Ingredients
  

  • 1 1/2 cups all-purpose flour for the tart crust
  • 1/2 cup unsalted butter chilled and diced
  • 1/4 cup sugar for the crust
  • 1/4 teaspoon salt for the crust
  • 4 egg whites for the meringue
  • 1 cup sugar for the meringue
  • 1/2 teaspoon vanilla extract for the meringue

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix the flour, sugar, and salt, then add the diced butter and mix until the dough is crumbly.
  • Press the dough into a tart pan and bake it for 15 minutes.
  • In a clean bowl, beat the egg whites until soft peaks form.
  • Gradually add sugar and vanilla extract to the egg whites and continue beating until stiff peaks form.
  • Spread the meringue over the baked crust and return to the oven for another 30 minutes or until the meringue is golden brown.

      I think stiff peaks is like when its super hard. I just do it till it looks fluffy, maybe not the best but hey, it works for me.

      Stiff peaks means when you beat the egg whites until they form peaks that don’t droop. Just keep mixing after soft peaks until they’re really firm! Don’t worry, it’s tricky at first.

    Idk if it’s me but I couldn’t get “stiff peaks” after adding all the sugar. It stayed kind of glossy and would not hold shape. I think I under-whipped or my bowl wasn’t clean. Not great looking, but it was still sweet.

    I followed the steps pretty closely. Soft peaks to stiff peaks took longer than the recipe said (maybe my mixer is weak). Still delicious though—sweet, light, and not overly eggy.
