      Good catch on the slurry! I usually whisk the cornstarch REALLY smooth and add it slowly while keeping it simmering, not boiling. If it got gel-ish, maybe it thickened too long or the slurry was a bit lumpy.

    Came out decent, but the soup was a little thick for my liking even though I followed the slurry steps. Maybe I used too much cornstarch-water? Still edible.

    Honestly I don’t get the hype with spicy-sour soup, but this one is actually balanced. The bamboo shoots give it a nice texture.

    I feel like 2 tablespoons vinegar is too much. Like it’s sour sour. I’d cut it down or use less if you’re not into tangy soups. Also, my chili paste brand was way hotter than expected.

      Yeah, 2 tbsp vinegar can definitely be punchy—especially if the vinegar is strong. I usually start with 1 tbsp and then add more at the end to taste.

      I tried it but mine was kinda too sour—maybe my rice vinegar was stronger? Also I didn’t have white pepper so I used black and it was still good. Will tweak next time.

      Glad you got it to your taste! Chili paste really does vary by brand—going up next time makes sense. Did you also try increasing white pepper a touch?

    Needs more garlic? Also my broth never simmered right (maybe the pot was too small). Would still make again though if I fix that.
