Cauliflower Soup

January 15, 2025

Cauliflower soup is a simple yet comforting dish that transforms a humble vegetable into a creamy, flavorful bowl of warmth. The natural sweetness of cauliflower combined with a rich, velvety texture makes this soup a perfect choice for a light, nourishing meal. It’s the ideal dish for a cozy night in, and it’s also an excellent way to get more vegetables into your diet while still indulging in something satisfying.

The beauty of cauliflower soup lies in its versatility. While the base of the soup remains the same—cauliflower, onion, and garlic—it’s easy to add in other ingredients depending on what you have on hand. A splash of vegetable broth creates the perfect base, while a bit of olive oil or butter enhances the flavor. For extra creaminess, you can add milk or cream, but for a lighter version, vegetable broth works just as well.

The soup’s flavor profile is delicate but hearty. The cauliflower’s mild flavor becomes the backbone of the dish, with garlic and onions adding a savory kick. A touch of salt and pepper seasons the soup to perfection, while herbs like thyme or rosemary can be added for extra depth. For a twist, you can sprinkle in a pinch of nutmeg or cumin, giving the soup a slight warmth and spice.

Once the cauliflower is tender, the soup is pureed to achieve a smooth and creamy consistency. You can use an immersion blender for ease or transfer the mixture to a regular blender in batches. The result is a luxuriously creamy soup without the need for heavy cream, making it a lighter option that still feels rich and indulgent.

To serve, garnish the soup with a drizzle of olive oil, a sprinkle of fresh herbs, or even a bit of grated cheese. It pairs wonderfully with a crusty piece of bread or a light salad, making it the perfect meal for any occasion. Whether you’re serving it as an appetizer or enjoying it as a main dish, cauliflower soup is a comforting, healthy, and satisfying choice.

I tried this recipe and it was alright, but I think I prefer my soups a bit chunkier. Maybe less blending next time?

    1. User avatar paige.hagenes17 says:

I totally get you! Chunky soups are the best! Maybe throw in some potatoes or carrots next time for extra texture?

    2. User avatar Falmer Nightprowler says:

      3 stars
Why not just skip the blending altogether? Just cook it long enough and it will mash itself. Seems like an easier fix!

  3. 2 stars
Not a fan. It didn’t taste like much. I added a ton of spices and still not great. Cauliflower is kinda bland.

I totally get it! Cauliflower can be boring on its own. Maybe try adding some cheese or more herbs next time? That might help!

Yummy! I added bacon bits on top, it made it even better. 😛

Cauliflower?? Really? Tastes like baby food. Not a fan.

  9. User avatar domonique.dickinson46 says:

    4 stars
Pretty good, but I think it could use more seasoning. I salted and peppered at the end and it still felt a little bland until I added garlic powder.

  10. 2 stars
This soup is too watery unless you cook the cauliflower longer. I simmered 20 minutes and it still felt firm, so I went like 30-35. After that it was way better, but I wouldn’t call it foolproof.

    1. User avatar Mordekaiser says:

      5 stars
Yeah, 20 minutes is super optimistic for cauliflower. I usually do more like 30 too, especially if the florets are chunky. Blending makes it feel thick fast though—glad you got it to work!

  11. User avatar donovan.jacobson81 says:

    2 stars
I’m skeptical about how “smooth” it gets with just pureeing and milk. Also 20 minutes is too short for some cauliflower heads… mine was still a bit firm.

  12. User avatar carol.paucek says:

    4 stars
Really good, but I had to simmer closer to 30 minutes because my cauliflower was kinda huge. Still worth it.

    1. User avatar cyrus.waters21 says:

      4 stars
Hmm I simmered for like 25 min and mine was still a lil firm. Maybe I should’ve chopped smaller. Worth it tho, tastes super smooth.

    2. 5 stars
Glad it worked for you! Huge cauliflower definitely needs longer than 20 min—nice adjustment.

  13. User avatar alonzo.feeney says:

    3 stars
Easy to make but I found it a bit bland. Needed more spices or something. Maybe next time I’ll add some chili flakes.

  14. User avatar mollie.ward11 says:

    2 stars
I don’t get why people love cauliflower soup so much—it’s just steamed vegetable water. But this one is better than most, I guess.

  15. User avatar hoyt.gaylord39 says:

Soup was good, but my kids wouldn’t eat it. They said it was too green looking. LOL.

    1. User avatar russell.carroll84 says:

      4 stars
Kids can be so picky! Maybe try adding some cheese on top next time to make it look less green. My kids love anything with cheese! 🍽️

  16. 4 stars
Much tastier than expected! Gonna add bacon next time to spice it up.

    1. User avatar refugio.wuckert80 says:

      2 stars
I dunno, bacon in soup sounds kinda weird. Cauliflower is already good, why mess with it?

    2. User avatar Wellington Yueh says:

      5 stars
Bacon sounds yummy! I bet it will add a nice crunch and flavor. Can’t wait to try it like that!

  17. User avatar jacob.muller1 says:

    4 stars
I don’t have an immersion blender, so I used a regular blender in batches—worked, but it was kinda messy. Flavor was great, texture was smooth enough.

  18. User avatar Shawnda Murray says:

    2 stars
Wasn’t a fan. It tasted kinda bland. I think it needs more spices or maybe some hot sauce.

    1. User avatar lucie.larkin47 says:

      4 stars
I totally get where you’re coming from! A bit of cayenne pepper or some smoked paprika can really kick it up a notch! 😊

  19. User avatar katharina.rogahn says:

Absolutely loved this soup! So creamy and flavorful. Will definitely make again!

    1. User avatar jude.welch says:

So glad you loved it! It really is the best comfort food! 😊

  20. User avatar jeremy.howe says:

I followed the recipe but it came out too watery. Maybe I added too much broth? Not sure if I’ll try this again.

  21. User avatar Marty Weissnat says:

Not gonna lie, I thought cauliflower soup would be gross. But this is actually really good—especially with croutons. My kid asked for seconds (which is rare).

    1. User avatar france.lemke65 says:

      5 stars
Right?? I was skeptical too—cauliflower soup usually tastes kinda “vegetably” but this one actually sounds comforting. Love that your kid wants seconds!

  22. 4 stars
I don’t like cauliflower much, but this recipe made me a fan! Surprised by how good it was! Yum!

  23. User avatar Vladimir Harkonnen says:

    3 stars
Question: do you need to peel the cauliflower stem too? I just chopped everything and it turned out a bit stringy. Flavor was okay though.

    1. User avatar ara.kshlerin30 says:

      4 stars
Not necessary to peel, but if you chopped it all the same size and some pieces were thicker, they can stay stringy. Next time simmer the cauliflower a few extra minutes or blend more. Also I add the milk at the end so it doesn’t get weird.

    2. User avatar tissues_with_issues says:

      5 stars
I usually don’t peel it—just trim any very tough outer parts. If it got stringy, the stem might have been a bit fibrous, so chopping it smaller (or peeling the stem once) helps a lot. Blending longer also makes a difference.

  24. User avatar oren.deckow says:

    5 stars
Good recipe, but I added some carrots and it turned out tasting more better! Healthy and filling.

    1. 4 stars
Sounds great! Carrots would make it even more delicious. I might try that next time.

    2. 2 stars
Why would you mess with a perfect recipe? Cauliflower is good on its own! 🤨

  25. User avatar manuel.simonis51 says:

    4 stars
Caution: immersion blender on full power will SPLASH. I learned the hard way. But once I sorted that out, the soup was smooth and comforting.

  26. User avatar Jim Laucher says:

    3 stars
It was okay, but I felt like it needed more seasoning. I added some chili flakes, helped a bit.

    1. User avatar Arthur Philip Deodat says:

      2 stars
More seasoning? I thought the soup was perfect as it is! Maybe you just don’t like it plain?

    2. User avatar Michael83 says:

      4 stars
I totally agree! It definitely could use a kick. I added some cumin and it was amazing!

  27. 5 stars
This soup is amazing! So creamy and delicious. I added some cheddar on top. Yum!

  28. User avatar jordon.emard2026 says:

Not gonna lie, I was skeptical—like cauliflower soup sounds sad—but it was actually really tasty. I served it with grilled cheese and everyone went back for seconds.

  29. User avatar Tartarus says:

    5 stars
This soup is amazing! So creamy and delicious. Perfect for winter nights. Highly recommend!

  30. 5 stars
This turned out super creamy even without a ton of effort. I added a pinch of nutmeg and it tasted restaurant-level.

  31. User avatar ossie.block1993 says:

    4 stars
Pretty good base recipe. I didn’t have vegetable broth so I used chicken broth and it tasted fine, just different. Next time I might add more garlic or some roasted cauliflower for deeper flavor.

    1. User avatar jamie.runolfsson says:

      5 stars
Glad it worked with chicken broth! Yeah, roasted cauliflower would definitely make it more flavorful—almost like a deeper, nutty “restaurant” vibe. More garlic is also a great call; I usually add an extra clove because we like it punchy.

  32. 3 stars
Not gonna lie, it was kinda bland for me. I kept adding salt/pepper but it still needed something. Maybe more onion? Also my immersion blender spat a little because I didn’t let it cool—be careful.

  33. User avatar gertie.bergstrom71 says:

    4 stars
Not gonna lie, I was skeptical about blending cauliflower with just milk/cream. But it’s actually smooth and comforting. I used more pepper than the recipe says and I liked it.

  34. User avatar esteban.bahringer81 says:

    1 star
I think you forgot how many cups to put in. It was watery! Not impressed. Maybe I did something wrong?

  35. 4 stars
Pretty solid basic recipe. I used half-and-half and added a pinch of nutmeg (don’t judge 😅). Next time I might add a little extra garlic because mine tasted slightly mild.

  36. User avatar geoWizard says:

    4 stars
Pretty good base recipe. Mine was a little thick after blending, so next time I’ll add a splash more broth. Still tasted great with pepper and a bit of cheddar on top.

    1. User avatar Grunthos the Flatulent says:

      4 stars
Interesting—mine didn’t get thick at all after blending, but I also blended longer. Maybe different cauliflower? Next time I’ll try more broth like you said. What kind of cheddar did you use—sharp or mild?

    2. User avatar Rob McKenna says:

      5 stars
Glad it worked out for you! Adding a splash more broth is exactly what I do too—sometimes cauliflower varies, so thickness happens. Cheddar on top sounds perfect.

  37. User avatar adrianna.bode24 says:

    5 stars
Made this tonight—so creamy even without a ton of work. Used half-and-half and it turned out great. The immersion blender makes all the difference. Will definitely repeat.

  38. User avatar timothy.moore says:

    5 stars
This is basically comfort food at its finest. I used milk instead of cream and it was still creamy. Next time I’ll roast the cauliflower first for extra flavor.

    1. User avatar Aleshia Botsford says:

      5 stars
Roasting the cauliflower first is such a good idea—adds that nutty flavor. I’ve done it with a little olive oil and garlic powder before simmering and it really boosts the soup.

  39. User avatar giovanni.bode says:

    2 stars
This recipe is wrong. Cauliflower soup needs potato! You should not use just cauliflower.

  40. User avatar Douglas Furr says:

    3 stars
This is fine, but 4 cups broth seems like a lot for 1 head cauliflower. I had to add extra liquid to make it smooth, so watch your pot size.

    1. User avatar abbey.kuhic1994 says:

      4 stars
Good call on the pot size—this recipe looks a little “loose” with the liquid. I do 3 cups broth for one head and it’s smoother with less thinning needed.

  41. 3 stars
Olive oil and garlic? Sounds healthy but I think I prefer chicken soup. 🤷‍♂️

  42. User avatar King Vegeta says:

    4 stars
I don’t have an immersion blender, so I used a regular blender in batches. Worked, but I was nervous about splashing and it took longer than 20 minutes.

  43. User avatar suspiciousCommentator says:

    5 stars
Made this tonight—so cozy! I simmered mine a couple extra minutes until the cauliflower was really tender, then blended it silky smooth. The milk/cream makes it feel like restaurant soup.

  44. User avatar randy.littel82 says:

    3 stars
I followed it exactly but mine came out kinda thin and bland. Maybe I didn’t puree long enough? Also, I only had chicken broth so I subbed that—still good, just not as “wow.”

  45. 3 stars
Just tried it. Not gonna lie, my blender made it a bit too thick—maybe I cooked the cauliflower too long. Still tasty though.

  46. User avatar lolita.schroeder2009 says:

    5 stars
Yassss! Perfect comfort food. I added some cheddar cheese on top and it was a hit!

  47. User avatar Wonko the Sane says:

    5 stars
So easy! My kid actually ate it. 5 stars, no joke 😅

  48. User avatar celesta.vonrueden22 says:

    5 stars
Made this tonight—so cozy. The immersion blending made it super silky, and the garlic + onion flavor is perfect. I added a pinch of nutmeg and it tasted restaurant-level.

  49. 2 stars
Okay but who puts milk in soup and expects it to stay good? Mine separated a little—maybe my stove was too hot? Still edible, just not pretty.

    1. User avatar cayla.friesen says:

      5 stars
Totally get the worry 😅 Milk can separate if it boils hard. I usually add the milk off the heat or on very low heat and just warm it through. Next time try simmering gently, not letting it roll.

  50. 5 stars
This soup is amazing! So creamy and comforting. My kids loved it!

  51. 1 star
    yuck. not tryin again.

    1. User avatar Kaam Ya'tak says:

      4 stars
I’m sorry to hear that! Cauliflower soup can be an acquired taste. Maybe try adding some spices next time?

    2. User avatar danyel.heathcote12 says:

      3 stars
Yuck? But cauliflower’s good for you! I love adding cheese on top, maybe that would help?

  52. 4 stars
I used coconut milk instead of regular milk and it turned out great! Dairy-free, yay!

  53. User avatar davis.balistreri says:

    5 stars
I made this exactly as written and it turned out super creamy even without heavy cream. The immersion blender step is key—otherwise it gets a little chunky. I added a pinch of nutmeg and it made it feel fancy. 10/10 comfort soup.

  54. 1 star
Not sure what I did wrong, but mine came out super chunky. I guess I need to blend better. 1 star from me.

  55. 2 stars
meh. idk. took longer than 20 mins for my cauliflower and i burned the onions a little lol. still ate it, but wasn’t wow.

  56. User avatar cole.beatty says:

    3 stars
Not bad, but it feels a bit bland. I used only salt/pepper at the end—wish I’d added something like thyme or paprika earlier.

  57. User avatar sommer.ferry82 says:

    4 stars
Immersion blender step is key. I tried blending in a regular blender and it splattered like crazy… learned my lesson.

  58. User avatar marx.howe30 says:

    4 stars
I made this for dinner last night and it was super easy. My kids even liked it! 🙂

  59. User avatar piedad.treutel says:

    2 stars
Cauliflower? More like cauli-flopper! Can’t believe you call this a soup.

  60. 3 stars
Can you make it with broccoli instead? I’m not a fan of cauliflower but want to try this style.
