245°F is too precise lol. I don’t have a thermometer so I just went by color and regret—still kinda tasty, just not caramel candy. Would not repeat.
I actually don’t think you need the exact number—mine always comes out fine around the firm-ball stage. But color alone is risky. Next time maybe do the cold-water test so it sets better.
