Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese grated
  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 cup basil chopped, fresh
  • 4 cloves garlic minced
  • Salt and pepper to taste

Instructions
 

  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
  • Add the chicken broth and bring to a simmer. Cook for 5 minutes to reduce the broth slightly.

    I followed the steps and the chicken came out dry. Maybe my breasts were thick, but 10-15 minutes in the sauce seemed like too much. Flavor is good though—would try again but with thinner cutlets or shorter cook time.

    Not gonna lie, it’s tasty, but I found it kinda salty even with “salt to taste.” Also my sauce got thick too fast, like almost immediately after adding the Parmesan, so I had to loosen it with a splash more broth.

      Totally get that—Parmesan can sneak in a lot of salt. Next time I’d try reducing the added salt (or wait to salt the sauce until after the cheese melts). Also, thickening that fast usually means too high heat; I keep it on low once the cream/Parmesan go in.
