt at the end for my taste.
