Grilled Cheese with Brie and Prosciutto

January 31, 2025

Grilled cheese with brie and prosciutto takes the traditional comfort food to a whole new level, combining creamy brie cheese and savory prosciutto between two slices of perfectly toasted bread. This decadent sandwich offers a delightful mix of textures and flavors, from the melty, smooth cheese to the crispy, salty prosciutto. It’s the ideal choice for anyone craving a gourmet version of the beloved grilled cheese.

The key to making this elevated grilled cheese is the choice of ingredients. Brie, with its rich, creamy texture and mild, slightly nutty flavor, melts beautifully when heated. It pairs perfectly with prosciutto, the thin, dry-cured Italian ham that adds a savory, slightly salty note to the sandwich. The balance between the creaminess of the brie and the saltiness of the prosciutto is simply irresistible.

To prepare, start by selecting a hearty bread, such as sourdough or a rustic baguette, which can hold up to the rich filling without becoming soggy. The bread is buttered generously on the outside, ensuring a golden, crispy crust as it grills. Inside, a layer of sliced brie is placed on one side of the bread, followed by a few slices of prosciutto. The sandwich is then pressed together and cooked in a hot pan until the bread is crisp and golden, and the brie has melted into a luscious, gooey filling.

For added flavor, you can customize the sandwich with extras like a drizzle of honey for sweetness, a sprinkle of fresh thyme for an herbaceous note, or even a handful of arugula for a peppery crunch. These additions add complexity and elevate the simple ingredients into something truly special.

Grilled cheese with brie and prosciutto is a perfect lunch, snack, or even a quick dinner when paired with a side salad or a bowl of tomato soup. It offers a satisfying, rich flavor experience that’s sure to delight anyone who enjoys the combination of savory and creamy flavors.

I don’t get why people put fancy stuff in grilled cheese. Just stick with the classic. This recipe is too complicated.

Took me a while to find brie at my store, but it was worth it! My kids loved it too. Will make again!

This is the best grilled cheese I’ve ever had! The brie and prosciutto combo is genius! 😍

I totally agree! Brie and prosciutto are a match made in heaven. Can’t wait to make this!

  4. 2 stars
I don’t get why people rave about brie. It’s just gooey cheese? I prefer cheddar.

    1. 4 stars
Gooey cheese is the best part! But I guess everyone has their own taste. Just don’t knock it till you try it melted! 😉

    2. 5 stars
I mean, I get it. Brie can be a bit much for some people! But when it’s melted, it’s like heaven! 😍

  5. User avatar minh.doyle49 says:

This was yummmm! Never thought brie and prosciutto together would taste this good!

  6. 3 stars
Not bad! But I wish it said to cover the pan or press it with a spatula—mine puffed a little and wasn’t as evenly melted.

    1. 3 stars
Huh, mine melted fine without doing any of that. I’d say try cooking a little lower heat so the cheese has time to melt before the bread browns. Otherwise cover might steam it weird.

    2. User avatar carmelo.stamm says:

      5 stars
Good point—mine also puffs a bit if I don’t press it. Next time I’ll gently press with a spatula or even cover the pan to help it melt more evenly. Thanks!

I’m skeptical about brie in grilled cheese because it can be watery, but this recipe actually worked. Sliced brie melts nicely and doesn’t leak much.

    1. User avatar Flame Atronach says:

I was worried too—brie can totally get weird and watery. But the “slice brie” + medium heat angle makes sense. Glad it didn’t leak!

Hmm brie is tricky. Mine always leaks if I use too much. Maybe I should try 50 grams like you said and not crank the heat too high. Solid tip.

I think I buttered the wrong side at first 😅 still came out tasty though. Would definitely make again, just less mess next time.

    1. User avatar michale.will61 says:

      4 stars
Maybe the mess is just part of the ritual 😅 Next time toast it a little longer on the second side so the brie melts more. Brie can be sneaky.

    2. 5 stars
Lol the butter-on-the-wrong-side struggle is real 😂 Still, if it came out tasty, that’s a win! I always try to double-check before it hits the pan.

YUM! Defo making this again, easy and fancy.

I dunno, brie with prosciutto? Seems a bit fancy for grilled cheese… isn’t that like overkill? 🤔

    2. User avatar Saruman the White says:

I tried it too! The brie and prosciutto really work well together. So rich and yummy! Definitely a keeper! 🌟

Confession: I used mayo instead of butter. Not authentic, I know, but the outside was super crispy. Still, the flavor was a bit off compared to what I expected.

  14. User avatar Barry Manilow says:

    3 stars
Why use butter? Olive oil is way healthier. Also, prosciutto is kinda expensive. Can use ham instead.

  15. User avatar carlos.kautzer85 says:

    5 stars
Brie! Woah! I only tried it once! Now I’m here and a total fan. What even is prosciutto tho?

  16. User avatar justine.koelpin says:

Pretty simple, but 4-5 minutes per side seems short for my pan. It took longer to get golden. Once I cooked it properly though, the sandwich was great.

    1. User avatar jay.stokes84 says:

      5 stars
Totally hear you—4–5 min/side can be quick depending on pan thickness and how hot “medium” runs. I usually go by color + the brie melting, not the clock.

  17. User avatar deana.ortiz2021 says:

    1 star
Brie is overrated. Why would you wanna spend so much on cheese when regular cheddar is cheaper and taste better? Just saying!

  18. User avatar aldo.hettinger says:

    5 stars
Wow. 10/10 would eat again. Also the smell when it’s cooking… unreal.

  19. User avatar murray.cole22 says:

    4 stars
Pretty tasty, but I think 4-5 minutes per side was a bit optimistic for my pan. Took closer to 6-7 to get that deep golden. Still worth it.

    1. User avatar keith.legros45 says:

      5 stars
Good point! My pan runs hot too, so I usually watch color more than the timer—6-7 min makes sense if your heat is gentler.

    2. User avatar sebastian.denesik77 says:

      4 stars
4-5 minutes per side sounds fast… I’d just turn the heat lower and cook longer, otherwise the bread gets dark before the brie melts. I learned that the hard way 😅

  20. User avatar Kasandra Connelly says:

    4 stars
Didn’t think brie would work on a sandwich but wow, I was wrong! But would it be good with ketchup?

  21. User avatar Dwarven Centurion says:

Epic meal!! Just what I needed after a long day! Will make again for sure.

  22. User avatar maurine.kirlin2009 says:

Brie + prosciutto is such a vibe. I didn’t have prosciutto so I used thin sliced ham and it was still really tasty, just a little less fancy.

  23. 4 stars
I think the skillet heat should be a touch higher at the beginning, otherwise the prosciutto dries. My slices were thin but still curled a bit. Still good!

    1. User avatar jefferey.franecki33 says:

      5 stars
Totally agree—when I keep it at medium right away, the prosciutto gets a little sad. I usually bump it slightly higher to start, then drop it so the cheese melts without burning the bread.

    2. 3 stars
Wait… medium heat? I feel like mine always dries out even if I’m cooking it 3 minutes. I think my slices were thinner than yours though—still tasted good, just not as fancy. Maybe next time I’ll crank it a bit.

  24. User avatar herma.gibson says:

    4 stars
Prosciutto can be salty already, so I did less butter and it still browned nicely. Tasted balanced, not too heavy.

  25. User avatar Mikel Bradtke I says:

    5 stars
Super easy recipe and SO TASTY! I made it for lunch and I’m in love. Brie is everything!

  26. User avatar brady.bradtke says:

    3 stars
Gotta say, it was alright but I burnt the bread. Need to work on my skillet skills!

    1. User avatar Frankie and Benjy says:

      4 stars
Don’t worry about it! Practice makes perfect. Just keep an eye on the skillet next time. 😊

    2. User avatar Kenna Senger says:

Burnt bread? That sounds like a disaster! How’d you manage that? 🤔

  27. User avatar fiona.cummerata says:

This tastes fancy for like… almost no effort. I served it with tomato soup and it was restaurant-level. Would recommend to anyone hungry and lazy.

  28. 5 stars
This was insanely good. The brie gets all melty and the prosciutto makes it taste fancy without trying too hard. 10/10 grilled cheese vibes.

  29. User avatar monte.schmeler64 says:

Tried it for lunch and it was a hit. I added a tiny bit of cracked pepper and it made the flavor pop even more. Super easy, too.

    1. User avatar ShanksOnePiece says:

      5 stars
Love that idea about the cracked pepper! 😄 I’ll try it next time—brie + prosciutto already has so much flavor.

  30. User avatar sanford.weber2011 says:

    5 stars
Not gonna lie, I was skeptical about brie in grilled cheese. Why did it work so well?? The melt is crazy. I’d make this again for sure.

  31. User avatar elijah.stark says:

    2 stars
I dunno… it seems like too much for a grilled cheese? Just butter and plain cheese is what i like.

    1. 4 stars
I get that! Sometimes simple is best. But brie and prosciutto is sooo good together! You should try it at least once!

  32. 3 stars
Isn’t prosciutto like super salty? I think I would prefer turkey or bacon instead.

  33. User avatar Kurtis Hansen says:

    3 stars
I followed it pretty closely but my skillet wasn’t hot enough, so the bread dried out before the cheese really melted. Next time I’ll crank the heat slightly.

  34. User avatar Restless Draugr says:

    4 stars
Pretty solid combo. The sourdough flavor really stands up to the brie. Next time I might add a touch of black pepper.

  35. User avatar pok.hayes20 says:

    4 stars
I used regular bread because that’s what I had, still came out tasty. I’d just recommend medium-low heat so the bread doesn’t brown too fast before the cheese melts.

  36. User avatar david.johns says:

    4 stars
Brie + prosciutto is a classic, but 4–5 minutes per side felt short for me. I ended up closer to 6-7 minutes and it was worth it.

    1. User avatar alfredo.mann says:

      5 stars
Totally agree—brie needs a little extra time to really melt. 4–5 min is okay for thin bread, but 6–7 makes it way better.

  37. 5 stars
Used sourdough like the recipe says—crisp outside, gooey center. I added a tiny pinch of black pepper and it elevated it a lot.

  38. 3 stars
I messed up and buttered the wrong side once—still ate it tho lol. It browned anyway, just less crispy. Flavor was solid.

  39. User avatar elenor.jakubowski60 says:

    5 stars
This combo is dangerously good. The brie gets all melty and the prosciutto adds that salty little kick. Mine took about 5-6 minutes per side but still perfect.
