Ingredients
  

  • For the Crust:
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup butter cold, unsalted, cut into small pieces
  • 3-4 tablespoons ice water
  • For the Filling:
  • 4-5 guavas ripe, peeled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon vanilla extract
  • 1 egg beaten (for egg wash)
  • 1 tablespoon turbinado sugar for sprinkling

Instructions
 

  • In a large bowl, mix together the flour, sugar, and salt for the crust. Add the cold butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs. Add the ice water, one tablespoon at a time, and mix until the dough comes together.
  • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer the dough to the prepared baking sheet.
  • In a small bowl, mix together the sugar, cornstarch, cardamom, and vanilla extract for the filling. Spread this mixture evenly over the center of the dough, leaving a border of about 2 inches.
  • Arrange the sliced guavas on top of the sugar mixture. Fold the edges of the dough over the filling, pleating as necessary.
  • Brush the edges of the dough with the beaten egg wash and sprinkle with turbinado sugar.
  • Bake the galette for 40-50 minutes, or until the crust is golden brown and the filling is bubbling.
  • Remove from the oven and let cool for a few minutes before serving. Enjoy!

    Cardamom is overpowering if you’re not careful. I’d start with 1/2 tsp maybe, unless you really love that flavor.

      Totally agree—cardamom can go from “nice” to “perfume” real fast. I do about 1/2 tsp too and it’s perfect.
