  • 1 and 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs room temperature
  • 1/2 cup milk room temperature
  • 1 teaspoon vanilla extract
  • 8 ounces mascarpone cheese softened
  • 1 cup heavy cream chilled
  • 2 tablespoons powdered sugar
  • 1 cup fresh strawberries chopped

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Gradually fold in the flour alternating with milk, beginning and ending with flour. Mix until just combined.
  • Fill cupcake liners 2/3 full with batter and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • For the frosting, beat the mascarpone cheese, chilled heavy cream, and powdered sugar together until thick and spreadable.
  • Once cupcakes are completely cool, spread or pipe the mascarpone frosting on top.
  • Garnish with chopped fresh strawberries before serving.

      Hmm that sounds like maybe they were underbaked or the batter got overmixed. I’ve had the “gummy center” thing happen when I only bake to the liner edges and not the true center—now I usually go closer to 20 minutes and check with a toothpick + a slight spring back. Also make sure your mascarpone/frosting isn’t warming up too much before you put it on.

If the tops sank, it might also help to not overmix after the flour and to make sure you’re filling to about 2/3. Did you check with the toothpick right at 20 min or wait for closer to 22?

      Yeah, I can see that—this frosting has a full 2 tbsp powdered sugar on top of the mascarpone/cream, so if your berries are extra sweet it adds up. I usually reduce it to 1 tbsp and it’s perfect for my taste. Also “thick” can be hit or miss depending on how warm the mascarpone is.
