Ingredients
  

  • 3 medium beets boiled and peeled
  • 2 medium oranges peeled and segmented
  • 1 piece grapefruit peeled and segmented
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons olive oil extra virgin
  • 1 tablespoon honey
  • 1 tablespoon lemon juice freshly squeezed

  • to taste black pepper freshly ground
  • 1/4 cup walnuts toasted and roughly chopped

Instructions
 

  • Boil the beets until tender, about 30 minutes. Cool, peel, and slice into wedges.
  • In a large bowl, combine beet wedges with orange and grapefruit segments.
  • In a small bowl, whisk together olive oil, honey, and lemon juice. Season with salt and black pepper to taste.
