Minestrone Soup

August 29, 2024

Minestrone Soup is one of those timeless dishes that perfectly captures the essence of traditional Italian cooking – simple, hearty, and deeply comforting. Known for its medley of vegetables, beans, and sometimes pasta or rice, minestrone is a flexible and flavorful soup that has become a staple in homes and restaurants around the world.

What sets minestrone apart from other soups is its adaptability. There’s no single “correct” recipe, which is part of its charm. Depending on the region of Italy, or even the season, the ingredients may vary. Some versions are light and brothy, while others are thick and almost stew-like. This makes minestrone a great option for using up whatever fresh or leftover vegetables you have on hand.

Despite its humble origins, minestrone delivers bold, satisfying flavor. It typically starts with a base of onions, garlic, carrots, and celery sautéed in olive oil. From there, a variety of ingredients like zucchini, green beans, potatoes, tomatoes, or leafy greens are added, along with white beans or kidney beans for protein and texture. A handful of pasta or rice often finishes it off, transforming the soup into a complete, satisfying meal.

What truly makes minestrone special is its ability to feel both nourishing and indulgent. It’s a wholesome option packed with fiber, vitamins, and plant-based goodness, yet it still provides the deep, satisfying flavor that many people associate with rich comfort food. It’s a go-to for chilly evenings, rainy days, or anytime you want something warm and filling without feeling too heavy.

Minestrone Soup is also a reflection of home cooking at its best. It’s not fussy or expensive, just honest ingredients brought together with care. Whether you’re enjoying a light summer version with seasonal vegetables or a heartier winter bowl loaded with beans and pasta, minestrone is always a reminder that simple food can be the most comforting of all.

Cook Time 45 minutes
Total Time 1 hour

Ingredients

  • 2 tablespoons olive oil extra virgin
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 1 zucchini diced
  • 1 potato diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth low-sodium
  • 1 can kidney beans (15 oz), rinsed and drained
  • 1 cup pasta such as ditalini, small
  • 1 cup spinach chopped
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 1/4 cup parmesan cheese grated, for serving (optional)

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic and cook until the onion is translucent, about 5 minutes.
  • Add the diced carrots, celery, zucchini, and potato to the pot. Cook for an additional 5 minutes, stirring occasionally.
  • Pour in the can of diced tomatoes (with their juices) and the vegetable broth. Bring the mixture to a boil.
  • Once boiling, reduce the heat to a simmer and add the rinsed and drained kidney beans. Let the soup simmer for 20 minutes.
  • Add the small pasta to the pot and continue to simmer for another 10 minutes, or until the pasta is tender.
  • Stir in the chopped spinach and Italian seasoning. Season the soup with salt and black pepper to taste.
  • Serve the Minestrone Soup hot, garnished with grated Parmesan cheese if desired.

Absolutely delicious! I added some crushed red pepper for a kick!

I don’t know why but mine was watery. I think I used too much broth maybe? Or I didn’t simmer hard enough. Still tasted good, just not thick.

  4. 4 stars
Soo good! I forgot to buy spinach and it still turned out great. Will make again!

  5. 5 stars
This soup is life-changing! Perfect for cold days. My family loves it.

  6. 2 stars
Not bad, but can’t you just heat up some soup from a can? More effort than it’s worth.

  7. 2 stars
This soup is alright but kinda bland. Needs more spice or something.

  8. User avatar camellia.prosacco says:

    5 stars
Love how straightforward this is. Prep took a little longer because I diced everything by hand, but it was worth it. Tastes even better the next day.

  9. User avatar paige.langosh says:

    3 stars
I followed the recipe but it turned out bland. Maybe it needs more spices?

    1. 4 stars
I totally get it! Minestrone can be kinda bland if you don’t kick it up a notch. Maybe try adding some red pepper flakes or more garlic next time?

  10. 3 stars
I didn’t have kidney beans, so I used black beans instead. Tasted fine but I think the beans are too mushy now. 🤔

  11. User avatar Patton Down DeHatches says:

    2 stars
Disappointed. It was way too watery for my taste. I think I used too much broth or something. Not for me.

  12. 5 stars
Absolutely delicious! This soup is so hearty and full of flavor. Love it!

So good!! 😍 I never cooked with kidney beans before but they added a nice touch!

  15. User avatar iris.lockman2023 says:

I tried this recipe but I think I put too much salt, it was kinda salty to me.

    1. User avatar wellRespected says:

      3 stars
Salt is tricky! You could try adding more veggies or pasta to balance it out next time. Don’t worry, it happens to the best of us!

    2. User avatar onita.bosco says:

      4 stars
I’ve made this soup many times and I always use less salt than what the recipe calls for. Just a little pinch does the trick! Maybe try that next time?

  16. User avatar walter.spinka78 says:

    4 stars
Solid recipe, really flavorful for how simple it is. I used regular onion powder once in a pinch and it still tasted great. Next time I’ll add a bit more Italian seasoning.

    1. User avatar sandy.mohr77 says:

      5 stars
Totally agree—this soup is crazy flavorful for being so straightforward. I also love that the pasta doesn’t get mushy if you keep an eye on the simmer.

  17. User avatar lelah.walter56 says:

    5 stars
This soup is amazing! So hearty and full of flavor. My family loved it!

  18. User avatar ahmed.rohan42 says:

Great recipe but too many veggies for me. I like my soup simpler. Next time I’ll skip a few.

    1. User avatar alica.satterfield3 says:

      3 stars
But the veggies are good fer you! Maybe try blending it into a creamy soup? Just a thought.

    2. User avatar wm.hilpert72 says:

      4 stars
I totally get it! Too much veggies can overwhelm the flavor. I prefer more broth than chunks too. You could add more pasta instead!

  19. User avatar shayne.barrows9 says:

    5 stars
Yummy!!!😍 Best Minestrone ever! Thank you!!

  20. 5 stars
Followed it pretty closely and it tastes like restaurant minestrone. The veggie mix is perfect and the simmer time actually matters. Will make again for sure.

  21. User avatar jessie.beahan says:

    2 stars
Wasn’t as good as I expected. The flavors were kinda bland. I added more herbs but still didn’t impress me.

  22. User avatar kathe.harber says:

    3 stars
Not bad, but I think I prefer chowder.

    1. User avatar ariel.runolfsdottir says:

      5 stars
Minestrone is way better than chowder! It’s got more veggies and flavor.

    2. User avatar arleen.lueilwitz83 says:

      4 stars
Chowder is great, but have you tried adding some cream to this? Makes it a whole different thing!

  23. User avatar janina.schinner34 says:

    5 stars
Yummy in my tummy! Perfect for cold winter nights. 🥣

  24. 5 stars
Mmm, yum! This soup reminds me of my grandma’s recipe. So comforting!

  25. 1 star
I don’t understand why you would use vegetable broth instead of chicken broth. That’s just weird.

  26. User avatar lane.walter says:

    3 stars
I substituted chickpeas for the beans and it turned out just fine. Not sure if it’s ‘authentic’ tho.

  27. User avatar dennis.jacobs says:

    5 stars
5 stars—easy. My family ate it and no complaints. Will def do again 😄

  28. 2 stars
I tried it but I forgot to rinse the kidney beans… it was kinda funky, ngl. After I corrected it for the next batch (rinsed + drained), it was way better. Also, 1 tsp salt might be too much for low-sodium broth depending.

  29. 4 stars
I have a question – can you use meat instead of beans? My husband doesn’t like them. 🤷‍♀️

  30. User avatar librada.veum86 says:

    2 stars
Too many vegetables for my taste. I think it needs more pasta.

  31. User avatar elke.halvorson says:

    3 stars
I thought it might be bland with only 1 tsp salt, but once it simmered the flavors came together. Only thing: my pasta got a bit soft, so I’d simmer it a little shorter.

    1. User avatar Shawn O'Kon says:

      5 stars
Glad it worked for you! I usually do pasta closer to 8–9 min in soups like this so it doesn’t turn to mush. Great note on the simmer time.

  32. 2 stars
I followed it exactly and it still felt like “vegetable soup with pasta.” Minestrone usually has more going on—maybe I should’ve added garlic/oregano/extra herbs?

    1. User avatar martina.stamm78 says:

      4 stars
Totally get that—this one is more “weeknight minestrone” than super herb-y. Garlic + extra oregano wouldn’t hurt. I’d also add a pinch of crushed red pepper and maybe a bit of basil at the end.

  33. User avatar rodney.orn43 says:

    4 stars
Not bad at all, but I found it a little bland until I upped the salt and added red pepper flakes. Also, my pasta got softer than I expected after sitting—so serve soon or keep pasta separate.

  34. User avatar teddy.hodkiewicz says:

    3 stars
I’m skeptical about the zucchini in minestrone… I feel like it can go mushy. But honestly the potato probably helps balance it. Still, I might cut the zucchini a bit bigger.

    1. User avatar earnestine.halvorson97 says:

      4 stars
Potato is such a sneaky hero here. It thickens the base a bit so everything feels more “stewy” instead of watery-zucchini.

    2. User avatar tamra.denesik92 says:

      5 stars
Yeah I get you—zucchini can turn into mush in soups if it’s too small. Cutting it a bit larger (or adding it a little later) definitely helps texture.

  35. User avatar larisa.oconner says:

    5 stars
This looks super comforting. I love how it’s packed with veggies and the pasta soak up all that broth—perfect for a cozy weeknight meal. Might try adding a little extra parmesan too!

  36. User avatar Kayleigh Hudson says:

    2 stars
Too many veggies for my taste. Just want some noodle soup. 🤨

    1. User avatar jim.considine83 says:

      4 stars
I get that, but the veggies make it so much healthier! You can always add more noodles if you want! 🍜

  37. User avatar dorine.lesch65 says:

    3 stars
I accidentally used sweet potato 😅 Didn’t know it would change flavor so much.

  38. User avatar gladis.marvin42 says:

    2 stars
Not sure why kidney beans? Cannellini would be better in my opinion. Also I simmered 20 min and the beans tasted a little “bean-y” until longer… still edible though. 😅

  39. 4 stars
1/2 teaspoon pepper? That’s not enough pepper for me 😅 Still good though. I’ll try more Italian seasoning next time and maybe add carrots since mine were a little small.

  40. User avatar xavier.hodkiewicz77 says:

    2 stars
Not bad, but I think the salt was too much for my taste. I accidentally added too much salt and now it’s salty. Yikes!

    1. 4 stars
I totally get that! Too much salt can ruin a good soup. Maybe next time try tasting as you go? It’s the best way to avoid the yikes moment! 😊

  41. User avatar Ms. Thad Dare says:

    5 stars
This soup is amazing! I made it for my family and they loved it. Definitely a keeper! 😊

  42. User avatar lane.kunde says:

    4 stars
Wasn’t convinced at first, but man this turned out great! I added some spicy sausage for a kick.

    1. 5 stars
Spicy sausage sounds like a fantastic addition! I might try that next time. Glad you enjoyed it!

    2. User avatar denver.goldner1968 says:

      3 stars
Not sure if I would add sausage, isn’t that kinda against minestrone? But if you liked it, good for you!

  43. User avatar janee.bartoletti1954 says:

    5 stars
Made this tonight—so cozy. The kidney beans + pasta combo turned out great, and the veggies stayed perfectly tender. I added a little extra parm and it really rounded the flavor out.

    1. 5 stars
Yes!! I love when the veggies stay tender like that—kidney beans make it so hearty. Extra parm is always the correct move 😄

    2. User avatar Yooden Vranx says:

      4 stars
Cozy sounds right. I did something similar but my pasta got a lil mushy after 10 min, so maybe next time I’ll cook it a bit less or add at the end. Still good though!

  44. User avatar vada.corkery says:

    4 stars
Super easy to make! My kids even liked it, and they’re picky eaters.

  45. User avatar valerie.barrows says:

    4 stars
Super easy to make! Perfect dish for a cold day. Will definitely make again.

  46. User avatar palmer.wyman39 says:

    4 stars
This is a great base recipe. I added extra carrots and a handful of chopped kale and it turned out awesome. Also, simmering the beans a bit longer helps the flavor soak in.

    1. User avatar rebbeca.fisher says:

      5 stars
Totally agree—this really is a great base. Extra carrots + kale sounds like it would add such nice sweetness and texture. I’ll try simmering the beans longer too!

    2. User avatar tobias.terry11 says:

      3 stars
I kinda disagree on the “let the beans soak in” thing—20 minutes feels already enough to me? But adding extra veggies like kale makes sense. Also I always add more garlic 😂

  47. 5 stars
Yum! Very good. I skipped the cheese since I’m lactose intolerant, still delicious!

  48. User avatar vikki.nitzsche75 says:

    4 stars
Really solid minestrone. I accidentally grabbed cannellini beans instead of kidney, but it still tasted great. Next time I’ll keep the salt a bit lighter since my broth was already seasoned.

  49. 4 stars
First time making minestrone, and it was super easy to follow! My kids loved it too. Thanks for sharing!

  50. User avatar Rico Metz says:

    2 stars
I don’t know about the kidney beans part—mine tasted a little “beany” even after rinsing. Also I ran out of Italian seasoning so I used oregano, which maybe threw it off.

  51. User avatar matt.mclaughlin87 says:

    5 stars
This soup is amazing! I added some chili flakes for a bit of spice and it turned out perfect. Will definitely make this again!

    1. 3 stars
Sounds good but my soup never comes out quite like that. Maybe I’m doin’ somethin’ wrong?

    2. User avatar sana.heller14 says:

      5 stars
I really love minestrone too! Adding chili flakes is a great idea. I might try that next time!

  52. 4 stars
I didn’t have spinach, so used kale instead. Still was good, but spinach wud’ve been better.

    1. User avatar vance.bogan2021 says:

      4 stars
Kale is a great substitute! I’ve done it too and honestly, it turned out amazing. Spinach is great, but kale adds a nice twist! 🌿

    2. User avatar kina.anderson17 says:

      3 stars
U sure kale is better? I think spinach is more soft and sweet. Kale is kinda tough. But still, glad it worked out for ya!

  53. User avatar buster.schmidt39 says:

    4 stars
Italian seasoning and spinach is a nice combo. Also the directions are clear, which rare. I used low-sodium broth and added just a touch more salt at the end—tasted great.

  54. User avatar Shaina Monahan says:

    5 stars
Made this tonight and it was super cozy. The veggies stayed nice and tender, and the Italian seasoning really pulled it together. I added a little extra pasta and it still tasted great.

    1. User avatar tawna.hettinger1987 says:

      5 stars
Yes!! This is exactly what I love about minestrone—cozy, hearty, and the veggies don’t turn to mush. Great call adding extra pasta 👏

    2. User avatar Clorinda Nitzsche says:

      4 stars
I’m tempted to try it but I always worry the pasta will get soggy. Did you cook the pasta in the soup the whole time or just until it was tender? Looks delicious though.

  55. User avatar stephane.bernhard says:

    3 stars
Minestrone? Is that like a minestrone I had in Italy? Didn’t taste quite the same. Not bad but not great.

  56. User avatar carlee.reichert81 says:

    5 stars
Minestrone? More like mind-blown! This soup rocks! Can’t wait to make it again.

    1. 5 stars
Totally agree! This recipe is a game changer, I love how comforting it is. I added some homemade pesto too for extra flavor!

    2. User avatar suspiciousCommentator says:

      3 stars
I dunno, it seems too many veggies for me… what if I just put in a few? Would it still taste good? 🤔

  57. User avatar Arthur Philip Deodat says:

    3 stars
Not sure why people love minestrone so much—this felt a bit like “vegetable soup with pasta.” Still okay though. Would maybe add some herbs or a Parmesan rind if you have one.

    1. User avatar foster.wolff4 says:

      4 stars
Yeah I get that—mine is basically veggie soup with pasta too 😅 But I love it for the hearty vibe. Your herb/parmesan rind idea is solid!

    2. User avatar suspiciousCommentator says:

      3 stars
Hmm I actually think it’s more than that. If you let it simmer longer and add more garlic/onion, it tastes way deeper. Also Italian seasoning is kind of herbs, so maybe your batch needed more of it?

  58. User avatar irmgard.cummerata7 says:

    4 stars
Just what I needed on a cold day! This recipe really hits the spot! 🍲

  59. User avatar alia.konopelski17 says:

    2 stars
Meh. The instructions are clear, but I didn’t feel like there was enough depth—like it needed something smoky. Maybe bacon next time? Idk.

    1. User avatar Tricia McMillan says:

      5 stars
Totally get you—mine always hits better when I add a smoky element. A little diced bacon or even smoked paprika would probably do it. Next time try 4–6 slices bacon and cook the onion in the fat!

  60. User avatar Pizpot Gargravarr says:

    3 stars
My grandma makes the best minestrone, this one is okay but doesn’t compare. Needs more flavor.

  61. User avatar leighann.kozey1960 says:

    4 stars
I used chicken broth because that’s what I had, and honestly it tasted better? I know it’s not “vegetable broth,” but don’t fight your fridge lol.

  62. 3 stars
Can I substitute kidney beans with black beans? Asking for a friend. 🥴

  63. 5 stars
Made this last night and it was super comforting. The veggies stayed nice and tender, and the pasta didn’t get mushy (I cooked it right at a simmer). Parmesan on top is a must.

  64. User avatar marlen.mcglynn82 says:

    4 stars
I didn’t have all the ingredients, so I used what I had. Turned out okay, but I think it would be better if I followed the recipe more closely.

  65. 5 stars
This is the best minestrone soup recipe I’ve ever tried! So flavorful and filling. Definitely a keeper! 😍

  66. User avatar Future Trunks says:

    5 stars
Made this last night—so cozy. I used ditalini and it thickened up nicely after the simmer. The Italian seasoning + parmesan at the end is a great combo.

    1. 4 stars
Nice! I tried this but mine didn’t thicken much—maybe I didn’t simmer long enough? Still tasted great though. Next time I’ll add a little more pasta or simmer a bit longer.

    2. User avatar viviana.mertz12 says:

      5 stars
Totally agree—so cozy! I also use ditalini and it gets that perfect thickness after simmering. The Italian seasoning + parmesan combo at the end is so good.

  67. User avatar aurore.willms19 says:

    2 stars
Could be just me, but the zucchini made it a bit watery. Next time I’ll dice smaller or cook the veggies a touch longer before adding tomatoes.

  68. User avatar marlin.schaefer17 says:

    3 stars
Not bad, but the soup felt kinda thick after the pasta cooked. I think my heat was too high? Next time I’ll simmer gentler or add more broth.

  69. User avatar chelsey.lueilwitz91 says:

    5 stars
Made this tonight and it’s seriously cozy. The veggies stay nice and hearty, and the Italian seasoning gives it that classic minestrone vibe. I added a little extra pepper—perfect.

  70. User avatar Majora's Mask (Boss) says:

    4 stars
Solid recipe! I followed it pretty much exactly. Only thing: my pasta kept soaking up liquid, so I had to add a splash more broth when serving. Next time I’ll maybe undercook it a minute.

    1. User avatar larraine.dicki9 says:

      4 stars
That tracks. Ditalini is like a little sponge 😂. I usually do 8-9 minutes on pasta in soup, then let it sit off heat while I prep toppings.

    2. User avatar enoch.king says:

      5 stars
Glad it worked for you! Pasta can definitely keep absorbing broth—next time undercooking by a minute like you said is a good move. I’ve also had luck adding pasta right at the end (or cooking it separately).

  71. User avatar lynwood.reilly4 says:

    2 stars
Not gonna lie, I’m skeptical about putting pasta directly in the soup. It keeps absorbing broth and turns mushy if you’re not eating right away.

  72. User avatar stan.gleason2001 says:

    4 stars
This is a “set it and forget it” soup—only takes an hour and tastes like you cared. Great for meal prep. Also, low-sodium broth worked fine even with the parmesan optional.

  73. User avatar emilio.kovacek1962 says:

    3 stars
I’m skeptical about the potato + pasta combo because it can turn into mush. But mine held together okay. Still, I’d reduce simmering time by a few minutes.

  74. User avatar lavern.nitzsche says:

    1 star
This recipe looks good but I’m not into vegetables that much. Can I just dump a can of soup instead?

  75. User avatar cinderella.gerlach says:

    4 stars
Good base recipe! I think 1 cup pasta might be a bit much depending on how thick you like it. Next time I’ll use 3/4 cup or cook the pasta separately.

  76. User avatar smartestRedditor says:

    3 stars
Not bad, but mine came out kinda bland. I think I needed more Italian seasoning and probably a pinch more salt at the end. The veggies were tender though, so that part was right.

  77. User avatar rima.streich1993 says:

    4 stars
Flavor was solid, but my pasta got a little soft because I simmered too long. Next time I’ll add pasta later or cook it a minute less. Still tasty!

    1. User avatar viola.dooley says:

      5 stars
Glad you still liked it! Yeah, minestrone + pasta is tricky—if you simmer too long, the ditalini turns to mush. I usually add it right near the end too.

    2. 3 stars
Wouldn’t “simmer 20 minutes” + “another 10” basically make it soup all day? Next time I’d just cook the pasta separately and stir it in when serving. Soft pasta ruins it for me.

Honestly, this hits. My whole family went back for seconds. I used low-sodium broth and it didn’t taste “diet” at all. Great weeknight meal.

I followed it exactly and mine turned out kinda bland. Maybe I needed more salt? The veggies were good but it didn’t taste very “Italian” to me.

Pretty good, but 20 minutes simmer for the beans feels a little short. I like mine softer, so I ended up simmering longer. Still ate it all though.

Made it today and it turned out really good, but my pasta got a little soft. Next time I’ll maybe add the pasta for only 8-9 minutes instead of the full 10. Flavor was on point though!

So glad you liked the flavor! Pasta getting soft is super common in minestrone—8–9 minutes sounds perfect. I usually add pasta closer to the end and keep it at a gentle simmer (not a rolling boil).

  82. 4 stars
I followed the steps mostly, but I used cannellini beans by accident and it still worked. Only thing: 1 cup pasta felt like not enough for my pot, so next time I’ll add a bit more.

  83. 2 stars
It was ok… but I ran out of zucchini so I used green beans and idk it changed the taste. Still edible tho 😅

The pasta timing confused me a bit—mine got a little too soft after simmering. I’ll cook pasta separately next time and stir it in at the end so it stays firm.

Totally get that—when pasta simmers too long it turns mushy. Cooking it separately and adding at the end should keep it nice and firm. Great idea!

Yeah I had the same issue once. I think 10 minutes is too much depending on the ditalini size. Next time I’ll only do like 6-7 min or add it near the end—thanks for the tip!

I’m not sure about the zucchini here—mine kind of disappeared after simmering. Still tasted good, just looked more like a veggie stew than minestrone. Might use it a bit later next time.

Took me longer than expected because I diced everything a bit too slowly 😅 But flavor was really solid—kidney beans + tomatoes is a great combo. I’ll definitely cook this again.

Glad the flavors came through! Kidney beans + tomatoes really does slap 😄 Next time I’m stealing your “cook it again” energy.

This is minestrone? Looks more like veggie soup with pasta. Still, it’s easy enough and my kids ate it, so… yeah.

I’m not a huge soup person, but this one was easy and didn’t taste “health food.” My kid even went back for seconds. Great weeknight meal.

Totally agree—“health food” flavor is the worst. This sounds like it actually tastes like real soup. Gonna try it this week!

    2. 4 stars
Kid went back for seconds?? Mine would be like “soup again?” 😅 Also, I’m not sure about the pasta timing—won’t it get mushy after 10 min simmer? Maybe cook pasta separately?

I accidentally used canned “italian diced tomatoes” (with herbs) and it still worked. Strange but good. Maybe I’m the problem 😅

    1. User avatar basementDweller says:

Honestly that’s not strange at all—Italian diced tomatoes probably just boosted the seasoning. Mine always turns out better when I “accidentally” improvise 😄

Made this tonight and it was super cozy. I used ditalini like the recipe and the texture was perfect. The parmesan on top really ties it together. Will definitely make again!

Honestly, it’s kinda bland unless you go heavier on the seasoning. I used 1 tsp salt but should’ve done more (and maybe some chili flakes). Otherwise it’s a nice base.

  93. User avatar Isabell Streich says:

Pretty solid base recipe. I followed it mostly but I used cannellini beans instead of kidney. Next time I’ll use ditalini like suggested because the pasta soak makes it thicker in a good way.

  94. User avatar anonymous_hacker says:

Not bad, but I’m skeptical about adding pasta for only 10 minutes. Mine absorbed a ton of broth and got thick. Maybe I should add extra liquid.

10/10. I also threw in some chopped kale because I had it, and it worked perfectly. The whole kitchen smelled amazing.

This turned out super cozy and hearty—exactly what I wanted. I added a little extra broth because the pasta soaked it up, but the flavor was great. Parmesan on top was a win.

  97. User avatar alphonse.beer says:

My soup came out too thick—probably because my diced veggies were larger than the recipe. Texture was okay though, and the taste is solid. Next time I’ll measure veg better.

    1. User avatar krissy.schamberger says:

Mine did that too but I think it was the pasta. Like I used regular spaghetti by accident (oops) and it turned into glue 😅 Taste was still good though. Maybe try less pasta next time?

    2. 5 stars
Ahhh yep—larger dice = more starch/less broth per bite, so it thickens up. Good call on measuring next time. Also, pasta can soak up liquid fast; you might add a splash of broth if it gets too hearty.

This reminds me of what my nonna made—except she never measured anything lol. I love that it’s hearty and uses pantry staples like canned tomatoes/beans.

Aww I love that—nonna cooking is the best kind of science 😄 And yes pantry-staple minestrone hits the spot every time.
