Blue Cheese Gnocchi

January 22, 2025

Blue cheese gnocchi is a rich, flavorful dish that’s perfect for those who love bold, creamy comfort food. With its pillowy-soft gnocchi coated in a luscious blue cheese sauce, this meal is indulgent yet easy to prepare – ideal for a cozy night in or when you want to serve something a little more sophisticated.

The gnocchi, whether homemade or store-bought, is the heart of the dish. Its light, tender texture makes it the perfect vehicle for soaking up the sauce. When paired with blue cheese, the result is an elevated pasta experience that delivers both creaminess and a punch of sharp, tangy flavor.

The sauce begins with a base of butter and cream, gently heated to form a silky foundation. Crumbled blue cheese is then added and slowly melted, infusing the sauce with its signature bite. Depending on your preference, you can go for a milder blue like Gorgonzola or something stronger like Roquefort. A touch of black pepper or a sprinkle of nutmeg can add a bit of warmth and depth.

Once the gnocchi is cooked and tossed in the sauce, every piece is enveloped in creamy, cheesy goodness. To finish, a handful of fresh herbs like parsley or chives adds a pop of color and a burst of freshness that balances the richness. For extra texture, you can top the dish with toasted walnuts or crispy pancetta – both pair beautifully with the boldness of the blue cheese.

Blue cheese gnocchi is a dish that feels both comforting and luxurious. It’s perfect on its own as a main course or served in smaller portions as a starter. Pair it with a simple green salad and a glass of white wine for a well-rounded meal that’s impressive without being fussy.

Bold in flavor and silky in texture, this gnocchi dish is a delicious way to bring something different to the table. It’s hearty, full of character, and guaranteed to satisfy cheese lovers looking for a creamy twist on a classic comfort food.

Okay, but is that much cheese really necessary? I find it too strong. Maybe tone it down a bit next time. I give it 3 stars.

    1. 3 stars
I agree, that’s way too much cheese for me too! It really overpowers the dish. Less cheese = more flavor balance.

    2. 5 stars
I love cheese! The more, the merrier. Blue cheese has such a unique flavor, I wouldn’t change a thing!

  2. User avatar hippopotamus says:

    5 stars
This recipe was delicious! The blue cheese flavor is so rich, and the creamy texture of the sauce is just perfect. I added some walnuts for crunch. 5 stars!

Quick and easy! My kids loved it. Just a tip: I used green onions instead of parsley, and it was still great. Thanks for the recipe! ⭐⭐⭐⭐

  4. User avatar shaun.stark24 says:

Not sure about the 1 cup cream thing—felt like a lot at first but the gnocchi drank it up. Flavor was solid. Would make again for sure.

So easy to make! I never thought gnocchi and blue cheese could be so good together. Yummy!

I totally agree! This recipe is a game changer. It’s so creamy and delicious!

5 stars! But I always add more parsley for seasoning. It makes everything better.

I’m skeptical about blue cheese + cream working that smoothly. Mine kind of clumped for a sec before it melted, and I wasn’t sure if my skillet was too hot. Still ate it, but wouldn’t call it perfect.

i dont kno about blue cheese with pasta… seems weird. but maybe im wrong lol

  9. User avatar mitchell.armstrong2003 says:

HMMMM this sounds fancy and complicated but it was super easy! 10/10!

Made this last night, but I used regular cheese instead of blue. Not sure it worked tho 🤔.

  11. 2 stars
1 minute sauté garlic felt short to me—burned a bit? Maybe my pan was too hot. Would lower the heat next time.

    1. User avatar kamala.zulauf1965 says:

      5 stars
Good call on the heat—garlic can go from “fragrant” to “burnt” fast. I usually keep it closer to 30–45 seconds on medium, then straight into the cream.

    2. User avatar Wonko the Sane says:

      3 stars
Hmm mine always takes like a minute too but I dont think I could “burn” it that quick? maybe your garlic was in too long or pan was too hot. Try lower heat next time like you said.

  12. User avatar zane.rutherford83 says:

    2 stars
Eh, too cheesy for me. I don’t get why people like blue cheese. Next time, I’ll use cheddar or something milder.

  13. User avatar Barliman Butterbur says:

    5 stars
Yummy! I used homemade gnocchi and everyone loved it! Next time I might add some spinach.

  14. User avatar rich.landlord says:

    5 stars
Made this last night—so creamy and punchy from the blue cheese. I used half-and-half and it still worked great. The parsley at the end is a nice touch!

  15. User avatar Cristopher Bradtke says:

    4 stars
Pretty tasty, but I think 150g blue cheese was a bit intense for me. Next time I’ll start with less and season as I go. Still a win.

  16. User avatar Thufir Hawat says:

    2 stars
I don’t know why anyone would like blue cheese. This was way too strong for me.

  17. 5 stars
Not gonna lie, I was worried about using blue cheese with cream, but step 4 is magic. Next time I might add a little garlic powder too for extra punch.

  18. User avatar huong.hegmann35 says:

    5 stars
This was amazing! I added some chicken, and my family loved it! 🙌

  19. User avatar francis.douglas78 says:

This is super rich—like, I actually needed a salad on the side. But the flavor is worth it. Blue cheese lovers will be happy.

    1. User avatar beau.quigley30 says:

      5 stars
Totally agree—this is decadent. I usually do a quick arugula salad or something pickly on the side so it doesn’t feel too heavy. Blue cheese fans, you’re not lying 😄

  20. User avatar oPandariaNo says:

    2 stars
This is too complicated for me. I just want something easy, not all these steps!

  21. User avatar helga.schneider says:

Made this tonight—so rich and comforting. The blue cheese melts into the cream beautifully. I added a pinch of nutmeg and it was next-level.

    1. User avatar Arie Kihn IV says:

      3 stars
Hmmm I made this once and it turned out kinda salty/strong… maybe my cheese was too punchy. Do you use any specific blue cheese? Still sounds really comforting though.

    2. 5 stars
Yes!! I love when the blue cheese melts like that—so creamy. Nutmeg is such a smart touch. Gonna try your version next time.

  22. User avatar robbie.lehner1963 says:

    1. User avatar Alia Atreides says:

      5 stars
Wow, that’s impressive! Blue cheese is usually a hard sell. Glad he liked it! 🙂

  24. 4 stars
So easy. I’m not a cook-cook, but this was foolproof. Floating gnocchi is always such a satisfying step.

Blue cheese gnocchi sounds like a weird combo but I was blown away! Can’t wait to impress my friends with this one.

    1. User avatar Super Saiyan Blue Vegeta says:

      3 stars
Weird combo? Nah, it’s gourmet! But I dunno about blue cheese and gnocchi. Might just be me.

    2. 5 stars
So glad you liked it! Blue cheese can be polarizing, but it’s all about balance! Your friends are gonna love it!

  27. User avatar Galadriel says:

    3 stars
Blue cheese? Yuck! I used mozzarella instead and it was just fine. 🤷‍♂️

    1. User avatar ruben.dooley44 says:

      4 stars
Mozzarella is actually a good sub if you don’t like blue cheese! Glad it worked out for you!

    2. 2 stars
I don’t get the hate for blue cheese. It’s got a unique flavor! 😒

  28. 5 stars
This was an absolute delight! The blue cheese adds such rich flavor. Definitely making it again!

  29. User avatar Ra'zhinda says:

    4 stars
I made this without the garlic, was still good! Dope to have leftovers!

  30. User avatar carin.larkin2004 says:

    4 stars
My partner said it tastes like fancy mac n cheese, lol. I used dried parsley because I ran out of fresh and it was still decent.

  31. User avatar Jonathan Batz DDS says:

    4 stars
Pretty solid comfort food. I used half-and-half and it still came together nicely, but next time I’ll probably simmer a touch longer so it thickens more. Also, don’t walk away while the garlic’s sautéing—1 minute is no joke.

    1. User avatar doris.huels1985 says:

      5 stars
Yes! I’ve burned garlic in literally like 30 seconds 😅 Your point about not walking away is spot on. I also simmered a couple extra minutes and the sauce clung way better. Blue cheese gnocchi is dangerously good.

  32. User avatar maximo.pfannerstill says:

    3 stars
What if I replaced blue cheese with cheddar? Would it work? Asking for a friend! 😅

    1. User avatar walker.jakubowski says:

      4 stars
Cheddar would change the flavor a lot! Blue cheese has that tangy bite, while cheddar is milder. Might be worth a try if you like cheddar though!

  33. 1 star
Gnocchi tasted like mush, maybe I did it wrong? How do you make it not soggy?

  34. User avatar crocodile says:

    4 stars
I added some mushrooms and spinach. Made it even better! Great recipe, thanks for sharing!

  35. User avatar joe_banana says:

    4 stars
The instructions are super clear and the whole thing took like 20 minutes. I used store-bought gnocchi and they stayed tender, not gummy. Next time I might add a pinch of nutmeg just because.

  36. User avatar joy.mraz7 says:

    5 stars
Wow, this was a hit at our dinner party! Everyone loved it!

  37. User avatar ArabianNights says:

    4 stars
I tried making this for my friends. They said it was too strong, but I think blue cheese should be strong! I liked it, but maybe less cheese next time. 4 stars.

  38. User avatar abel.little says:

    4 stars
Very nice recipe! But I forgot the garlic… it still turned out good! Yay!

  39. User avatar nella.witting says:

    3 stars
I dunno. I followed the recipe but it came out kinda runny? Maybe I used too much cream. I’ll try again, but not sure. 3 stars.

  40. User avatar hector.brown2018 says:

    3 stars
I dont think gnocchi should be made with blue cheese… Seems weird to me? 😕

  41. User avatar wellRespected says:

    4 stars
Delicious and creamy! I added some bacon bits for crunch and it was a hit at my dinner party! 😋

  42. User avatar jennie.hyatt97 says:

    1 star
Why use blue cheese? Seems too fancy. Just stick with cheddar or something. Who wants to try this?

  43. User avatar Lael Nolan says:

    3 stars
I followed it mostly, but my sauce didn’t get smooth—clumps of blue cheese. I think my heat was too high. Once I lowered it and stirred more, it came together.

  44. User avatar Werewolf says:

    5 stars
This recipe is amazing! The flavor of blue cheese really shines through. I added a bit of extra garlic because I love garlic. 5 stars!

  45. User avatar Trillian says:

    4 stars
Pretty solid, but I think 1 minute garlic is too long if your pan runs hot. Mine got a little too fragrant/bitter, had to balance with extra pepper.

  46. User avatar sharee.hodkiewicz1989 says:

    4 stars
So cheesy and creamy, it’s a heart attack on a plate but I love it! More parsley next time for color. 4 stars from me.

  47. User avatar miguel.hermiston88 says:

    4 stars
Made this tonight and it felt fancy but honestly super easy. Store-bought gnocchi helped a lot. Next time I might add a little lemon zest to brighten it up.

    1. User avatar mayola.rutherford1993 says:

      5 stars
This sounds like the perfect “fancy but not stressful” dinner. Blue cheese + cream over gnocchi is dangerously good—love that you used store-bought to keep it easy!

    2. User avatar Dr. Diamond Sauer says:

      3 stars
I tried something like this but my sauce got too thick? I think I simmered too long. Also, do you melt the blue cheese before adding gnocchi or just stir it in after? Lemon zest sounds weird but maybe good 😅

  48. User avatar Ms. Kylee Jacobson says:

    2 stars
This is way too rich for my taste, I prefer lighter sauces. 😬 Maybe I’ll try a different cheese next time.

  49. 4 stars
Honestly I’m not usually a blue cheese person, but this smells incredible. The garlic + cream combo is doing the heavy lifting. Would make again, maybe with less cheese next time.

  50. User avatar sunday.braun74 says:

    5 stars
Honestly sounds fancy but it’s easy. The garlic + blue cheese combo is dangerous. I added extra parsley and it looked legit.

  51. User avatar NAFO.SUPREMACY says:

    5 stars
yum!! I love blue cheese and gnocchi together. Easy to make and so tasty. Definitely a keeper recipe! 🌟🌟🌟🌟🌟

  52. 3 stars
This is okay. I’d rather do pesto gnocchi or just butter and sage. Blue cheese is not my thing.

  53. User avatar Jessica Atreides says:

    2 stars
Honestly, not for me. The blue cheese was too strong, and it made the dish taste weird. Sorry, but I can’t recommend this.

    1. User avatar malcom.spencer24 says:

      4 stars
I totally get it! Blue cheese can be super strong for some people. Maybe try a milder cheese next time? I loved it, but each to their own! 😊

  54. 4 stars
Yum! Gnocchi is nice, blue cheese is nice, mix em together? Perfect!

  55. User avatar Gormlaith says:

    2 stars
Maybe I used the wrong kind of blue cheese? Mine tasted way too salty. Also I think I forgot to simmer long enough for the sauce to thicken.

    1. User avatar porter.connelly57 says:

      5 stars
That sounds frustrating. Blue cheese can vary a LOT—some are super salty. I’d try using a milder one (or start with less and add gradually). Also, did you simmer the cream low and gentle? 2–3 min might not be enough if your heat was too high or the pan was crowded—letting it reduce a bit helps it thicken.

  56. User avatar chase.macgyver says:

    5 stars
Best recipe EVER! My family loved it, and they usually don’t even like blue cheese. I’ll be making this often!

    1. 5 stars
I’m glad your family enjoyed it! Blue cheese can be tricky, but this sounds like a winner. Can’t wait to try it myself!

  57. User avatar moshe.emard5 says:

    4 stars
Quick and easy recipe! Gnocchi was fluffy, and sauce was creamy. Perfect meal for busy days!

  58. User avatar Freddie Macejkovic says:

    5 stars
Who knew gnocchi could be this good? My kids devoured it! Will try with goat cheese next time.

  59. User avatar danica.volkman1961 says:

    2 stars
I followed it exactly but my sauce turned slightly grainy. Could’ve been the cheese I bought. Any tips on what blue cheese melts best?

    1. User avatar abe.cormier63 says:

      4 stars
Maybe you overcooked it. I always just use normal blue cheese and it melts fine, but I add it right at the end and turn the burner off after. If yours was “grainy” like curds, the cream might’ve been too hot or the cheese was too dry.

    2. User avatar Eccentrica Gallumbits says:

      5 stars
Ugh, grainy sauce is usually the cheese not melting smoothly. I’d try a blue cheese that’s softer/creamier (like Gorgonzola Dolce) instead of a drier, crumbly one. Also keep the heat really low and don’t boil the cream—blue cheese can seize when it gets too hot.

  60. 5 stars
This was so creamy and delicious! I could eat it every day!

  61. User avatar carie.olson1951 says:

    1 star
Gnocchi is supposed to be boiled! How does it float? Thought they sink… 🤔

  62. User avatar lindsay.rolfson28 says:

    5 stars
Absolutely loved this recipe! The blue cheese gives it such a rich flavor. Will definitely make it again!

  63. User avatar derick.douglas says:

    1 star
Blue cheese? Yikes! Not for me. 🤢

  64. User avatar bernard.beahan43 says:

    3 stars
Is heavy cream really necessary? I think half-and-half would have been fine.

  65. User avatar Falmer Warmonger says:

    5 stars
Adding garlic was a game changer! I used less cream and it was still creamy. Will make again!

  66. 3 stars
Blue cheese is intense. Like, I love it but my stomach doesn’t always. Still, the garlic-butter cream base sounds good enough that I’d try a smaller portion first.

  67. User avatar marlon.leuschke65 says:

    3 stars
I tried it but my sauce came out grainy 😬 I think my blue cheese was kinda dry. Anyone else have that problem? Still tasted good, just looked weird.

  68. 2 stars
Meh 😕 I like blue cheese, but I didn’t love how strong it was with the cream. Would rather do bacon or something.

  69. User avatar garth.auer68 says:

    3 stars
Tasty but too rich! Could use a salad on the side or something lighter.

  70. User avatar Vladimir Harkonnen says:

    5 stars
I was nervous about blue cheese with gnocchi, but wow. The sauce clings perfectly after tossing for a bit. Next time I’ll add some black pepper at the end too.

    1. 5 stars
Totally get the nerves—blue cheese can be intense. But your description makes me want to try it. Adding the black pepper at the end sounds like a great move!

  71. User avatar charisse.schmitt68 says:

    3 stars
I followed the instructions, but it was too salty for my taste. Next time, I’ll reduce the salt.

    1. User avatar daniel.beahan1993 says:

      5 stars
I totally understand! Blue cheese can be super salty sometimes. Reducing the salt next time is a smart move. I might try it with no added salt at all and just rely on the cheese for flavor!

    2. 3 stars
You must’ve used too much salt. I didn’t find it salty at all! Maybe different brands of blue cheese vary in saltiness? Just saying…

  72. User avatar selma.keeling30 says:

    3 stars
It was okay, but I felt like it needed something more, maybe some veggies? Not sure I’ll make it again.

  73. User avatar marisela.mertz says:

    3 stars
I followed it mostly, but mine was a little too salty from the blue cheese. I’d recommend tasting the cheese before adding salt (or just go lighter on the salt). The flavors were good though.

  74. User avatar Thomas Jacobs says:

    4 stars
This is very rich and kinda heavy… but in a good way. I’d serve smaller portions or with a salad. The parsley garnish is a nice touch—adds fresh brightness.

  75. User avatar arron.daugherty2008 says:

    5 stars
Absolutely loved this dish! The blue cheese flavor really shines through. Will definitely make again!

  76. 3 stars
Blue cheese can be a little intense… I think 150g might be too much for my taste? Still tasty though. Maybe I’ll cut it down to 100g next time.

    1. User avatar Edris Schinner PhD says:

      5 stars
Totally agree—blue cheese can overpower everything. Cutting to 100g sounds like the sweet spot, especially with the cream.

    2. User avatar Thalassa says:

      4 stars
We did like 200g once and it was kinda… too much. But if you add extra cream too it balances. 100g is probably right.

My gnocchi didn’t float, what did I do wrong? Help!

  78. User avatar Questular Rontok says:

Blue cheese? Gross. Can you use cheddar instead? 😂 I just can’t with the stink of blue cheese. 2 stars for consideration.

  79. User avatar georgann.deckow says:

    3 stars
Yummy! But is it really gnocchi if you bought it from the store? Just saying!

  80. 5 stars
Absolutely delicious! The blue cheese adds a wonderful tang. Will make this again!

  81. User avatar randolph.stracke says:

    3 stars
Wasn’t my favorite. It was too rich for my taste, and I wanted a more substantial dish.

  82. User avatar kary.brekke says:

    4 stars
I am not good at cooking but this was easy and yummy! Thank you!!

  83. User avatar carl.kessler65 says:

    2 stars
Wasn’t a fan… The blue cheese is too strong for my taste. Ended up adding more cream to tone it down.

    1. 2 stars
Cream? That don’t help much! Blue cheese just overpowers everything if u ask me.

    2. 4 stars
I actually love blue cheese! But I get it, it’s not for everyone. Maybe try a milder cheese next time?

  84. 3 stars
I burnt the garlic, and then it tasted bad. 😖 I guess I’ll get it right next time. Thanks for the instructions though. 3 stars.

  85. User avatar mitchell.jones says:

    5 stars
This is dangerously good. The blue cheese sauce coats the gnocchi perfectly—creamy and salty without being too harsh. I added a pinch of nutmeg and it was even better.

  86. User avatar jeffrey.wuckert says:

    4 stars
Tried it with store-bought gnocchi. The sauce came together easily, but I think I should’ve gone a bit lighter on the salt since the blue cheese is salty. Still delicious though.

  87. 2 stars
It was okay. Like, good enough. But I wouldnt pay restaurant price for it, ya know? My garlic was burned a lil because i wasnt paying attention.

  88. User avatar gaylord.hand says:

    2 stars
So… I used 150g blue cheese like the recipe but it was way too strong. Next time I’ll cut it in half. Also I forgot to add parsley and it still tasted ok, lol.

    1. 5 stars
Totally get it—blue cheese can be *way* punchy depending on the brand. Cutting it in half next time is a great call. Also, nice save that it still worked without parsley—though I bet it would’ve added a fresher note.

  89. User avatar reyes.champlin56 says:

    5 stars
This is so delicious! The blue cheese is the perfect touch. My whole family loved it!

  90. User avatar smartestRedditor says:

Gnocchi floating like the instructions say worked great. I was nervous but it turned out fluffy. Honestly the whole pot smelled amazing while cooking.

  91. User avatar Falmer Archer says:

    5 stars
Made this last night—so creamy and tangy. I used half-and-half and it still turned out great. Definitely a keeper for a quick dinner.

  92. 5 stars
Blue cheese can be a bit polarizing, but the recipe balances it well. The parsley at the end really helps cut through the richness.

  93. User avatar walter.johnston1964 says:

    3 stars
I only had pre-shredded blue cheese crumbles and it didn’t melt as smoothly, but it still tasted good. Texture was kinda chunky though.

  94. User avatar elida.torp17 says:

    3 stars
Confused: salt already in the water… then salt again in the sauce. I ended up under-salting and it felt flat, so I’m glad I tasted.

  95. 2 stars
I don’t know about blue cheese, it tastes kinda weird. How can you even eat that?

    1. User avatar Spider Soldier says:

Blue cheese is an acquired taste, but once you get it, it’s amazing! Gnocchi is a great match for it. Give it a try, you might be surprised!

So easy to make! I didn’t have blue cheese so I used feta instead, turned out great!!

Blue cheese gnocchi… sounds weird but maybe I’ll try. parsley though? kinda pointless lol

I followed the steps exactly and my sauce turned out a little grainy. I wonder if my heat was too high when melting the cheese? Flavor is great though.

I don’t get why people love blue cheese so much… but okay, this was actually pretty good. The pepper and garlic helped. I might use less cheese next time.

    1. User avatar harris.leffler says:

Same here—I was skeptical too. The garlic/pepper combo definitely keeps it from tasting like straight “stinky cheese” 😅 Less blue cheese next time might be perfect.

Blue cheese is kinda weird… but if you do it right it’s good. I alway add more pepper tho. Also I think cream gotta be full fat or it dont melt right? Try a bit less like you said!

My sauce broke a little (maybe I simmered too high?)—it turned grainy. Still ate it, just not restaurant smooth.

My family said “wow” but I’m skeptical—blue cheese can be really overwhelming. I actually loved it once it was mixed into the gnocchi.

  103. 5 stars
I made this with store-bought gnocchi and it turned out super creamy. The blue cheese flavor is strong in the best way—definitely don’t skip the black pepper.

    1. User avatar keena.hammes says:

That sounds dangerously good 😅 I love when blue cheese really shows up—good call on the black pepper. Did you use half-and-half or full cream? I find it affects how thick it gets.

  104. User avatar dyan.williamson75 says:

Couldn’t get it creamy. I used crumbles (not “crumbled” like the recipe) and it just sat there. Also garlic got a little brown. Still ate it tho 🤷‍♂️

  105. 5 stars
So cheesy and creamy! Can’t believe it took me this long to find a recipe like this!

  106. 4 stars
Not bad! I used store-bought gnocchi and followed the steps exactly. I’d reduce cream slightly next time to thicken a touch.

  107. User avatar dewey.hintz61 says:

Loved the garlic + cream base. Mine did get a bit thick though after the cheese—maybe I should’ve used half-and-half instead of heavy cream or simmered less. Still tasty!

Not sure about 500g gnocchi with only 150g blue cheese—might be a bit mild? I’d probably eyeball more cheese, but recipe seems solid.

    1. 4 stars
I get what you mean—blue cheese can be pretty strong, so 150g might still hit. I usually taste at the end and add a little extra if it needs more bite.

Made this tonight and it was dangerously good. The blue cheese sauce turned silky fast, and the gnocchi stayed pillowy instead of getting gummy. I added a bit more pepper than the recipe said—zero regrets.

The instruction says simmer 2-3 minutes but blue cheese can clump if you rush it. I’d rather go lower heat and stir slower. Maybe that’s just me though.

I’m not a cook cook so I was nervous, but it’s idiot-proof. Garlic in butter, cream simmer, cheese melt. My whole kitchen smells amazing.

This sounds dangerously good. Blue cheese + cream with gnocchi is basically a cheat code for comfort food. Can’t wait to try it—will definitely add extra pepper.

    1. 5 stars
Totally get what you mean—blue cheese sauce is dangerously good. I usually add extra black pepper too (and a little more blue cheese if I’m feeling brave). Let me know how it turns out!

I made something similar before but my sauce turned a little grainy. Any tips for keeping the blue cheese smooth? Otherwise looks legit.

    1. User avatar Random Dent says:

      4 stars
Grainy sounds like the cheese separated. Next time turn the heat down more, like “barely simmer.” Don’t boil the cream after adding the blue cheese. Some cheeses melt better than others too—if yours is super salty/dry, add a little more butter or even use half-and-half instead of cream. Looks legit tho!

    2. 5 stars
I’ve had that happen too—usually the blue cheese clumps or the sauce gets too hot. Try keeping it really low once the cream goes in, and add the cheese gradually while stirring constantly. Also make sure the blue cheese is room temp and not super dry/crumbly. If it still looks grainy, a splash of hot pasta water or extra cream can smooth it out.

Not gonna lie, 150g blue cheese for 500g gnocchi feels like a lot. I halved it and it was still plenty strong. Also, my cream split a little when I rushed the heat—low and gentle is key.

150g for 500g gnocchi? That’s like eating cheese bread straight 😂 I might try 100g next time. Also I think if you boil the cream it’ll be fine? (Maybe not—yours makes sense.)

    2. 5 stars
Totally agree—150g blue cheese is bold. I usually start with half too, then add more if it needs it. And yes, low heat is the difference between creamy and grainy/split.

  115. 4 stars
Not gonna lie, I’m skeptical of blue cheese + cream sauce with store-bought gnocchi… but it works! My picky eater even went back for more.

    1. 5 stars
I was skeptical too, honestly—blue cheese can be overpowering. But the cream + low simmer makes it way more mellow. Glad it worked for a picky eater!

Maybe I’m doing somethin wrong but my sauce gets kinda grainy with blue cheese. Still tasted good tho 😅 Next time I’ll lower the heat more. Also store-bought gnocchi is fine, don’t hate it.

Pretty good comfort food. I used half-and-half and it worked, but I had to add a splash more cream because my sauce got too thick once it cooled.

    1. User avatar mitchell.kunde60 says:

      5 stars
Totally agree—blue cheese + cream is such comfort food. I’ve also noticed it thickens as it cools, so I’ll usually keep a little extra cream on standby just in case. Thanks for sharing that!

Hmm I tried this but my sauce got like pudding lol. I think I let it simmer too long. Still tasted good though. Next time I’m gonna stop earlier and maybe add milk/cream little by little.

Made this tonight and it was honestly so comforting. The blue cheese sauce turned nice and creamy, and the garlic smell while simmering was perfect. I used half-and-half and it still worked great—will definitely repeat.

I love blue cheese, but I was nervous it might get too salty. Turned out balanced though—pepper helped. I added a tiny splash more cream at the end because the sauce thickened faster than I expected.

    1. User avatar jesus.hermiston says:

This sounds perfect—blue cheese can definitely go salty fast. Love that pepper saved it, and your extra cream tip makes total sense if the sauce tightened up quicker than expected.

It was good, but I ran out of parsley and used dried. Still tasted decent, just not as fresh. Will do fresh next time.

Blue cheese can be a little funky… this was definitely funky in a good way. I also added some lemon zest at the end and it cut through the richness.

  121. User avatar Keven Conroy says:

Okay but why does my sauce keep turning grainy? I followed the “low simmer 2-3 minutes” part… maybe my blue cheese wasn’t melting right?

5 stars just for how fast it is. Float the gnocchi, mix sauce, done. Dinner in like 20 minutes. Love it.

    1. 5 stars
Totally agree—this is one of those “weeknight savior” meals. The float-and-finish method makes it feel way fancier than the time it actually takes 😄
