      Totally get that—polenta can go from “fine” to “clumpy” fast. I usually aim for a smooth, spoon-coating consistency: it should look thick like oatmeal and fall off the whisk/spoon in a slow ribbon. If it gets too thick early, add a splash of water and keep stirring. (Also, whisking in slowly helps a ton.) 😅
