BBQ Brisket

August 12, 2024

BBQ brisket is a beloved staple of Southern cooking and a shining star in the world of slow-cooked meats. With its smoky bark, juicy interior, and rich, beefy flavor, it’s the kind of dish that draws a crowd and turns a simple gathering into a celebration. Whether you’re serving it at a summer cookout or cozy family dinner, BBQ brisket delivers comfort and flavor in every bite.

What sets BBQ brisket apart is the balance of textures and flavors. The outside develops a dark, caramelized crust from hours of smoking and seasoning, while the inside stays tender and moist thanks to the natural marbling in the meat. This contrast creates a mouthwatering experience—smoky, salty, and slightly sweet, with every slice more satisfying than the last.

The rub is a key player, often a simple blend of salt, pepper, paprika, garlic, and a touch of brown sugar. As the brisket cooks low and slow over wood smoke, the rub melds into the surface of the meat, forming that signature bark. The longer it cooks, the more the flavors deepen and the more tender the brisket becomes.

BBQ brisket is typically sliced against the grain and served with classic sides like coleslaw, potato salad, baked beans, or pickles. A good barbecue sauce, whether tangy, sweet, spicy, or smoky, can add an extra layer of flavor, but a well-cooked brisket is delicious even without it.

Leftovers are almost as exciting as the main event. BBQ brisket can be piled onto sandwiches, folded into tacos, mixed into mac and cheese, or added to breakfast scrambles. It’s the gift that keeps on giving, full of bold character and irresistible smokiness.

There’s a reason BBQ brisket holds legendary status in barbecue culture. It’s a dish that rewards time and attention, and one that’s always worth the wait. From the first slice to the last bite, BBQ brisket is pure comfort and tradition, smoked to perfection.

Meat so tough it could fight back! Maybe I did something wrong?

    1. User avatar shon.yundt1979 says:

      3 stars
I dunno, mine always turns out real tender! Maybe try a different cut next time?

    2. 4 stars
It sounds like you might not have smoked it long enough or at the right temp. Brisket needs time to tenderize!

  2. 1 star
My uncle has been smoking brisket for 30 years and he says never use a rub! Just salt! He’s a pro.

  3. User avatar refugio.leffler says:

    Yum. Goood bbq.

  4. User avatar Marleen Ernser says:

Too much sugar in this, I’m used to traditional recipes with less sweet. Gave it a try but didn’t love it.

  5. User avatar milford.stracke says:

Amazing recipe! I used homemade barbecue sauce and it was perfect.

  6. User avatar genna.dooley says:

Smoke it longer guys! My grill’s been broken for a week, so I used the oven and it was decent.

    1. 2 stars
What? You can’t really cook brisket in the oven like that. It needs to be smoked. You should fix your grill ASAP!

    2. User avatar trevor.ward says:

      5 stars
I totally agree! Longer smoking really brings out the flavors. Oven just ain’t the same, but glad it turned out decent for you!

  7. 5 stars
This BBQ brisket is amazing! I followed the recipe exactly and it turned out so juicy and flavorful. My family devoured it!

Barbecue sauce is overrated…just saying. Beef should be enjoyed as is.

  10. User avatar catharine.abernathy says:

Gotta say, I was skeptical about the brown sugar, but it turned out great! Sweet and smoky!

    1. User avatar hubert.kerluke1964 says:

      2 stars
Brown sugar? Really? Sounds kinda weird to me. I usually stick to salt and pepper for briskets.

    2. 5 stars
I was also nervous about brown sugar, but it did add a nice touch! Who knew it could elevate the flavors so much?

  11. User avatar errol.koelpin says:

All this talk about BBQ makes me hungry. But is it really BBQ without a side of coleslaw?

  12. 3 stars
The rub tasted good, but mine came out a little dry even though I hit 195°F. Maybe I over-trimmed the fat cap. Still edible though—just not wow-level.

  13. User avatar mauro.koepp1977 says:

    5 stars
Great recipe! I added some Worcestershire sauce to the rub and it rocked! Will make again.

  14. User avatar jerri.buckridge57 says:

  15. 5 stars
Best brisket ever! I’m gonna try this recipe for my party! 🎉

    1. 5 stars
That sounds awesome! Can’t wait to hear how your party goes. 😊

  16. User avatar asley.lueilwitz1983 says:

    4 stars
I’m skeptical about the 6-8 hour timing because my brisket usually takes longer, but the temp target saved me. Once it hit 195°F it was perfect.

  17. 3 stars
Honestly, BBQ sauce on the last hour seems like it could burn. Mine did get a little dark, but flavor was still good. I’ll wrap sooner next time?

  18. User avatar Rodrick Vandervort says:

    2 stars
BBQ sauce is just too sweet! This coulda been better with less sugar, y’know? Might try it my way next time!

  19. 1 star
BBQ sauce is just a lot of sugar, right? This recipe seems unhealthy.

  20. User avatar rich.landlord says:

    4 stars
smoke it longer than 8 hours I say! more flavor! but it great too.

  21. User avatar Mr. Dania Gislason says:

    2 stars
Meh. I had to wrap mine (foil) halfway through because the bark was getting too dark. If you don’t wrap, watch it close.

    1. User avatar Ricky Nolan says:

      4 stars
Totally agree—mine browned fast too. I just tent it with foil once it looks like it’s going a shade too far. Great tip.

  22. User avatar ShanksOnePiece says:

    2 stars
Hmmm, I don’t get why everyone loves brisket. Mine turned out kinda dry and not flavorful.

    1. User avatar joshua.ryan72 says:

      4 stars
I had the same issue! Maybe try a different rub or let it brine for a bit? Brisket is tricky!

  23. User avatar rich.landlord says:

    4 stars
Seriously, how do you smoke it for 8 hours? I can barely wait 4!

  24. User avatar santiago.schmidt says:

    3 stars
I followed it exactly and mine was… kinda dry. I think my smoker runs hot though, because it hit 195°F sooner than expected. Next time I’ll pull it a little earlier or wrap it. Not bad, just needs adjustments.

    1. User avatar emily.green1961 says:

      3 stars
195°F seems high—shouldn’t it be around 190-200 but also you gotta use probe tenderness not just temp. If it’s dry, maybe it needed more fat left on or more time wrapped. Or pull at the stall change.

    2. 5 stars
Yeah, if your smoker runs hot, 195°F can come way faster and the brisket can dry out. Wrapping (foil or butcher paper) earlier, like when bark is set, usually helps a lot. Also make sure you’re resting—30 min is the minimum; 1 hour is better.

  25. User avatar robert.leannon72 says:

    2 stars
How much barbecue sauce do I need? I think my recipe needs more!

  26. User avatar NAFO.SUPREMACY says:

    5 stars
This brisket is fantastic! The flavors are just wow!

  27. 3 stars
Why is it 195 degrees? I cooked mine at 200 and it was fine. Don’t overthink it!

  28. User avatar earleen.jenkins says:

    5 stars
This BBQ brisket recipe is the best! My family loved it. Totally making this again.

  29. User avatar Tricia McMillan says:

    4 stars
I’m not very good at cooking, but even I could do this. It’s pretty simple.

    1. User avatar Storm Atronach says:

      2 stars
I dunno… smoking for 6-8 hours seems kinda long. Will it really be worth it?

    2. User avatar Mitchell Will says:

      5 stars
That’s great to hear! BBQ brisket is sooo delicious, you’ll impress everyone!

  30. User avatar katheleen.tremblay2019 says:

    4 stars
This brisket recipe is too easy… like, where’s the secret step? 😂 I guess temp is the secret. Still, it worked great!

  31. User avatar ira.mckenzie70 says:

    5 stars
I can’t believe how easy this was! Smoked it perfect at 225°F. Yum!

    1. User avatar smartestRedditor says:

      4 stars
Sounds delicious! I love smoked brisket, but I find it hard to get the timing right. How did you manage it so well?

    2. 2 stars
Honestly, I think 225°F is too low for brisket. It takes forever! I usually go at 250°F.

  32. User avatar basementDweller says:

    4 stars
Didn’t have a smoker, used an oven instead. Still turned out awesome, just saying!

    1. User avatar branden.flatley1954 says:

      5 stars
That’s great to hear! Oven cooking can really deliver some amazing flavors too. I might have to try that method myself.

    2. 2 stars
But like, it’s not real brisket if you didn’t smoke it. Oven? Nahhh…

  33. 1 star
Can someone help me? What’s ‘against the grain’ mean? I’m confused.

  34. 2 stars
Why do people always use paprika? What does it even do? LOL.

    1. 2 stars
I dunno man, never thought much of it. Just looks like red dust to me.

    2. User avatar Vroomfondel says:

      5 stars
Paprika adds flavor and color! It’s more than just a pretty spice, LOL!

  35. User avatar milo.osinski30 says:

    2 stars
Brisket at 225°F for 6-8 hours? That seems way too short unless your brisket is super small. Mine always takes longer. Also 195°F feels too low—should be more like 203°F in my experience.

  36. 5 stars
This is the best BBQ brisket I’ve ever made! Just wow. Tender and delicious!

  37. User avatar rickiestmorty says:

    5 stars
Good! 👍 Would make again. Was a hit at the family gathering!

  38. User avatar lurline.stamm48 says:

    3 stars
I love brisket but I’m a little confused—195°F seems low to me? I usually go higher like 205°F, but hey, it was still juicy so I can’t complain.

    1. 5 stars
195°F isn’t low—it’s a pretty common “pull temp” for brisket. The big thing is going by how it feels/probes too, not just the number. If it’s still juicy for you, I’d call it a win!

    2. User avatar jeff.barton2024 says:

      4 stars
I get the confusion. 205°F sounds more “proper” to folks, but 195°F can still work depending on brisket thickness, smoker temp stability, and how long it actually sits after reaching temp. Resting helps a lot too.

  39. User avatar johnathon.haley1971 says:

    5 stars
Made this for a backyard thing—turned out insanely tender. The spice rub is super balanced, and the 195°F mark is the real deal. Resting time is not optional!

  40. 4 stars
Brisket timing was confusing. 195°F isn’t always the same for every cut, ya know? I ended up pulling when it felt probe-tender instead of the thermometer number and that saved it. Recipe is still solid.

    1. User avatar harrison.brekke says:

      5 stars
Totally agree—195°F is a guide, not a guarantee. Probe-tender is the real test. Glad you caught it in time!

  41. User avatar jenniffer.stoltenberg says:

    5 stars
Never made brisket before but this seems easy enough. Excited to try it this weekend!

  42. 5 stars
This brisket is AMAZING!! It was so juicy and flavorful! Definitely a 5 star! ⭐⭐⭐⭐⭐

    1. User avatar cyril.hahn30 says:

      5 stars
Glad you loved it! BBQ brisket is my fave! 🍖

  43. User avatar darrick.kuphal says:

    4 stars
Yummy and easy, loved it! Can’t wait to make it for my BBQ party!

  44. User avatar Jeanette Larson says:

    4 stars
LOL at people who try to smoke a brisket in an hour. Y’all gotta be patient!

  45. User avatar leonel.sanford77 says:

    3 stars
Is it really 6-8 hours? I thought brisket took longer. Going to try anyway.

  46. 1 star
No way this cooks in 8 hours, I’ve made brisket for years. It takes <=12 hours to really get that melt-in-your-mouth thing.

  47. User avatar Helen Highwater says:

    5 stars
Yum! Love this recipe. Can’t wait to serve it at the next family cookout!

  48. User avatar grazyna.franecki says:

    5 stars
This BBQ brisket recipe is AMAZING! I followed it exactly and my family devoured it! 5 stars!

    1. User avatar ShanksOnePiece says:

      5 stars
I knew it would be good, but wow, I didn’t expect it to be THIS good! Thanks for sharing! 😋

  49. User avatar nola.wintheiser says:

    5 stars
I like how straightforward it is. Smoker at 225°F, spice rub, then sauce at the end—no weird steps. I’m giving it 5 because it actually worked on my first brisket!

  50. User avatar nadene.corwin1952 says:

    3 stars
Not bad, but I brushed the BBQ sauce too early and it got a little sticky/burnt on the edges. Last hour is the move.

  51. 3 stars
I tried this recipe but didn’t have a smoker. I used the oven and it was not the same. Kind of disappointed.

    1. User avatar randell.funk54 says:

      4 stars
Yeah, smoking really makes a difference! The flavor is way better. Don’t give up, maybe try a small smoker next time!

    2. User avatar ArabianNights says:

      3 stars
Sorry to hear that! I tried the oven once too, didn’t go well. Not the same without the smoke, huh?

  52. User avatar Sand-Dial says:

    4 stars
I don’t have a smoker, can I use an oven? Not sure how that would work.

    1. User avatar avis.reichert says:

      3 stars
Ovens don’t taste the same as smokers tho… Might not get that smoky flavor you want? But hey, give it a shot!

    2. User avatar Caulifla says:

      4 stars
Yes, you can totally use an oven! Just set it to low and slow, like about 225°F. Wrap it in foil to keep moist. It’s not quite the same but can still be delicious!

  53. User avatar genia.kuhic says:

    5 stars
Tried this for my family and it came out super tender. The seasoning balance is spot on—paprika + garlic powder is such a good combo. I let it rest a bit longer than 30 min and that helped a ton.

  54. User avatar anonymous_hacker says:

    3 stars
Pretty good, but I think I overcooked my brisket. Next time I’ll keep an eye on the temp.

    1. User avatar jenine.feeney says:

      4 stars
Overcooked brisket is a bummer! Next time, just use a meat thermometer. It’s a game changer!

  55. User avatar joe_banana says:

    4 stars
BBQ sauce should be homemade! Store bought tastes like plastic.

  56. 4 stars
225°F for 6-8 hours seems short for 4 lbs, I had to go longer. Still tasty though—just plan for extra time.

    1. User avatar grover.schimmel says:

      5 stars
Good call—brisket timing is super variable. If yours needed longer, that’s totally normal. I always go by internal temp and feel, not the clock.

    2. 4 stars
Hmm I cooked a 4 lb once and mine was done right around 7. Maybe your smoker runs cooler? Also 195°F seems like you might need a longer stall sometimes.

  57. User avatar moriah.torphy2009 says:

    2 stars
I tried it and my brisket was dry. Maybe my smoker runs hot. Also I forgot the rest time, so yeah… lesson learned.

  58. User avatar dwayne.kirlin1965 says:

    2 stars
Too many spices! I like my meat simple. Might try less next time.

  59. 3 stars
I tried this and it was okay, but I don’t think 225° is low enough. My brisket was dry. Maybe I did something wrong?

    1. User avatar jc.deckow says:

      4 stars
I think 225° is standard for brisket. Maybe try wrapping it in foil for the last few hours next time? It helps keep it moist.

    2. User avatar shannon.auer says:

      3 stars
Nah, I always cook mine at 250°F and it turns out great! Maybe you should try that next time.

  60. User avatar wellRespected says:

    5 stars
Yum! Used my homemade sauce instead and it still was super delicious! Highly recommend! 5/5

    1. User avatar Gaius Helen Mohiam says:

      3 stars
Homemade sauce? That’s nice but I dunno, store sauce has its own flavor, right? 🤔

    2. User avatar basementDweller says:

      5 stars
That sounds awesome! I can see how a homemade sauce would make it even better. Gonna try it next time! 👍

  61. User avatar penny.harvey93 says:

    3 stars
Too much sugar! I prefer my meat without all that sweetness. Anyone else feels the same?

    1. 5 stars
I totally get you! Too much sugar ruins the savory flavors. Meat should be meat, not dessert!

  62. User avatar garnet.williamson1990 says:

    5 stars
Yum! This is the best brisket I’ve ever made! My family couldn’t get enough of it. Thank you for sharing!

  63. User avatar Kory Parisian says:

    3 stars
Could use a little more direction on wrapping (like foil or butcher paper). I felt like it stalled for hours and the bark got a bit too dark. Flavor was good regardless though.

  64. User avatar jena.zemlak11 says:

    5 stars
Just wow! I made this for my BBQ night and it was a hit! Everyone asked for the recipe.

  65. 5 stars
5 stars just because paprika is underrated in brisket rubs. Mine had a nice color and the garlic/onion powders gave it a deeper aroma. Will repeat.

  66. User avatar Sherry Kemmer says:

    2 stars
I don’t get why people rave about brisket. Mine was so dry. Maybe I did somethin wrong?

  67. User avatar lanette.hodkiewicz14 says:

    2 stars
I dunno, I tried it and my brisket came out dry. Maybe I did something wrong? 🤷

  68. User avatar fernando.brown1955 says:

    5 stars
Absolutely love this recipe! The brisket turned out super tender and flavorful. Will definitely make again!

  69. User avatar columbus.mosciski34 says:

    5 stars
I followed exactly. The smell alone got me hyped. Sliced against the grain and it just fell apart. I’m definitely saving this one.

    1. User avatar Juan Langworth DDS says:

      5 stars
Nice! Getting that “fell apart” texture on the first try is the dream. I’m guessing your rest was solid too—at 195°F it usually starts getting buttery. What BBQ sauce did you use?

  70. User avatar dong.wolff6 says:

    5 stars
I can’t believe how good this is. Simple and delicious!

    1. User avatar enrique.luettgen says:

      2 stars
I dunno, are you sure it’s that simple? I tried to make brisket once and it was tough as nails. Maybe I did some wrong…

    2. User avatar Trin Tragula says:

      5 stars
I totally agree! This brisket recipe is a game changer. The sauce brings it all together. Yum!

  71. User avatar dorothy.quigley1973 says:

    4 stars
Pretty solid basic brisket recipe. I used a hickory sauce and the bark came out nice. Might bump the rub a bit next time.

  72. User avatar sharie.mckenzie says:

    4 stars
I messed up and still tasted it though 😅 I forgot to brush with BBQ sauce during the last hour and it was still good, just less sticky. Still would make again.

  73. User avatar dung.rodriguez93 says:

    3 stars
It was okay, but I think I overcooked it. Should’ve paid more attention.

  74. 2 stars
Way too much salt in my opinion. I know 1 tsp doesn’t sound like a lot, but the crust got kinda salty. Next time I’ll cut it down.

  75. 2 stars
This is a no-go for my diet. Too much sugar in the sauce and all.

  76. 4 stars
I don’t like garlic much, so I just left it out. Still tasted great!

  77. User avatar camille.maggio82 says:

    4 stars
Not sure about 225°F for everyone. I’ve had brisket at 250-275 and it’s better for me, but this recipe was straightforward. Sauce in the last hour helped a lot.

  78. User avatar Falmer Gloomlurker says:

    5 stars
Honestly this tastes like something my dad would make on Sundays. Simple ingredients, big payoff. My family asked for seconds.

  79. User avatar vi.collier says:

    4 stars
Can’t wait to try! Is there a way to speed it up? 6-8 hours is like forever.

    1. 4 stars
You could try wrapping the brisket in foil during cooking. It might speed things up a bit!

  80. 1 star
This is not how you cook brisket. Real BBQ takes days and this is fake.

  81. User avatar wellRespected says:

    1 star
This takes too long to cook. I’m not waiting 8 hours for meat! Who has that time?!

  82. 1 star
My brisket was still tough after 8 hours! What did I do wrong? 🤔

  83. User avatar millicent.mills says:

    5 stars
Resting for 30 minutes saved me. I sliced too early once before and it was dry and sad. This time, perfect slices against the grain. Love it.

  84. User avatar reinaldo.williamson2024 says:

    5 stars
Y’all, this brisket is the bomb! The spice rub is perfect and that sauce…wow! Going to make it for the next game day!

    1. User avatar eldridge.greenholt1956 says:

I don’t know, looks good but isn’t smoking brisket super hard? How do you know it’s done without a thermometer?

I totally agree! This brisket looks amazing! Can’t wait to try it myself for the next BBQ!

YASSS! Best brisket ever, topped it off with extra sauce! 😍

Way too much prep for me lol. I get that rub matters, but I’m lazy—still, the instructions are clear and the temp guide helps. Next time I’ll try a shorter rub mix.

I don’t understand all the fuss about brisket. It turned out tough for me. 😒

Smoker at 225°F is easy enough. The garlic/onion powders make the rub smell amazing while it’s cooking. Resting + slicing against the grain = key.

    1. 5 stars
Yes! 225°F makes it almost foolproof. I also rest mine longer—like an hour—before slicing. The slice-against-the-grain tip is spot on.

Can I use chicken instead? Asking for a friend.

I wouldn’t recommend chicken for this recipe. Brisket has a totally different texture and flavor. Stick with the beef!

6-8 hours felt short for my 4 lb brisket, but maybe it depends on thickness. I checked early and it needed more time—eventually perfect.

Ehh, I’ve tried better recipes. My mom’s is way tastier. No hate though!

Totally impressed with how easy this was! Even my kids loved it. Thanks!

Wow. Best brisket I ever made. Resting 30 min is a minimum—do like an hour if you can. Slicing against the grain was key too.

I tried making this and it turned out really dry. Maybe I smoked it too long? Not sure what I did wrong.

I don’t have a smoker, can I just use an oven? Can someone let me know if that would work? Thx!

Followed it pretty much exactly, except I used hickory wood. Bark was nice and dark, and the flavor tasted like real BBQ, not just “meh” oven stuff.

Simple and effective. I added some cayenne for extra kick 🥵!

225°F is kinda low in my opinion, but it worked. I wouldn’t change a lot—maybe just add some extra pepper to punch it up. Also, brushing with BBQ sauce at the end was a nice move.

meh. i think 195 is wrong bc my meat was like 180 and still tender. maybe my thermometer broken lol

Not bad, but 6–8 hours felt optimistic for my smoker. Mine took closer to 9. Would’ve helped to mention that brisket can stall and you should go by temperature more than time.

Tried this last weekend and it came out ridiculously tender. The 195°F mark is key—did exactly that and the smoke flavor was perfect. My whole kitchen smelled amazing.

Solid recipe. I only adjusted one thing: I used a spicy BBQ sauce and added a little extra paprika to the rub. Still followed the timing and rest, and it stayed juicy.

Not gonna lie, I’m skeptical about only brushing with BBQ sauce for the last hour. But it did come out flavorful.

Just a heads up, don’t use too much salt!! I used the whole spoon and ruined it 😩.

Pretty solid directions. 225°F is a good call, and the rest time definitely matters. Only tweak I’d suggest: I used less salt because the BBQ sauce I like is already salty. Otherwise, great flavor.

Honestly I’m skeptical of the BBQ sauce part. Brushing only the last hour—seems like not enough flavor to absorb. But the bark looked great, so maybe I’m wrong.

Just made this. Pretty easy, but I think I mixed up the temp—my smoker was set to 275 for the first hour (oops). Still tasted fine! Not BBQ sauce-y enough for my liking though.

BBQ sauce is too much for my taste but the spices are spot on!
