Ingredients
  

  • 500 g chicken breast cut into bite-sized pieces
  • 2 tbsp butter unsalted
  • 1 tsp ground cardamom
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt to taste
  • 1/4 tsp cayenne pepper optional, for heat
  • 2 tbsp vegetable oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp ginger grated

Instructions
 

  • In a large pan over medium heat, melt the butter and add the vegetable oil.
  • Add the chopped onion and sauté until golden brown.
  • Stir in the garlic and ginger, cooking for another minute.
  • Add chicken pieces and cook until they start to brown.
  • Stir in cardamom, cumin, coriander, garam masala, cayenne pepper, and salt, mixing well to coat the chicken.
  • Pour in the tomato puree, reduce heat to low, and let simmer for 20 minutes.
  • Add the heavy cream, stir well, and cook for an additional 10 minutes until the sauce thickens.
  • Taste and adjust seasoning if necessary.
  • Garnish with cilantro if desired, and serve hot with rice.

    I tried it but mine was bland 😕 maybe too little salt? Also I was sure “tomato puree” was the same as passata—so yeah. Still edible, just not WOW. Cardamom flavor was there though.

    I added cilantro and it tasted fresher. Also, I forgot the cayenne and honestly it didn’t need it. Still flavorful.

      Hmm I cooked it once and my chicken was still tough too… I think you should boil it longer or use drumsticks not breast. Also, 1 cup tomato puree feels like a lot—maybe watery tomatoes makes it take longer to soften? Either way flavor’s there.

      Totally makes sense—20 minutes can be a bit tight for chicken breast unless the pieces are really small. Next time I’d cut them smaller (like 1 cm cubes) or simmer closer to 25–30 min on low. Glad the garam masala came through though!

      Totally agree—browning the onions is where a lot of the depth comes from. I sauté mine a bit longer than I think I need to, and it really pays off.

      Totally fair—those spices stack up fast. I’ve made it with half the cumin/coriander and it still tastes great, just less “punchy.” If you want to keep the warmth, cayenne can be the easiest one to dial back too.
