I like the ingredients, but why flour and sugar ratio like this? I was hoping for a more “shatter” texture. Mine stayed a little chewy, not crisp like in restaurants.
That chew usually comes from a batter that’s a bit too thick/undercooked or cookies not spread thin enough. For more “shatter,” try spreading them even thinner than a 4-inch circle—like 3.5–4.5 inches depending on your tablespoon. Also bake right to deeper golden (8 minutes can be too soft). My first batch was chewy too until I left them closer to 10 minutes and worked fast to shape. The flour+sugar combo here is pretty standard for fortune cookies—crisp comes more from thinness and browning than changing ratios.
