If you love the comforting flavors of moussaka but are looking for a breakfast-worthy twist, this Moussaka-Inspired Breakfast Casserole is the perfect way to start your day. It combines all the hearty, savory goodness of the classic Mediterranean dish with the convenience of a make-ahead breakfast casserole. This dish brings together layers of rich ground meat, eggplant, and a creamy, egg-based custard, creating a filling and flavorful morning meal.
At its core, the casserole features a base of seasoned ground beef or lamb, cooked with onions, garlic, and aromatic spices like cinnamon, oregano, and nutmeg, just like the traditional moussaka. This creates a savory, fragrant layer of meat that forms the heart of the casserole. Thinly sliced eggplant is layered on top, providing a tender, meaty texture that contrasts perfectly with the spiced meat.
What sets this breakfast casserole apart is the creamy, custard-like topping. Instead of the typical béchamel sauce in traditional moussaka, this version uses eggs mixed with yogurt and a touch of cheese to create a rich, velvety topping. It bakes up golden and bubbly, binding all the layers together into a deliciously satisfying dish.
Perfect for meal prep, you can assemble this casserole the night before and bake it in the morning for a no-fuss breakfast. Serve it with a simple side salad or some crusty bread to balance out the richness. It’s hearty enough to keep you full well into the afternoon and can easily be adjusted to suit your tastes. For a lighter version, swap out the ground beef for turkey or chicken, or add in some extra veggies like spinach or zucchini.
This Moussaka-Inspired Breakfast Casserole is a great way to elevate your breakfast routine with bold Mediterranean flavors. It’s comforting, filling, and sure to be a hit with anyone who enjoys a savory start to their day. Whether it’s a weekend brunch or a busy weekday morning, this casserole is bound to become a favorite.

My only problem is I can’t get thin slices of potato/eggplant the same size. It still tastes fine though—just looks messy. Would make again.
I tried it but my casserole was watery. I think I didn’t drain the beef enough and maybe eggplant was too wet. Flavor was good though, just needs tweaking.
Totally worth it! My kids gobbled it up. Next time I’ll add more cheese.
I don’t know, my kids didn’t like it. Maybe it’s the eggplant? 🤔
More cheese sounds great! I’ll try that next time too.
Absolutely delicious! The flavors were amazing and I loved the combination of the feta and ground beef. A new favorite for breakfast!
Sounds nice, but I don’t think breakfast should have beef. Isn’t breakfast for eggs and bacon?
I totally agree! The feta really adds a nice depth to the dish. Glad you enjoyed it!
I just put everything in a pot…hopefully it turns out good. Fingers crossed!
So easy and so good! Used ground turkey instead and it still turned out amazing. Will be making again! 👍
This sounds like a genius way to do moussaka vibes for breakfast. I love that it’s basically layers + eggs—so filling. Can’t wait to try!
Does it have to be beef? I have ground chicken, will that work? Asking for a friend.
Yum!! I made it just now and it smells so good! My whole family loved it!
This was delicious! I’ve never made moussaka before but this casserole made it easy. Family loved it!
This is such a clever breakfast twist on moussaka. The egg/milk custard really holds everything together, and the feta + parmesan combo is 🔥.
Yes!! I made something similar and the egg/milk custard really does the “moussaka” thing where everything sticks together. Also feta + parm is such a cheat code 😄
I made this last weekend and my whole family loved it! The feta cheese really makes it!
I’m sorry but 4 eggs seems like way too much for a 9×13… mine was kinda eggy. Next time I’d use less or add more cheese/meat to balance.
Looks too complicated for me. I just want scrambled eggs, lol.
I get that! Scrambled eggs are classic and easy. Maybe try this when you’re feeling adventurous? 😊
Who puts eggplant and beef in a breakfast? That’s weird! I seriously can’t even imagine this tasting good. 1 star!
Wow! I thought it was gonna be hard, but it’s pretty straightfoward. My family devoured it. Will make again. lol
Not my fav. The flavors were kinda bland, I added hot sauce and it helped a bit.
This recipe is quite complicated. Do I really need to slice everything so thin? I’m not a chef!
Looks good, but isn’t traditional moussaka supposed to have béchamel? Why is it missing? I don’t know about this recipe.
I think this is great! Moussaka is like a hug in a dish. Definitely trying it!
Absolutely! Moussaka is the best comfort food. Hope you enjoy it!
