That sounds like the cheese culprit. Low-fat “cheese food” usually won’t melt as smoothly as brie or Swiss—more like it softens instead of fully melting. Next time, try a real melting-friendly slice or grate it thinner.
I dunno… I’ve made similar paninis and mine usually melted fine even with cheaper cheese. Did you preheat long enough? Also 3-5 minutes might be short if your pan wasn’t hot. Maybe turn the heat up a bit?
