A comforting and delicious Dumpling Soup perfect for chilly days. It consists of soft, tender dumplings and a flavorful broth filled with vegetables.
Ingredients
- 1 cup all-purpose flour for the dumplings
- 1 teaspoon baking powder for the dumplings
- 1/2 teaspoon salt for the dumplings
- 2 tablespoons butter cold, cut into small pieces for the dumplings
- 1/2 cup milk for the dumplings
- 1 medium carrot chopped
- 1 medium celery stalk chopped
- 1 small onion chopped
- 2 cloves garlic minced
- 6 cups chicken broth
- 2 cups cooked chicken shredded
- 1 teaspoon dried thyme
- to taste pinch salt and pepper
- 2 tablespoons fresh parsley chopped, for garnish
Instructions
- In a mixing bowl, whisk together the flour, baking powder, and salt for the dumplings.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk just until combined and set aside.
- In a large pot, sauté the chopped carrot, celery, and onion until softened, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute.
- Pour in the chicken broth and bring to a boil.
- Lower the heat and add the shredded cooked chicken and dried thyme.
- Drop spoonfuls of the dumpling dough into the simmering broth.
- Cover the pot and cook for 15 minutes, or until the dumplings are cooked through.
- Season the soup with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
