Ingredients
- 2 kg fresh mussels cleaned and debearded
- 1 cup dry white wine
- 2 tbsp unsalted butter
- 2 shallots finely chopped

- to taste salt and pepper
Instructions
- In a large pot, melt the butter over medium heat and sauté shallots and garlic until softened, about 3 minutes.
- Add the white wine and bring to a boil.
- Add the cleaned mussels to the pot, cover with a lid, and cook for 5-7 minutes, or until the mussels have opened.
- Discard any mussels that do not open. Stir in the chopped parsley and season with salt and pepper to taste.

Yeah, I get that. If your pot is wider, the liquid evaporates/cooks off faster, so you end up with less “soup.” I usually use a deeper pot and only stir gently—also, don’t let it boil aggressively after adding the mussels.
