Miso Maple Roasted Turkey is a beautiful fusion of comforting holiday tradition and bold, modern flavor. Instead of relying only on classic herbs and butter, this turkey gets its richness from a glaze made with miso and maple syrup, a combination that creates an unforgettable balance of savory depth and gentle sweetness. As the turkey roasts, the glaze caramelizes into a glossy coating that locks in moisture and gives the meat a tender, almost silky texture. It feels familiar enough for Thanksgiving, yet exciting enough to make the entire table curious after the first bite.
What makes this turkey stand out is how the miso works its magic. Miso brings a naturally savory, umami packed character that enhances the flavor of the meat without overpowering it. Paired with warm maple syrup, the glaze becomes slightly sticky, aromatic, and perfectly suited for slow roasting. A touch of garlic, ginger, or citrus can take the glaze even further, adding brightness that cuts through the richness and keeps every bite balanced. The aroma that fills the kitchen is reason enough to make it, a mix of sweet, savory, and toasty notes drifting through the house while the skin turns golden and crisp.
This style of turkey shines especially well with simple sides. Roasted vegetables pick up the extra glaze drippings, turning sweet and caramelized. Mashed potatoes benefit from the flavorful pan juices, which can easily be turned into a silky turkey gravy. Even light salads with citrus or crunchy greens pair beautifully, because the miso and maple bring out both earthy and sweet notes in any side dish.
Miso Maple Roasted Turkey is also a great choice for anyone looking to add an element of creativity to their holiday menu without complicating the process. The glaze mixes together in minutes, and the roasting follows the same steps as a classic turkey. It is a small twist that makes a big impact, offering a holiday main course that is comforting, modern, and incredibly flavorful. Whether served for Thanksgiving, a family gathering, or a winter dinner party, this turkey brings a warm and memorable touch to the table.

Ingredients
- 12 pounds whole turkey thawed if frozen
- 1/2 cup white miso paste
- 1/2 cup maple syrup
- 1/2 cup unsalted butter softened
- 1 tablespoon soy sauce
- 1 teaspoon black pepper freshly ground
- 1 bunch fresh herbs such as thyme, sage, and rosemary
- 1 lemon halved
- 4 cloves garlic crushed
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, mix together the miso paste, maple syrup, softened butter, soy sauce, and black pepper to form a smooth paste.
- Gently loosen the skin on the turkey breast by sliding your fingers between the skin and the meat. Rub half of the miso maple butter mixture under the skin, spreading it evenly over the breast meat. Rub the remaining mixture all over the outside of the turkey.
- Stuff the cavity of the turkey with the fresh herbs, lemon halves, and crushed garlic.
- Place the turkey on a roasting rack inside a roasting pan. Roast in the preheated oven, basting occasionally with the juices, until the turkey is golden brown and a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C), about 3 hours.
- Remove the turkey from the oven and let it rest for at least 20 minutes before carving. This will allow the juices to redistribute and ensure the meat remains juicy.

I tried this last year, and it turned out so moist! Everyone loved it. Definitely a keeper!
OMG, this is the best turkey I’ve ever made! My family wants it every year now.
That’s awesome to hear! I can’t wait to try it myself for Thanksgiving. I’ve been looking for new recipes!
Good recipe, but I don’t like garlic in my turkey. Maybe next time I’ll skip it!
I totally get it, garlic can be strong! Just make sure not to replace it with something too spicy, or it might mess with the flavor. Happy cooking!
Miso and maple? That just sounds weird. I’m sticking to my traditional recipe.
Why do people stuff turkey? It cooks faster without stuffing. 🤔
This sounds delicious! Can’t wait to try it for Thanksgiving. 🦃
Too many steps! Lazy to do this. Lol. Anyone have simpler instructions?
I hear ya! That does sound like a lot of work. Maybe just roast a chicken instead? Way easier and still yummy!
Just roasted my turkey and I forgot the lemon 😭. Still tasted good tho.
Miso? Really? Just use butter and salt like normal people do.
Neh, didn’t turn out great. Maybe I messed something up but it was kinda dry. I think I’ll stick to my mom’s recipe.
Sorry to hear it didn’t work out! Maybe next time try brining the turkey? It helps with moisture.
I dunno, my turkey never turns out that dry! Did ya follow the instructions right? 🤔
This was the best turkey I’ve ever made! So juicy and flavorful. I can’t believe how well the miso and maple worked together. Definitely a keeper!
I don’t know about the miso… it seems a bit weird to me. But I guess people like it? I tried it and it was ok.
Best turkey ever! My family loved it. I can’t believe how juicy it turned out!
I dunno. Maple syrup and miso? Sounds kinda weird. How can that be good?
Absolutely! That miso maple butter sounds amazing. Can’t wait to try it myself!
It was okay, but not as good as my Aunt Sally’s recipe. She still makes it with just salt and pepper like a real turkey. But thanks for sharing!
Just okay. The flavors were good but the turkey was a little burnt on the outside. I’ll try again.
I totally understand! Turkey can go from golden to charred fast. Did you check it often while it was cooking? Next time, maybe cover it with foil if it starts to darken too much.
Burnt? I thought you were supposed to baste it to prevent that? I’m not sure if I wanna try this recipe if that’s a common issue.
Why would anyone eat turkey when chicken is way better? This recipe sounds okay though, if I had to make turkey.
Nah, turkey is just dry, no matter how you cook it! You can’t beat chicken’s flavor. This recipe ain’t gonna change my mind.
I totally get that! Chicken is way more flavorful. But this turkey recipe sounds kinda unique with the miso and maple. Maybe I’ll give it a try for something different.
Mmm… maple! <3 Gonna try this for Christmas dinner! Wish me luck!
This turkey was a huge hit at Thanksgiving! The miso and maple combination is genius. 5 stars!
Not for me, sorry. Also, miso is not for turkey. Chang my mind! 😂
Isn’t 3 hours a bit too long? I usually roast mine for less. Should’ve trusted my gut.
Too salty! I used low sodium soy sauce but it was still overwhelming. Might skip the soy sauce next time.
Miso? On a turkey? Sounds like a bad idea to me but my friend made it and it actually tasted good. Guess I’ll give it a shot.
I was skeptical too, but it really works! The miso adds a unique umami flavor. Just try it out!
Nah, I don’t know. Miso and turkey sounds weird… like too salty or something. I’ll stick to my regular roast.
Just tried this for Thanksgiving and it was a hit! Everyone loved it! The garlic and herbs gave it such a nice flavor. Highly recommend!
I followed the recipe but my turkey came out dry 🙁 What did I do wrong? Should I cover it?
Amazing! I forgot to add the lemon but it still turned out great. My family was impressed! Thanks for the recipe!
I don’t know if I like the idea of miso on turkey. Sounds weird to me. But I tried it, and it was actually okay. Not sure I’d make it again though.
This is the first time I cooked a turkey, and it was so easy! Instructions were clear. I can’t believe something like that could taste that good!
Too complicated for me, I just want to throw it in the oven and be done. Who has time to rub butter under skin?
I totally get it! I prefer simpler recipes too. Sometimes it’s just easier to bake and serve. But this does sound yummy if you have the time!
I don’t know about putting miso on a turkey…like, really? Maple syrup? Sounds kinda weird. But who knows, maybe it’s good for those adventurous eaters.
This recipe is AMAZING! The miso and maple combo is out of this world. Turkey was so moist and flavorful! Definitely making this again!
Delicious! Followed the instructions and it turned out perfect! My family was impressed. I’ll be the Thanksgiving hero this year! 🦃💖
That’s awesome! I can’t wait to try it for my family too! Any tips for keeping it juicy?
Thanksgiving hero? More like Thanksgiving kitchen disaster! Hope it wasn’t too dry.
