Guava and Cardamom Galette

August 8, 2023

Guava and Cardamom Galette is a rustic, yet elegant dessert that combines the tropical sweetness of guava with the warm, aromatic flavor of cardamom. This simple, open-faced pastry offers a perfect balance of flaky crust and luscious fruit filling, making it an ideal treat for any occasion. The cardamom enhances the sweetness of the guava, while adding a fragrant, spiced note that elevates the galette to something truly special.

The beauty of a galette lies in its simplicity. Unlike traditional pies, a galette has a free-form crust, which gives it a laid-back, homemade feel. The dough is buttery and crisp, providing the perfect contrast to the soft, juicy guava filling. The fruit is thinly sliced, so each bite offers a burst of guava’s natural sweetness, balanced with the exotic spice of cardamom.

To make the filling, ripe guavas are peeled, cored, and sliced, then gently spiced with ground cardamom and a touch of sugar to enhance their sweetness. The fruit is then arranged in the center of the rolled-out dough, leaving a border around the edges. Once folded over, the galette is baked until golden and crisp, with the fruit filling becoming tender and caramelized in the oven.

The result is a warm, inviting galette with a flaky, buttery crust and a soft, fragrant guava filling. The cardamom adds a subtle depth of flavor, making each bite a delightful balance of sweet and spicy.

Guava and Cardamom Galette is perfect for a casual dessert or a more refined gathering. Serve it warm with a dollop of whipped cream, a scoop of vanilla ice cream, or even a drizzle of honey for added richness. Its versatility makes it a lovely choice for brunch, afternoon tea, or as a dessert for a family dinner.

In essence, this galette is a celebration of simple, fresh ingredients and the beauty of rustic pastry. With its sweet guava filling and the unique, fragrant touch of cardamom, it’s a delightful dessert that offers comfort, warmth, and a little touch of exotic flair.

A delicious and aromatic dessert made with guava and cardamom.
Servings 8 people
Prep Time 30 minutes
Cook Time 50 minutes
Total Time 1 hour 20 minutes

Ingredients

  • For the Crust:
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup butter cold, unsalted, cut into small pieces
  • 3-4 tablespoons ice water
  • For the Filling:
  • 4-5 guavas ripe, peeled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon vanilla extract
  • 1 egg beaten (for egg wash)
  • 1 tablespoon turbinado sugar for sprinkling

Instructions

  • In a large bowl, mix together the flour, sugar, and salt for the crust. Add the cold butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs. Add the ice water, one tablespoon at a time, and mix until the dough comes together.
  • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer the dough to the prepared baking sheet.
  • In a small bowl, mix together the sugar, cornstarch, cardamom, and vanilla extract for the filling. Spread this mixture evenly over the center of the dough, leaving a border of about 2 inches.
  • Arrange the sliced guavas on top of the sugar mixture. Fold the edges of the dough over the filling, pleating as necessary.
  • Brush the edges of the dough with the beaten egg wash and sprinkle with turbinado sugar.
  • Bake the galette for 40-50 minutes, or until the crust is golden brown and the filling is bubbling.
  • Remove from the oven and let cool for a few minutes before serving. Enjoy!

Good but I think I used too much cinnamon instead of cardamom. Oops! 😅

    1. 4 stars
Cinnamon sounds interesting! I’ve made that mistake before too. It might actually taste good! 😄

    2. 2 stars
Wait, you used cinnamon instead of cardamom? That’s like switching apples for oranges! Good luck, I guess… 🙃

  2. 3 stars
Cardamom is overpowering if you’re not careful. I’d start with 1/2 tsp maybe, unless you really love that flavor.

    1. 5 stars
Totally agree—cardamom can go from “nice” to “perfume” real fast. I do about 1/2 tsp too and it’s perfect.

  3. 5 stars
I didn’t know what to expect, but this was incredible! Cardamom really makes a difference.

    1. User avatar valentine.graham30 says:

      5 stars
I’m glad you enjoyed it! Cardamom always adds such a nice flavor. Did you try any other spices?

  4. User avatar bao.ritchie61 says:

Not gonna lie, I messed up the crust once and it was super crumbly. But the “ice water a tablespoon at a time” tip is solid. Also, egg wash makes it look fancy.

I don’t know about guavas… wasn’t thrilled with the outcome. Maybe I did something wrong? 🤷‍♂️

  6. User avatar Berry Johns says:

    4 stars
I like the concept, but 4-5 guavas feels like a lot for 1/4 cup sugar + cornstarch. I’m worried it’ll be watery. Still, I’ll try it and maybe adjust cornstarch if needed.

  7. User avatar brooks.kiehn24 says:

    2 stars
I had high hopes, but it turned out super soggy. Followed the recipe to the letter!

    1. 3 stars
Maybe you used too much guava or didn’t let it bake long enough? It can get soggy if there’s too much moisture!

  8. 4 stars
I’m a little skeptical about 4-5 guavas—depends how big they are, ya know? But the cardamom and vanilla seem balanced. I’ll weigh the fruit next time.

  9. 2 stars
Eh, not as good as I thought it would be. The dough didn’t turn out well for me.

    1. 3 stars
I had the same problem! The dough was tough for me too. Maybe less butter next time? 🤔

    2. User avatar tesha.bergstrom says:

      4 stars
Sorry to hear that! Dough can be tricky sometimes. Did you measure the butter and water accurately? It can really make a difference.

  10. User avatar lyla.shanahan says:

Had to look up what a galette is. I think I did it wrong, my crust fell apart. 😞 Maybe I should just stick to cookies.

  11. 2 stars
Step 6 confused me. What is ‘pleating’? Help!

  12. 2 stars
Too much sugar? Idk… I like sweet but 1/4 cup plus turbinado feels like a lot. Might cut it and see.

  13. User avatar beau.hettinger94 says:

    4 stars
I tried it and it was pretty good, but I used apples instead of guava – oops! My bad. I think it still worked out okay tho.

  14. User avatar dana.kunde39 says:

This recipe is way too complicated for me. I wish I could just use store-bought crust.

  15. User avatar Princess Ruto says:

    4 stars
Not gonna lie, I’ve never worked with guava before. But this recipe looks pretty straightforward, so I’m willing to try. If it fails, at least it’ll be tasty.

  16. 1 star
This recipe is too complicated. Can’t I just buy a pre-made crust?

    1. 2 stars
Nah, I prefer store-bought. Who has time to make crust? This seems like way too much work for a dessert. Just grab a frozen one, lol.

    2. User avatar fanny.nolan45 says:

      4 stars
I get it, making your own crust can be a pain. But trust me, it tastes so much better! You’ll be surprised at the difference. Plus, making it can be fun!

  17. User avatar Wonko the Sane says:

    4 stars
never liked guava, but this looks pretty good. might give it a try once.

  18. User avatar elva.mayert16 says:

Super easy and pretty. I had to refrigerate longer than 30 mins because I got distracted, but it still turned out lovely.

  19. User avatar joselyn.ebert50 says:

    2 stars
I tried this recipe, but my crust didn’t turn out right. It was too crumbly and fell apart. What did I do wrong?

  20. 2 stars
Not sure about cardamom in a dessert like this. It’s a strong flavor—could overwhelm the guava if you’re heavy-handed.

Easy recipe! Video tutorials are better tho.

  22. User avatar randell.kuhn1967 says:

I don’t even know what a galette is, but this recipe sounds fancy. My mom never used cardamom. Is it really necessary? 😅

  24. User avatar sue.anderson says:

    5 stars
This sounds dangerously good. Cardamom + guava is such a vibe, and the turbinado sugar on top would make the crust extra crunchy. I might add a little lime zest just because I can 😅

  25. User avatar meryl.wehner2017 says:

I think cardamom is overrated, didn’t really like the taste with guavas. Made my family gag a little LOL.

  26. 4 stars
I made something similar once and it was a mess until I chilled the dough longer. I’ll try the 30 minutes but maybe I’ll do like 1 hour this time.

  27. User avatar shea.witting says:

Absolutely delish! I served it at a party and everyone loved it! So easy to make too.

    1. User avatar donnell.kunze says:

I dunno, it sounds good, but I think guavas are too mushy for me. How do they even taste? They kinda look like oversized pears?

  28. 4 stars
I’m not too good with baking, but this was easy enough to follow. The result was a bit uneven but still yummy! Nice recipe. 4 stars.

    1. User avatar louie.beatty says:

Glad you found it easy! Baking can be tricky sometimes, but it’s all about practice. Your galette sounds delicious! 🍰

    2. User avatar alfonzo.skiles52 says:

      3 stars
Uneven? Sounds like you just need more practice! And guavas? I thought you were suppose to use apples for a galette? 🤔

  29. User avatar jae.hermiston1998 says:

I followed the recipe but my dough was too crumbly. What did I do wrong? 😩

    1. User avatar kati.ankunding42 says:

      4 stars
I’m sorry to hear that! It sounds like you might not have added enough ice water. Try adding a little more next time, just a tablespoon at a time! 😊

    2. User avatar travis.bergnaum64 says:

      3 stars
I dunno, but mine was crumbly too! Maybe the butter was too warm or somethin? 😕

  30. User avatar jeramy.mckenzie says:

Wait, guavas? Isn’t that kinda rare? I hope it tastes good, but idk if my family would like it. 🤔

  33. User avatar joan.altenwerth1958 says:

    2 stars
Too much sugar for me! I thought it’d be healthier. Maybe I’ll skip some next time. 🤷‍♂️

  34. User avatar patrick.lynch says:

    4 stars
Great flavor! I added more sugar cause I like it sweet. Yummy!

  35. User avatar houston.schmitt says:

    3 stars
Cardamom amount seems a bit low? 1 tsp is okay, but I like it stronger. Also, do you really need vanilla with guava? I’m skeptical.

    1. User avatar janie.hills1973 says:

      5 stars
Totally get that! I went with 1 tsp cardamom for a more “warm” background flavor—if you like it stronger, bump it to 1 1/2–2 tsp. Just taste the filling mix before you assemble.

  36. User avatar emilia.von1994 says:

    5 stars
Easier than I thought! I used frozen guavas tho and it still turned out yummy! 10/10 would recommend.

  37. User avatar cary.parisian93 says:

    5 stars
This was so easy and delicious! Can’t believe I made it myself!

  38. User avatar broderick.wiza says:

I replaced guava with apple, turned out great! Just as good! 🙂

  39. User avatar greg.gottlieb1987 says:

    2 stars
I don’t get what the big deal is. Guava is too mushy, and the cardamom flavor is kinda weird. Did I do something wrong?

    1. User avatar charissa.cassin says:

      4 stars
I think guavas can be mushy, but maybe yours just weren’t ripe enough? Cardamom is a unique flavor, not everyone likes it. Maybe try adjusting the spices next time!

  40. 4 stars
    Looks good!!

  41. User avatar Vroomfondel says:

    3 stars
I followed it exactly and it kinda collapsed when I folded the edges. Maybe my guavas were too watery? Also I forgot to refrigerate the dough for the full 30 minutes… so yeah, that’s on me.

    1. User avatar rickiestmorty says:

      4 stars
I did mine like this once and mine also kind of “leaked” where I folded. I think it was either the guavas or not enough thickening—cornstarch should help but if the fruit juices are a lot, it won’t fully set. Did you slice them thick or thin?

    2. User avatar rickiestmorty says:

      5 stars
Oof, yeah—watery guavas will absolutely mess with the filling and make the crust lose structure. Also letting the dough sit warm can make it collapse when you fold. Next time try drier fruit (or cook the slices a couple minutes first) + 30 min chilling like you said 👍

  42. User avatar jordon.cormier24 says:

    3 stars
I’m skeptical but excited. Also 1 egg wash? I’m guessing that’s for brushing the crust edges—yep, that part makes sense.

  43. User avatar carol.kuhic1957 says:

    3 stars
Guavas?? I’ve never even heard of those before! Can I use apples instead? 🤔

      4 stars
Thanks for the warning! I almost did that with my first batch. Glad it still tasted good though! 🍽️

    2. 3 stars
Crunchy? More like charcoal! 😅 But hey, if it tastes good, who cares! Just gotta keep an eye on it next time.

  49. 5 stars
Galette? More like gal-YES! This is a game changer for dessert. I didn’t know such a treat existed! 🌟🌟🌟🌟🌟

Why use guava? Can’t you just use apples? Seems easier. 🤔

    1. User avatar sammie.kshlerin83 says:

Guava gives it a unique flavor that apples just can’t match. You should try it! 😊

I tried making this galette, but my filling leaked everywhere. Do you have any tips?

    1. User avatar Draugr Death Overlord says:

      4 stars
Make sure to use enough cornstarch in the filling! It really helps to thicken it up and prevents leaks.

Just don’t overfill it next time. I learned the hard way with my pies. Less is more!

I had the same trouble once. I think it’s all about cold ingredients and not working the dough too much. Keep at it!

    2. 4 stars
It sounds like you might have overmixed, that’s a common issue. Try less mixing next time, and maybe use a pastry cutter! Good luck!
