Ingredients
  

  • 1 cup whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/4 cup limoncello store-bought or homemade
  • 2 tablespoons lemon zest freshly grated

Instructions
 

  • In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until just steaming, but not boiling.
  • In a separate bowl, whisk together the sugar and lemon zest.
  • Gradually stir the sugar mixture into the milk mixture until the sugar is fully dissolved.
  • Remove from heat and stir in the limoncello.
  • Chill the mixture in the refrigerator for at least 2 hours until very cold.
  • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  • Transfer the gelato to an airtight container and freeze for at least 2 hours or until firm before serving.

      Don’t worry, it happens! Make sure to really chill the mix before churning. Your ice cream maker might need more time too. You’ll get it right next time!

      I think you didn’t churn it long enough. That could make it icy. Gelato should be creamy! Also, did you use enough cream? That could be the problem.

    3 hours in the fridge? nah. Mine didn’t set right and tasted watery. Also my machine kinda sucks. Recipe seems fine but I think the proportions are off for my setup.

      Sorry that happened 😕 I’ve found it needs to be *really* cold before churning—like closer to 4+ hours in the fridge. Also watery can mean it wasn’t chilled enough or the machine didn’t churn long enough.

      Heating the milk helps dissolve the sugar better, trust me on this! As for limoncello, you can skip it, but it’ll taste way different. Just use lemon juice instead if you want.

      Totally get you—“just steaming” is vague. I go by tiny bubbles at the edge and then I immediately pull it off. Otherwise it can thicken up like you said.

    I tried it and it didn’t set right. I think my ice cream maker is broken or something because it was still liquid-ish after freezing. The flavor was good though, so I’m not mad.

      Ugh, that’s so frustrating 😕 If it stayed liquid-ish, it’s usually either the base wasn’t cold enough before churning (Step 5), or the churn time/freezer setup wasn’t actually getting it cold enough. Since the flavor was good, the recipe part likely worked—try chilling overnight next time and make sure your ice cream maker bowl is fully frozen before use.
