Chimichurri Roasted Potatoes are a bold and flavorful twist on a classic side dish. Crispy on the outside, fluffy on the inside, and coated in vibrant chimichurri sauce, these potatoes bring fresh, herbaceous notes to any meal. Inspired by the famous Argentine sauce, this recipe turns simple roasted potatoes into something truly special.
The key to perfect roasted potatoes is starting with the right variety. Yukon Gold or baby potatoes work especially well, as they hold their shape while developing a creamy interior. After cutting them into even pieces, the potatoes are tossed with olive oil, salt, and pepper, then roasted until golden and crisp. The high heat creates irresistible edges while keeping the centers tender.
What sets this dish apart is the chimichurri. Made with fresh parsley, garlic, olive oil, vinegar, and a hint of chili, chimichurri adds brightness and depth that pairs beautifully with roasted potatoes. The sauce is fresh and zesty, cutting through the richness of the potatoes and adding a pop of color and aroma. Spoon it over the hot potatoes just before serving, allowing the flavors to soak in slightly while still staying vibrant.
Chimichurri roasted potatoes are incredibly versatile. They make an excellent side for grilled meats, roasted chicken, or fish, but they are just as satisfying on their own. You can also serve them as part of a larger spread with salads and vegetables for a casual, shareable meal. For extra texture, a sprinkle of flaky salt or a handful of chopped fresh herbs on top works beautifully.
Another advantage of this dish is how easy it is to customize. Add roasted garlic to the potatoes for extra depth, or mix cilantro into the chimichurri for a slightly different flavor profile. If you enjoy a bit of heat, increase the chili or add a pinch of smoked paprika for warmth.
Crispy, fresh, and full of character, chimichurri roasted potatoes are proof that simple ingredients can create exciting results. They are a reliable crowd pleaser that feels both comforting and fresh, making them a perfect addition to everyday dinners or special gatherings alike.

5 stars, no doubt! Super easy to make and tasty. What do you even serve with these though?
I dunno, I just made them and thought they were a bit plain. Needs a side maybe? Like salad or somethin’.
Glad you loved it! These potatoes are great with grilled chicken or steak. Perfect combo! 🍗🥩
🤤 Yum! I could eat these every day!
Fantastic recipe! The chimichurri sauce gave the potatoes such a great flavor. Will definitely make again!
I don’t really get the fuss over chimichurri, but these potatoes turned out pretty good. My kids even liked ’em, so that’s a win!
These potatoes were crispy and delish! But are y’all really using 500 grams? That seems like a lot.
Not bad, but I didn’t have chimichurri sauce. Just used what I had and it was … okay.
You should really try the chimichurri! It makes a huge difference. Maybe next time!
Chimichurri? Sounds fancy but I just used ketchup. Still pretty good, I guess.
Yum! 🥔❤️
These sound amazing! Can’t wait to try this recipe. Chimichurri is the best! 😍
I tried this but messed up the cooking time. They burnt a bit. Anyone has tips for not burning?
Oven at 200°C is fine, but I think turning once is not enough—mine browned unevenly. Could use more tossing halfway.
Was easy to make but the sauce is too much for me. Potatoes were alright. 🤷♂️
These potatoes were a hit at dinner! So flavorful with the chimichurri!
Just simple potatoes. I thought it would be more exciting with the sauce but kinda meh. Gave it a 3.
Why so much chimichurri? I only tossed with a few spoonfuls and it tasted good but not super ‘chimichurri-y.’ Maybe add more? Not sure.
Totally fair question! With 1/2 cup chimichurri for 500g potatoes, it should coat pretty well, but “chimichurri-y” really depends on how juicy/thin your sauce is and how aggressively you toss. If yours tasted good but not punchy enough, I’d absolutely try adding a bit more (start with 2–3 more tablespoons) and toss again right after roasting while they’re still hot.
I followed it exactly and somehow they were still a little undercooked in the middle at 35 minutes. Maybe my potatoes were bigger?
I’ve had that happen too—200°C runs a little hot/cold depending on the oven. If your potatoes were larger or the cut halves were thicker, 35 minutes might not be enough.
Maybe you’re overthinking it but… 35 min at 400F and still undercooked means the tray was too crowded or they were packed too tight. Try spreading them better and give them 10 min more next time. 🙂
Pretty easy to make, but my potatoes were mushy instead of crispy. I’ll try cooking them longer next time.
Wow, so tasty! The sauce is everything! My kids loved them too! 5 stars!!
These chimichurri roasted potatoes are the bomb! So much flavor! 😍
I tried this recipe last night! It was amazing! My family couldn’t get enough of those potatoes! 🍽️
Are you sure these are that good? I’ve made potatoes plenty of times and they ain’t all that special. 🤨
So good, I could eat these for every meal! <3
Glad to hear you loved them! They really are amazing with that chimichurri. I could eat them every day too! 😊
Super unhealthy, too much oil. Why not just boil the potatoes? :/
I think the oil makes them really crispy and tasty! Boiling doesn’t give that texture. Just enjoy in moderation! 🙂
I tried this recipe but my potatoes ended up soggy. Maybe my oven isn’t hot enough? Not sure, but I expected better. 2/5.
Sounds like you might need to check your oven temp with a thermometer! Soggy potatoes can happen if they’re not cooked at the right heat. I’ve made these before and they turned out crispy when I followed the timing closely. Hope it works better next time!
2/5? That’s harsh! Maybe you added too much oil or didn’t let them roast long enough? I usually bake mine for a bit longer for extra crispiness. Keep trying, you’ll get it right!
Potatoes and chimichurri? Seems weird but it actually works! 4/5!
These potatoes were so good! The chimichurri made them pop! I’ll definitely make again. 5 stars!
I mean, potatoes are potatoes, right? How could they be that special? The recipe seems simple tho.
I tried this too! The chimichurri is a game changer, totally agree! But I added garlic too, makes it even better! 5 stars from me as well!
I dunno about chimichurri, what’s the point? Tried another sauce I had, they tasted okay. 1 star.
Why do you need chimichurri with potatoes? Seems strange. I just like them roasted with butter, that’s all.
These potatoes are soooo good! The chimichurri adds a real zing! Will definitely make again.
I wasn’t a fan of chimichurri before, but this recipe has changed my mind! So tasty. Yum!
That’s awesome to hear! I love chimichurri too, it’s so zesty! 🥔✨
I don’t get why people rave about chimichurri. Isn’t it just green stuff? The potatoes were fine tho.
I dunno, chimichurri sauce is eh to me, but my family loved this dish! 🤷♂️
I followed the recipe but mine turned out soggy. Maybe my potatoes were too big?
Soggy potatoes can be a bummer! Maybe try cutting them smaller or roasting them a bit longer next time. The size can definitely affect how they cook. Hope it turns out better next time!
Yummmmm!!! Who knew potatoes could taste this good? I’m going to try with other veggies next!
Potatoes+chimichurri = life. Definitely a keeper recipe!
Wow, very nice! Perfect side dish for my steak dinner. Everyone loved it!
Potato good. Chimichurri weird. Why not just butter?
These potatoes were soooo good! The chimichurri really takes them to the next level. Definitely making this again!
Five Stars! The best roast potatoes I’ve ever made! Yum!
Chimichurri??? Sounds fancy but is it even necessary? I might skip it next time.
Chimichurri adds a zing to the potatoes! I wouldn’t skip it if I were you. It’s what makes the dish special. 😋
I dunno, chimichurri sounds like a fancy word for sauce. Potatoes are good on their own too, right? Just salt and butter can be enough.
Love how simple this is! Perfect for a weeknight dinner, thanks for sharing! 🙌
Honestly, I didn’t have chimichurri so I used salsa verde… it was okay but not the same vibe. Still ate them all though lol.
Made these tonight and they came out super crispy. The chimichurri really punches up the flavor—will definitely repeat.
So good. 10/10 would roast again.
These turned out so crispy on the outside and fluffy in the middle. The chimichurri flavor really makes it pop—will definitely make again.
Agreed!! Mine came out super crunchy too—like the edges were legit potato chips. Chimichurri is the perfect finishing move.
I followed it but mine were a bit soft in the middle 😕 maybe my oven runs hot/cold. Still tasty with the chimichurri though—would try turning more often next time.
5/5 but my oven runs hot so I checked at 30 min and pulled them early. Just saying—watch them.
These are the best potatoes ever! The chimichurri really takes it to the next level. I’m making them again this weekend! 😍
I tried this recipe but my potatoes came out kinda soggy… Maybe I did something wrong?
These potatoes are a game changer! So crispy and delicious with the chimichurri. Loved it!
I don’t understand why everyone loves this sauce. It’s made from herbs and oil, nothing special. Potatoes were ok though.
Easy recipe, but I burned mine because my oven is weird… Oops! Will try again.
Too much pepper for my taste. Like, it overpowered the chimichurri a bit. Next time I’ll cut it in half.
I was skeptical about tossing in chimichurri after roasting—thought it’d make them soggy. But nope. Still crunchy on the outside.
This is an all-time favorite! Makes my weeknight dinners so quick and tasty!
I used store-bought chimichurri and it still tasted fresh. Easy weeknight side. Would love a little more sauce next time though.
Not bad, but I think it needs some garlic or something else to up the flavor. Just kinda okay.
Made these tonight—super crispy edges and the chimichurri really wakes everything up. I used store-bought and still loved it.
My family loved this! Even my picky eater enjoyed them. Definitely a keeper recipe!
Really good, but I think 35 minutes wasn’t enough for my oven—needed closer to 45 to get golden. Still worth it!
Good point—ovens vary a lot. 45 mins would make sense if yours runs cooler. 😊 Glad you still liked them!
My kids loved them! They asked for seconds, which is rare!
Made these tonight—so easy and the chimichurri really makes them pop. Mine were crisp after the full 40 minutes. Delicious!
Good flavor, but mine weren’t quite crispy—more like roasted. I think my oven runs cool and I should’ve added time or broiled at the end.
I didn’t have chimichurri sauce at home, so I used ranch dressing. Still tasted good!
Super easy and delicious! Perfect for BBQs. I used store-bought chimichurri and it was great.
I followed the steps exactly, but mine were a little soft even after 40 minutes. I might need hotter oven or smaller pieces next time.
Potatoes are potatoes. No need to get fancy with sauces. Just boil n serve!
Chimichurri sauce? What’s that? I just used ketchup… still good!
I love chimichurri but 1/2 cup seemed like too much for 500g potatoes. It overwhelmed the potato taste for me.
I used store-bought chimichurri and it still slapped. Easy weeknight upgrade. Could eat these every day 😅
I tried chimichurri on potatoes before but mine was kinda bitter… maybe i overcooked it. What kind of chimichurri did you use—green or more red?
Yesss! Store-bought chimichurri is seriously a cheat code 😄 These sound dangerously easy for weeknights.
These came out so crispy! The chimichurri really makes them taste restaurant-level. I used store-bought and still loved it.
Totally agree—those potatoes get *so* crispy. I’ve done it with store-bought chimichurri too and it still hits. Next time I’ll try turning them a bit more than halfway so the edges brown even harder 😄
Potatoes and chimichurri? Sounds weird. Not sure I’d try it.
I don’t get what all the hype is about. They were okay, but I’ve had better potato recipes. Maybe too much sauce?
Not bad, but my potatoes weren’t as crispy as I hoped. I think I overcrowded the pan even though I tried to do single layer.
I was skeptical about roasting at 200°C but it worked. Next time I’ll cut the potatoes a touch smaller so they crisp even more. Great flavor.
Wait—potatoes at 200°C for 40 min? mine usually burn at that temp 😅 maybe my oven runs hot. Still, chimichurri sounds amazing. I’ll try lowering time next batch.
I was skeptical too, but 200°C really does the trick! Cutting them a bit smaller is such a good call for extra crisp. Thanks for the tip!
200°C for 35-40 min is perfect if your potatoes are truly baby-sized. Mine were bigger and I had to add like 15 minutes—heads up!
Not gonna lie, I was skeptical about tossing potatoes with sauce at the end—felt like they’d go soggy. Mine didn’t, thankfully.
I followed everything and they were awesome. Like, these could replace fries any day. My family wanted seconds.
Super easy and super delicious! I used store-bought chimichurri and they turned out great! Will definitely make again.
Sooo good, made them for my friends and they all loved it. I’m not even a good cook!
I used sweet potatoes instead, cause I didn’t have those baby ones. Still came out tasty!
Sweet potatoes sound yum! I gotta try that next time, thanks for the tip!
But like, sweet potatoes are totally different. Are you sure it tasted the same? Seems weird.
Best side dish ever. My family asked where I got the chimichurri like it was fancy restaurant stuff. 10/10.
Mine didn’t get ‘golden and crispy’—more like soft with a little color. I might’ve overcrowded the tray. Recipe still flavorfull though.
Totally hear you—overcrowding is usually the culprit. When they steam, they go soft instead of crisp. Next time, use a bigger tray or roast in batches, and make sure there’s space between pieces.
Mine did golden, but I think 200°C is a bit low. I roast at like 220 and I also don’t toss with chimichurri till the end or it stays softer. But yeah, flavor still slaps either way.
I love chimichurri on everything. These potatoes actually disappear fast in our house. Will make again for sure.
Yesss, that’s the best kind of problem 😄 Crispy potatoes + chimichurri is undefeated. I’m glad they were a hit—these always disappear quick in my house too!
