Ingredients
  

  • 1 cup basmati rice
  • 4 cups milk
  • 1 cup mango pulp
  • 1/2 cup sugar
  • 1/4 cup pistachios chopped
  • 1/4 tsp cardamom powder
  • pinch saffron strands
  • 2 tbsp rose water
  • 2 tbsp pistachios for garnish, chopped

Instructions
 

  • Wash the basmati rice and soak it in water for 30 minutes.
  • Drain the rice and grind it into a coarse paste.
  • In a large saucepan, bring the milk to a boil.
  • Add the ground rice paste to the boiling milk and cook on low heat, stirring continuously.
  • Once the mixture starts to thicken, add the sugar, mango pulp, cardamom powder, saffron strands, and rose water.
  • Continue cooking on low heat until the mixture reaches a pudding-like consistency.
  • Remove from heat and let it cool.
  • Once cooled, pour the phirni into individual serving bowls and refrigerate for at least 1 hour.
  • Garnish with chopped pistachios before serving.

    I tried something similar before and the rice paste can get lumpy if you don’t stir constantly. The instructions say stirring continuously, so I’m hopeful this will work.

      Phirni is my weakness 😅 but I’m not sure about 4 cups milk with just 1 cup rice—will it thicken enough? Maybe I’ll cook it longer. Still sounds really tasty!

    I followed the steps but it didn’t thicken like pudding—more like milk soup 😭. Maybe my heat was too low? Or the rice paste was too coarse. Flavor was still okay.

      10 mins? That’s not long enough for anything on a stove! It should thicken up doing low heat for at least 20 mins, maybe more. Did you even read the whole recipe? 🧐
