I followed the steps and the chicken came out dry. Maybe my breasts were thick, but 10-15 minutes in the sauce seemed like too much. Flavor is good though—would try again but with thinner cutlets or shorter cook time.

Not gonna lie, it’s tasty, but I found it kinda salty even with “salt to taste.” Also my sauce got thick too fast, like almost immediately after adding the Parmesan, so I had to loosen it with a splash more broth.
Oof, mine did the same thing once—once the parm hits, it’s like instant glue 😅 I started adding Parmesan gradually and whisking, and I simmer way gentler. A splash of broth fixes it, so you’re not wrong.
Totally get that—Parmesan can sneak in a lot of salt. Next time I’d try reducing the added salt (or wait to salt the sauce until after the cheese melts). Also, thickening that fast usually means too high heat; I keep it on low once the cream/Parmesan go in.
