Yum! I’d think shredded mozzarella would totally work—just use less if it seems watery. Diced holds its shape better, but shredded melts/softens nicely in there. As for prepping: you can prep the tomato-mozz mix ahead (tomatoes chopped + basil + cheese mixed), but I’d stuff right before serving so the avocados don’t get sad. Add balsamic glaze at the last minute too.
I don’t know… shredded mozzarella feels like it’ll slide out and make it all gooey. Maybe use the “diced” part of the cheese and cut it small? Prep ahead though—like, just chop everything and put it in the fridge overnight, it should be fine 😅
