Ingredients
  

  • 2 bolillo bread rolls
  • 1 cup refried beans
  • 1 cup chicharrón shredded
  • 1 cup shredded cheese such as Cheddar or Monterey Jack
  • jalapeños sliced, for topping (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Slice each bolillo bread roll in half horizontally.
  • Spread a layer of refried beans on each of the cut sides of the bread rolls.
  • Top the refried beans with shredded chicharrón and shredded cheese.
  • Place the bread rolls on a baking sheet and bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and allow to cool slightly before topping with sliced jalapeños and chopped cilantro, if desired.
  • Serve warm and enjoy!

    Pretty tasty, but 400°F feels a bit high for bread that’s already soft. Mine browned fast, so I’d try 375°F or check at 8 minutes next time.

    So basically beans, pork, cheese on bread. Sounds fine, but cilantro where? The recipe says chopped cilantro if desired but not in ingredients. Also my jalapeños were too spicy—my bad.

      I think baking is fine… but 10 min feels kinda short for melty cheese? Mine always comes out like it not done unless I do like 15-20. Also toaster oven makes it more crispy for me. For the chicharrón, use less oil ones i guess lol.

      I actually had the opposite problem 😅 I used a bigger cup and it was kinda… too much. So yeah measuring by thickness/coverage makes more sense than cups.

      I get you—1 cup chicharrón for just 2 rolls sounds a little light/tacky. I usually add until it looks nicely layered, not measured by volume.
