When you’re craving a comforting meal that doesn’t take hours to prepare, this chicken and Portobello mushroom sauté is the perfect solution. It’s rich, savory, and satisfying, ideal for weeknights when you want something special without too much fuss.
This dish starts with boneless chicken breasts or thighs, depending on your preference. Thighs are especially juicy and flavorful, while breasts offer a leaner option. The meat is seasoned simply with salt and pepper, then seared in a hot skillet until golden brown. This step locks in flavor and creates those delicious crispy edges.
Next comes the star ingredient: Portobello mushrooms. Their deep, meaty texture pairs perfectly with chicken and absorbs the pan juices beautifully. Slice them thick and sauté in the same skillet with garlic and shallots or onions, adding depth and aroma to the dish.
To tie it all together, a splash of chicken broth or dry white wine helps deglaze the pan and lift the caramelized bits stuck to the bottom. A bit of heavy cream or a dab of butter adds richness, while fresh thyme or rosemary brings a hint of earthiness that pairs wonderfully with the mushrooms.
You can serve this sauté over mashed potatoes, polenta, pasta, or even a crusty piece of bread to soak up the sauce. It’s also great with a side of green beans or a crisp salad to round out the meal.
The beauty of this recipe lies in its simplicity and versatility. You can dress it up with a drizzle of balsamic glaze, a sprinkle of parmesan, or a handful of baby spinach tossed in at the end. However you serve it, this chicken and Portobello mushroom sauté will become one of your go-to comfort meals — easy enough for a weeknight, yet elegant enough for guests.

It was alright, just needed something else… maybe meatballs?
Yum! I made this for dinner and my husband couldn’t stop eating. Thanks for sharing!
So glad to hear that! It’s a real crowd-pleaser. 😊
I skipped the mushrooms and it was still good! 😋
This was so flavorful! The mushrooms + peppers combo is legit. I used fresh thyme and it smelled amazing while cooking.
So simple and quick! 👍 Love how colorful it is on the plate.
This recipe made me fall in love with cooking again! Simple, fresh, and flavorful.
It was okay, but I found the chicken a bit bland. Needs more seasoning!
I totally agree! A little more garlic or some spices would really amp it up! 🌶️
Bland? Really? I think it was perfect! Sometimes less is more, ya know?
These mushrooms r gross, why would u put this in chicken?
Followed the recipe exactly, but my mushrooms released a ton of water and the pan felt kinda wet. Still ended up delicious though.
Sooo good! This is my new favorite chicken recipe! Quick and easy! 😋
I didn’t have thyme so I used rosemary. Still yummy!
Sounds simple enough, but it took me longer than expected. Still good.
Not good, too oily! I would skip the extra oil next time.
This was super flavorful—garlic + thyme is a killer combo. I sautéed the mushrooms a little longer so they browned more, and it made a difference. Will definitely make again.
Why do u need thyme for chicken? It taste just as good without it!
Super simple and quick! Perfect for a weekday dinner. Will definitely make again.
Where’s the sauce?? It was quite dry for me.
So delicious! My kids actually ate the vegetables! Haha!
Horrible! I burned the chicken and it was so tough I could hardly chew it. My dog even looked away 🤢.
I don’t think the thyme is necessary. It overpowers the chicken.
Yum! Made it with some rice and it was awesome!
Glad you enjoyed it! Rice is such a good combo with that dish!
Made this tonight—so flavorful. The portobellos soaked up the garlic taste and the peppers gave it that sweet bite. I used fresh thyme instead of dried and it was perfect.
Absolutely loved this recipe! The chicken turned out so juicy and the veggies were crunchy, just perfect.
I’m so glad to hear that! Juicy chicken and crunchy veggies really make a difference. Did you add any special spices?
Mushrooms are gross! I don’t understand why people add them to everything. Wouldn’t recommend.
Mushrooms are amazing! They add such a rich flavor. You just gotta give them a try in this recipe!
I expected more from this recipe. The chicken came out a bit dry for me. Maybe adding some sauce would help?
Not a fan. The bell peppers were too crunchy for me.
I think the crunch is what makes it fresh! Maybe try cooking the peppers a bit longer next time.
I didn’t have red or yellow bell peppers, so I used green ones. Still pretty good!
Easy to make but I’ve never liked portobello mushrooms. Substituted with regular mushrooms, turned out fine.
My chicken turned out kinda dry. Maybe less cooking time next time?
This recipe is amazing! The flavors blend together so well. Will definitely make it again!
I totally agree! This recipe is a keeper. I added a sprinkle of cheese on top for extra flavor. Yum!
